He joined Rosa’s after 4 years at Wahaca where he spent 2 years developing and launching the Burrito Mama and DF/Tacos businesses, and a further 2 years as Commercial and Strategy Director. Gavin’s career in F&B began in 2010 when he joined Ask Italian as Finance Director, before which he worked in a number of finance roles both in the UK and overseas. He is a Chartered Accountant, holds an MBA from London Business School, and is a more recent graduate of the Rosa’s Wok School!

    James Thomson opened Wild Flor in the spring of 2019 along with his co-founders Faye Hudson & Rob Maynard. James has worked in hospitality since the age of 16 with management responsibilities as young as 19. It was while working in New Zealand that a job became a career prospect; working alongside passionate professionals from all over the world & at a time when Central Otago wines were beginning to boom.     About Raz

    Razak Helalat has lived in Brighton since the age of five and after years of experience within the restaurant industry, he opened The Coal Shed in September 2011. Understanding what the customers in Brighton and Hove wanted from their dining experience – as well as noticing that some of their needs were not being met – he focused on creating restaurants specialising in grilled meat and fish fuelled on fire and charcoal, producing a unique and succulent taste. Following up the success of The Coal Shed, Razak opened The Salt Room in February 2015 using the same cooking techniques and levels of service but – using the sea views as a natural inspiration – giving centre stage to locally caught fish dishes. Shortly after that he opened The Coal Shed London branch in 2018 and, in 2021, opened award-winning concept Burnt Orange, an adult oasis serving middle eastern inspired dishes cooked over fire and cocktails. His latest restaurant Tutto, opened in autumn 2022. Tutto offers authentic Italian cuisine, made for sharing.
