How can this be the last episode of Series 4? We cannot believe the diversity and range of Series 4 and we owe so much of it to your fantastic input. Not to mention the lovely James, Jack, and Mijon! Thank you listeners and thanks guys!

We are so grateful that we decided to celebrate the season and gift you with a deep dive into making the most delicious coffee cocktail that you’ve ever had! Recipes included! How is this possible?

We reached out to two coffee cocktail mixologists:

Dave Jameson, 2-time UK Coffee in Good Spirits Champion, a Q-Arabica grader and coach of the 2017 World Coffee in Good Spirits Champion.

Alexandra Hager Beverage R&D Specialist for US locations of the Korean Bakery Franchise Tous Les Jours and 2022 US Coffee in Good Spirits Champion and the first US competitor at the World Championships.

On this episode, we pick their brains to learn about why they love coffee cocktails, how they create a balanced coffee cocktail, and how they create the perfect coffee cocktail based on a person’s particular tastes.

Then, Scott and Jools create custom coffee cocktails for each other! Get ready for a coffee adventure that will tickle your taste buds on Jools and Scott’s Coffee Cocktail Celebration!

Women’s Underappreciated Role on Coffee Farms

Women’s Underappreciated Role on Coffee Farms
When you picture a coffee farmer, who do you have in mind? For many people, it will be Juan Valdez, the symbol of Colombia’s National Federation of Coffee Growers, with his thick moustache, sack of beans and trusty donkey.

But women play a crucial role on coffee farms which often gets overlooked. This week, Jools is diving into the responsibilities they take on, some of the struggles they face and how we can hope to overcome them.

She will speak to three women about their stories and experiences: Ana María Donneys and Paula De Rosenzweig, two women growing coffee themselves, as well as Blanca Castro at the International Women’s Coffee Alliance.

Why is there a lack of representation at higher levels in the industry? How are traditional gender expectations holding women back? How might things change in the future?

These are some of the questions we’ll be asking. So join Jools and James as they strap in and prepare to break the glass ceiling. Or perhaps the glass coffee cup…

    Ethiopia's Gift to the World

    Ethiopia's Gift to the World
In Ethiopia, the birthplace of Arabica coffee, Ethiopians spend hours roasting and brewing coffee in their living rooms.

But, have you ever heard of the Ethiopian coffee ceremony? If not, you are not alone.

Get ready, dear listeners, because James is going to take you, Scott, and Jools out of your regular coffee routine to see how coffee can be drunk quite differently.

First, we travel to Italy as James roasts coffee beans with his family’s long-time friend and family helper, a lovely Ethiopian woman named Elisa.

Then, Jools and Scott get treated to a coffee trader at the Ethiopian Embassy with the ambassador and Jame’s friend Ethiopian coffee exporter Michael Haile.

And, we also hear from an Ethiopian expat, Mekdes, who grew up with the ceremony at home and still practices it herself.

Get ready, because your morning coffee might just get a little more savory!

Opening a Coffee Shop: Fantasy vs Reality

Opening a Coffee Shop: Fantasy vs Reality
The exquisite latte art. The warm, smiling baristas. The deep, inviting armchairs… If you’ve ever taken a look around your favourite cafe and thought ‘What a wonderful place to spend a day, maybe I should open somewhere like this’, you’re not alone. But is this fantasyland?

With guest co-host Chris Deferio (Keys to the Shop Podcast), we dive into the three key aspects of running a coffee shop, to help you better understand the realities behind the dream.

The Money - Chris speaks to Michael Idov, author of the legendary Slate article ‘My Coffeehouse Nightmare’, about the financial areas which are often overlooked by those opening a cafe.

The Scene - Scott heads to Caffè Culture and chats with Ben Eames of Bubbly Batch Coffee about Ben’s plans to bring something fresh to the coffee scene.

The Dream - James catches up with his friend Hiyam Abdulla about her experience leaving her corporate job to follow her dream and open a cafe in North London.

Chris brings many years of advising and consulting coffee shop owners, and offers fascinating insights into each of the three aspects. Will you be inspired to open a trendy cafe or your local high street. Or end up running for the hills?

The Oat Debate: Scott’s Milk Quest

The Oat Debate: Scott’s Milk Quest
Have you ever noticed that there always seems to be a new plant-based milk? For about 20 years, Scott’s wife Rachel has always been able to enjoy soy milk with her coffee while other plant-based milks have fallen in and out of favor.

