    Episode 61: Dr. Tom Collins

    We're excited to announce that Episode 61 of All Things Whiskey Podcast is live now!

    On this episode Hosts Mike Outcalt and Devin Mitchell welcome Dr. Tom Collins - Jackson Family Wines Endowed Professor of Viticulture and Enology at Washington State University to talk about his research; the impact barrels have on wines and spirits, and how certain levels of dilution in spirits can make them smell and taste the same.  Dr. Collins is an expert in distillation practices which he has been studying in his chemistry lab since 2015 to determine how the char and toast levels inside barrels filter harsher components of whiskey and other spirits while aiming to understand the chemistry behind this process.  More recently Dr. Collins has studied a close link between the aroma and taste of whiskies to determine how a certain level of dilution can make whiskies smell the same and further dilution can make whiskies taste the same.  Additionally we discuss the demand for new barrels, used barrels, barrel alternatives, and sustainability initiatives around barrels in the spirits industry.  We then open up the conversation to talk about Dr. Collins' favorite whiskies, brands, spirits, and discuss the future of his research.

    Welcome back to All Things Whiskey Podcast!  On this episode Hosts Devin Mitchell and Mike Outcalt fire up the mics for a blind tasting special.  Before the blind, the hosts review the "Freezer Door" Old Fashioned.  To make one, grab your favorite bottle of whiskey, take 3 ounces out, then put in 2 ounces of simple syrup, 24 dashes of  bitters and toss it in the freezer.   Boom - now you can shake and pour Old Fashioneds anytime and for all your friends.  For the main event Devin gets "Blinded by the Mike" (sung to the tune of Manfred Mann's Blinded by the Light) to prove a point about how we classify certain types or whiskey.

    Welcome back to All Things Whiskey Podcast!  Searching for allocated whiskies downright sucks sometimes, but making cocktails will always be awesome!  Join Hosts Mike Outcalt and Devin Mitchell on this episode as the team makes and drinks their favorite cocktails.  These are great cocktails, but the best part is that you can make them with a variety of whiskies that are affordable and can be found on the shelf.  

    The team reviews an Espresso Martini made with Bourbon, The Manhattan, and an Old Fashioned.  

    Wanna make one of these cocktails (I'm sure you do because they're awesome), well here's the recipes:

    Bourbon Espresso Martini:

    • 2oz Bourbon (your choice!)
    • 1oz Kahlua
    • 1oz Espresso
    • 1/2oz Simple Syrup

    Mike's Manhattan:

    • 2oz Wild Turkey 101 Rye
    • 1oz Cocchi Vermouth
    • 1 dash orange bitters
    • 1 dash Aztec chocolate bitters
    • Peninsula cherry

    The Classic Old Fashioned:

    • 2oz Wild Turkey 101 Rye
    • 2 dash Angostura bitters
    • 1 tablespoon of simple syrup (1/2 oz)
    • 1 Peninsula cherry
    • spritz with a lemon rind

    The Connoisseur Old Fashioned:

    • 3oz Wild Turkey 101 Rye
    • 2 dash Angostura bitters
    • 1 teaspoon of simple syrup (0.16 oz)
    • 1 Peninsula cherry
    • spritz with a lemon rind
