At Awildan Distilling, Jeff Olson is inspired by the natural world and humankind’s long, intertwining connection to the wild. Awildan Distilling was founded with the mission to heighten the joy of living, and to elevate life’s experiences through exceptional whiskey and spirits.

    Derrick and Jonathan join Jeff in the Awildan tasting room in Sun Prairie, WI to taste their way through a journey of spirits including Genever and Poitin and Spiced Rum. Jeff brews beer too so we chat about his transition from being a brewer to distilling spirits and how those experiences compare.

    Jeff believes if he isn't proud of the spirits he's creating, it isn't worth the work.

    Kalita Wave - The Flat Bottom Pour Over OG

    In this episode, Kenneth sits down with Arsalan Pourmand and Marc Chiusano of Flux Coffee to talk about using the iconic Kalita Wave to make a great pour-over. A piece of kit they have been using for many years as brewers and coffee explorers. They discuss which material is best, ratios, pour rates, bloom sizes, and brew times.

    This episode also covers some of the differences between flat-bottomed and cone-shaped brewers, a style of brewer that Kenneth will be taking a deeper look at next week.

    It’s important to know the gravity of your wort because that will affect how much alcohol is produced, how long it will take to ferment, whether or not it is likely to “get stuck”, the sweetness/dryness of the beer and a myriad other factors.

    When it comes to measuring the specific gravity of a beer to wort, there are two main tools we can use: the hydrometer and the refractometer. they do the same thing - but in very different ways.

    In the second episode of this two-part series, Kenneth and Daniel Teplitz of Klatch Coffee sit down together to deliver a pour-over masterclass. Daniel recently took 3rd place in the 2023 US Brewer’s Cup Championship and shares the exact details of how he achieves the perfect pour - it’s a pour technique you can easily use at home!

    For this episode they dive deeper into the subject of pour-over brewing, explaining what the bloom is and how to get it right. They also cover how to pour to activate the extraction process, channeling, continuous vs pulse pouring, and how to achieve even distribution of the water to create the best overall flavor profile. They also bust an interesting coffee-brewing myth!

    • Allowing the right level of bloom to develop is essential for releasing CO2. If you do not release enough of it, you will not get a good extraction.

They also discuss the science and physics behind each of the pour tips and techniques that they share and the pour over myths they bust.