However, lately, soy milk seems to be disappearing and is being replaced by the “new kid in town”: oat. And, when Rachel asks questions in coffee shops about the move away from soy, she frequently gets told that she should not be drinking soy milk because its bad for the environment. But, is that actually true? If coffee shops do not carry soy to be more sustainable, then why are they still carrying dairy?

To dive deeper into this, Scott attended the Caffè Culture Expo to get a better understanding about how cafe owners are choosing their milks and how they feel about sustainability.

Then, Scott and Jools deep dive into current research through a website called Our World in Data and talk to environmental sustainability scientist and consultant Dr.
Isaac Emery to get an expert opinion.

Is soy milk actually bad for the environment? Which milk is the most environmentally sustainable? Is this all just a successful oat milk marketing scheme? Find out on The Oat Debate: Scott’s Milk Quest.

    Busting Coffee Myths: Round Two!

    Busting Coffee Myths: Round Two!
We surveyed you. You asked us for myth-busting (again). So myth-busting you shall get!

But, this time, we are not just busting up confusing coffee conundrums; we are introducing a framework (“Ah-Key!”) that will help you bust coffee myths (and all the other misinformation that you will encounter).

Now, let’s get to kicking the nuts of those misleading myths.

Did you perhaps have too many bevvies last Friday? Did someone offer you coffee to sober you up? If so, you may have indulged in a myth! Jools brings back friend-of-the-show research scientist and professor Dr. Danielle Gulick to share what she found from studying the effects of alcohol and caffeine.

Ever spotted the coffee beans on the perfume counters at your favorite department store? Supposedly, sniffing them will clear your nasal palate. But is that true? Luckily, Scott has a new hobby: making perfume (bet you it smells like coffee). So he chatted with his perfumery professor, Sarah McCartney the founder of perfumery 4160Tuesdays.

Finally, since putting out The Lie of Direct Trade episode, we have known that commodity coffee doesn’t always help farmers make the most money. So, does that mean that specialty coffee helps farmers make more money? James speaks to former barista now coffee roaster Tim Wendelboe to clarify some deep misconceptions.

Ready to demolish some deviously deceiving coffee mythos? Press play and enjoy the episode! “Ah-Key!”

    The Lie of Direct Trade

    The Lie of Direct Trade
Have you ever noticed your daily caffeine fix tastes that little bit sweeter when you know the coffee has been ethically sourced?

The term “direct trade” has cropped up all over the place in specialty coffee in recent years and, on the face of it, would seem to imply just that.

But what does “direct trade” actually mean? And has anyone — let alone coffee farmers — really benefited from it?

In the final episode of series 3, James takes Scott and Jools on a journey into how coffee actually gets traded.

Chad Trewick from the Specialty Coffee Transaction Guide shares his first hand experience of being in the direct trade vanguard. Chris Kornman, author and Director of Education at The Crown, explains the rise of evangelists with the mantra of cutting out the middle men. And Erica Koss, co-author of the Specialty Coffee Association’s sustainability course and Research Associate at the Institute for Development Studies at the University of Nairobi in Nairobi, reveals some of the limitations of the direct trade ideal.

And, as a parting gift for the summer, James offers tips on how YOU can identify those roasters who are trying to do right by the farmer.

Coffee’s Cutting Edge: Innovations at Origin

Coffee’s Cutting Edge: Innovations at Origin
Once upon a time, the simple pleasures of a homemade cup of coffee would have been limited to those in Ethiopia's cool, wet mountain forest regions. Today, a multi-billion dollar global industry means we can sip on an espresso virtually anywhere in the world. But what about coffee's future?

Scott, Jools and James embark on a mission into the unknown to each reveal an element of the magical and evolving world of coffee growing. The team (or most of them…) savour a specially brewed coffee alongside each story, all prepared on the Siemens EQ700 fully automatic espresso machine.

Scott talks genetics with World Coffee Research's Hanna Neuschwander as he takes us to the frontline of the battle to save coffee from climate change.

James enlists the help of coffee processing specialist and fellow podcaster Lucia Solis to decipher what the latest bamboozling terms on our coffee bags actually mean.

And Jools is joined by Jessy Luo as she whisks us away to one of the world's newest coffee-growing regions in a rather unexpected corner of the globe.

