    About Nicolas Duvernois
    Entrepreneur at heart, Nicolas Duvernois always had his head full of ideas. It was in 2006, after a catastrophic business experience, that he decided to launch Pur Vodka, knowing absolutely nothing about spirits. In order to finance everything, Nicolas was a sanitation worker in a hospital, by night, and vodka developer, by day, for almost 4 years. Today, Nicolas is the founding President of Duvernois, the largest independent producer of spirits in Quebec with 3 brands of spirits, Pur Vodka, romeo's gin, and Choco Crème.

    When you visit Merridale, you feel it – the atmosphere is friendly, easy, and joyful. Our farm is located at the end of a long, winding driveway past gently rolling hills that will put you in the mood to relax and enjoy the spaciousness and beautiful climate that Cowichan is known for. At certain times of year, you’ll pick up a light scent of apple blossoms on the breeze. It’s a sensory experience, much like our ciders and spirits.

    Our approach is all about guiding nature’s process to develop high-quality, all-natural products that are farm crafted with a sense of character, curiosity and intrigue. We are committed to making craft cider by growing heritage cider apples and slow-fermenting the juice from the first apple pressing.

    The unique flavours, notes, and tannins come from the ground where the apples are grown, the juice, skin, and seeds, and the natural fermenting and distilling processes. We do not create mixed beverages, but rather craft pure cider and spirits.

    About Rick Pipes
    Rick is a third-generation Vancouver Island entrepreneur. A practicing lawyer in Victoria for 25 years with a Business degree and a Law degree, Rick decided to trade law for the leisurely and laidback life of a country farmer (little did he know!). His subsequent education in fermentation and distillation science took him from Washington State to New England, the UK, France, and Spain. Like Janet, his wife, Rick has served and continues to serve on a number of community-based boards.

After working 15 years in the tech industry, Master Distiller Brennan Colebank left his job to pursue his dream career blending the two things he loved most: chemistry and spirits. Five years later, the Stillhead team has grown from a family of 4 to a team of 9, with each year introducing more internationally award-winning spirits.

    Their flagship Wild Blackberry Gin uses handpicked, local berries from the Cowichan Valley. They continue to innovate with their exclusive and limited release special cask finished whiskies, utilizing barrels from Kentucky, Scotland, Spain, Portugal and Hungary. 2023 will see the release of their ongoing flagship “Double Oak Whisky”, as well as a maple syrup cask finished whisky, among others.

    Founder and Distiller Gordon Glanz holds an MSc in brewing and distilling from Heriot Watt University in Edinburgh, Scotland where he experimented with distilling whiskey using raw grains and commercial enzymes. After finishing his MSc, Gordon spent a week at the Whisky School at Springbank distillery in Campbeltown.

    Now back in his home town, Gordon is applying his penchant for experimentation and knowledge of tradition within the Odd Society, which he operates alongside his wife, Miriam Karp.
