    For this episode Aarón and Zarela were thrilled to have Fany Gerson return to the show. Fany launched the acclaimed La Newyorkina, an artisanal Mexican frozen treats and sweets business, and is also the chef, founder and co-owner of Fan-Fan Doughnuts. There could not be a more knowledgable guest for an episode all about Mexican sweets!

    Together they illuminate how Ice Cream is just as regional as every other component of Mexican Food. They touch on specialties from Oaxaca, Veracruz, Campeche, and more. For instance, Fany tells us about an ice cream shop near Dolores Hidalgo that specializes in ice cream flavored with cacti! 

    Zarela also shares early memories of doughnuts and ice cream on the ranch, and Aaron and Fany encourage you to try making ice cream at home.

      Cactus Country https://www.cactuscountry.com.au/ was inspired by John's dad who while traveling in England saw the Chelsea flower show. 

      When he came back to Australia, he came back with the vision of tourism being something that would eventuate in Australia. 

      Everybody told him it would not work, especially given we are three hours north of Melbourne in the middle of nowhere. Everyone said 'you are mad'. So he was always on the back foot in a sense but got to prove everybody wrong. Probably in hindsight made him even more determined because I think he loves the challenge. He started with a quarter acre and bought a large collection from South Australia and traveled the world in the 50s collecting cacti and succulents, bringing them back to Australia at a time where there were no restrictions on what you could bring in. 

      John described the last few years at Cactus Country as "nuts".  In the episode John talks about;

      In this weeks episode, the final before our recap, we had the pleasure of taking a personal tour of the Rosson House at Heritage Square in downtown Phoenix. Heritage Square is home to renown restaurants such as Pizzeria Bianco and Nobuo at Teeter House, right next door to the Arizona Science Center. When you think of Phoenix often images of cowboys, cacti and rattlesnakes come to mind. Rarely would one associate the Victorian Era with Phoenix, a trip through the Rosson House will change that belief. Many of us natives have seen the fancy house on the corner on the way to the science center. Katie Delahoyde - Museum Interpreter and Jennifer Hance - Director of Education provide the history and give life to this old fancy house. It's a big house with bigger character, noises and even ghosts? You’ll have to listen and visit to find out whether it has supernatural inhabitants.       Tom Baldwin is the Farm Director of Ulua Palms Farm and Nursery in Makawo, HI. A permaculture designer and nurseryman, he is currently engaged in the development of a 5-acre homestead property on Maui in addition to maintaining an 18-acre farm on Big Island. This includes the current planting of a collection of roughly 50 avocado varieties, and an extensive renovation of an old family homestead built in 1906. Tom stewards an extensive collection of plants, including a repository of rare fruit and nuts. He also has a special interest in cacti.