The Rise and Fall of Jamaican Blue Mountain

The Rise and Fall of Jamaican Blue Mountain
Jools' investigation into this elusive coffee will leave your taste buds clamouring for the sweet and fruity notes of Blue Mountain Coffee…

When was the last time you encountered Jamaican coffee in your favourite cafe? Chances are, unless you frequent the high-end establishments of Mayfair (or happen to be royalty), the answer may well be "never."

In this special episode, Jools takes Scott on a poignant personal journey into the land of her paternal heritage while casting light on Jamaican coffee's fascinating and disturbing past.

Jamaica Blue Mountain coffee was once considered the cream of the coffee crop, but plummeting production beneath an ominous veil of secrecy has left the country's coffee industry in crisis.

Along the way, the author of "The Mother of Us All", Karla Gottlieb, paints a picture of a paradise island invaded by colonialists and the ingenious fightback by a cunning queen. Smith's Coffee's Colin Smith explains the historical quirks that have led to most Jamaican coffee being sold to Japan.

Dominic Wyndham-Gittens of Wyndhams Coffee Roasters in Barbados points the finger at the Jamaican coffee industry's painful decline.

And Marshalee Valentine, President of JAWiC, offers a glimpse of hope for some green shoots of recovery.

Content Warning: This episode contains mentions/descriptions of slavery and violence against enslaved people that can be disturbing or triggering.

Are Wine Making Techniques the Future of Coffee?

Are Wine Making Techniques the Future of Coffee?
Next time you set about making your morning coffee, take a moment to peruse the info on your bag of beans. What do you notice? The variety of beans? Flavour notes? Technical details on where the coffee was grown?

They're not so different from the sort of blurb you might find on the back of a wine bottle in many ways. And that’s intentional. Specialty coffee has taken a lot from the world of wine.

But could the increasing overlaps be a problem for coffee farmers — or even dangerous?

In this episode, Scott and Jools join forces with coffee processing specialist and former winemaker Lucia Solis from the Making Coffee podcast to dive deeper into where our coffee comes from and what (if anything) wine's got to do with it.

Lucia talks to coffee producer Karla Boza from the Finca San Antonio Amatepec coffee farm in El Salvador and vintner Todd Kohn from the Wayfarer Vineyard in California to shed some light on the techniques behind picking, transporting and processing their precious produce.

Take a sip on this (soon-to-be-a-good) vintage episode to pique your curiosity about how coffee and wine are made, and why it matters.

    Scott's Home Roasting Adventure

    Scott's Home Roasting Adventure
Can a secondhand popcorn popper really be used to roast delicious coffee…? The answer to that question may (or more likely, may not) surprise you!

Scott falls back in love with an old hobby as he embarks on a mission to separate the bean from the chaff with the IKAWA Home Roasting System.

On a personal journey of coffee-roasting discovery, Scott learns to find the sweet spot between first and second crack, and reveals just how much difference the way your beans are roasted makes to the flavour in your cup.

Respected roasting instructor Ildi Revi explains all about the significance of different “development” times and the Maillard reaction. Scott also decides to pit his roasting skills against the experts with none other than 2018 World Barista Champion Agnieszka Rojewska as the judge!

Can the self-proclaimed King of Caffeine out-roast a machine? Find out in Scott’s Roasting Journey.

It’s every coffee drinker’s worst nightmare. You’ve rushed to that important morning meeting, but everything’s feeling a little hazy. You’re struggling to concentrate, and a nagging headache starts to creep in before you know it.

Then it hits you — you haven’t had your daily caffeine fix!

So what is it about this mysterious substance that can derail your whole day if you don’t have it? In a bid to find out, James conducts a cruel experiment with Scott and Jools, depriving them of coffee for 24 hours.

Producer man James bothers clever people to get to the bottom of what caffeine is and what it does to our bodies and brains!

Danielle Gulick from the Morsani College of Medicine explains how your morning cup can change your thinking. Lindsy Kass from the University of Hertfordshire tells us how some people can get away with a double espresso right before bed. Professor Jonathan Morris reveals how it’s not just humans who get a buzz from caffeine.

Ultimately we seek to find out: Do we really need to worry that an extra cup of coffee could be the end of us?

    Spotting Greenwashing In Coffee

    Spotting Greenwashing In Coffee
Ever noticed how your “carbon neutral” coffee tickles the taste buds just that little bit more than your bog standard brew?

From coffee producers to cafes, the industry is falling over itself to show us how much it cares about the future of our planet.

But all is not always quite as it seems… So in this episode we’re delving into the murky world of “greenwashing.”

What is it? What’s being done about it? And with so much else going on in the world, is it really that big of a deal?

To help guide us through all the greenwashing grey areas, Jools and Scott are joined by environmental journalist David Burrows who goes in search of elephants and tigers in the cafes of Edinburgh. Miles Lockwood from the Advertising Standards Authority reveals how some alternative milk companies have been found to be greenwashing. And we learn when to be smug and when to be skeptical in the face of an environmental bombardment.

Armed with these tips, we hope you will be able to spot greenwashing next time you buy your coffee!

Bang for Buck When Buying Coffee Gear

Bang for Buck When Buying Coffee Gear
Dear listener, beware! When it comes to buying coffee-making gear, ‘upgrade-itis’ is real. And it’s been hitting the pockets of coffee lovers everywhere.

Early symptoms include questioning whether to stick or twist, bewilderment at the range of choice, and uncertainty if spending those extra pounds on your kit can be tasted in your morning cup.

But, dear listers, fear not — because help is at hand. In this episode, Jools figures out where that golden sweet spot is when buying grinders, espresso machines and filter coffee set ups.
Are the savings from hand grinding beans worth the elbow grease? Can you really get a machine to make quality espresso for less than £300? And what’s the point of an automatic filter brewer? Coffee expert and Youtuber Lance Hedrick dials in from the Onyx Coffee Lab in Arkansas, USA, to help Jools and Scott identify the issues of diminishing returns.

So roll up your sleeve as we help you stave off that expensive ‘upgrade-itis’ before it’s too late!

The Dark Side of Coffee Roasting

The Dark Side of Coffee Roasting
Close your eyes, and imagine taking a sip of thick espresso. What flavours would you hope are dancing on your tongue? Dark chocolate? Caramel?

How about lemon? What if the coffee is so acidic, you may as well be sucking on lemon juice? This acidity is often the result of roasting a coffee quite lightly, and specialty coffee loves this acidity.

But the weird thing is specialty coffee isn't obsessed with acidity because they necessarily enjoy acidic flavours. It goes waaaaaay deeper. So deep in fact it's caused massive Twitter brawls where a celebrity food columnist even sparred with a gang of self-proclaimed coffee punks.

Scott takes Jools on a coffee roasting journey, starting at the darker times in coffee, and how it evolved into the light roasts of today by speaking with Sonja Bjork Grant (Icelandic roaster and World Barista Judge) and Nick Mabey (co-owner of Assembly Coffee Roasters).

At the end, we ask the question: were the coffee punks right to be so focused on lightly roasted coffee?

    Busting Coffee Myths
Dear Listener... We asked what YOU wanted to hear when we returned, and we LISTENED... so we're kicking off Series Three by busting some coffee myths!

Is the fridge the best place to store your coffee? Jools gets on the line to Samo Smrke - an actual Coffee Scientist - to find out if that's fact or fiction.

Scott sniffs out the truth to discover if coffee has more flavour and aroma compounds than wine and chats to 2017 World Barista Champion Dale Harris - whose whole winning routine is based around sensory analysis!

James drills deep into the tale of coffee being the second most traded commodity in the world after oil, and gets the lowdown from Mark Pendergrast - best-selling author of Uncommon Grounds: The History of Coffee and How It Transformed Our World.

Did the AIC Team fracture some coffee folklore? Are they who you’re gonna call for Myth Busting?! Prepare yourself to be surprised at what they discovered in this episode!

    Coffee's Ticking Time Bomb

    Coffee's Ticking Time Bomb
Sri Lankan coffee has delicious notes of chocolate and caramel. But it’s basically impossible to find, and we’re going to bet you’ve never drank it.

But why is Sri Lankan coffee so hard to find? It shouldn’t be because Sri Lanka has the perfect climate to grow coffee, and was once one of the biggest coffee growing countries in the world.

But Sri Lanka was the victim of an ecological ticking time bomb. And this bomb is still ticking, and is going to explode again.

Producer man James takes Scott and Jools on an adventure back in time, across Ethiopia, Yemen, Sri Lanka to trace the origins of this ticking bomb, and what it’s going to take to defuse it.
