    Today on our episode #375 of All in the Industry®, Shari Bayer has a special “On the Road” show from Latin America’s 50 Best Restaurants 2023, which took place in Rio de Janeiro, Brazil on Tuesday, November 28th, 2023. This was the 11th edition of this list which launched in 2013 to celebrate gastronomy across the region and to provide diners around the globe with local insight and culinary recommendations. Since its inception, it has quickly grown to become the premier gastronomic ranking in the continent with its annual gathering of chefs, restaurateurs, media and food industry VIPs. Latin America's 50 Best Restaurants is part of the 50 Best brand, which includes The World's 50 Best Restaurants. 

    Shari attended the awards ceremony in Rio, as well as the #50BestTalks, 50 Best Signature Sessions dinner with Oteque (#20 LATAM / #76) x Kjolle (#7 LATAM / #28) x Kol (#23), lunch at Lasai (#14 LATAM / #58), and more; and has several interviews, including conversations with William Drew (EP 358), Director of Content for 50 Best; Rodolfo Guzman of Borago (#9 LATAM / #29; EP 356) in Santiago, Chile; Rafa Costa y Silva of Lasai in Rio; Virgilio Martinez of Central (#1 LATAM 2022 / #1; EP 310) in Lima; Alberto Landgraff of Oteque in Rio; and Manuela "Manu" Bufara of Manu (#35 LATAM) in Curitiba, Brazil.     On today's episode of All in the Industry®, Shari Bayer's guest is Virgilio Martinez, chef and owner of Central in Lima, Peru, and author of a new book, The Latin American Cookbook (Phaidon, 10/27/21). After cooking in prestigious restaurants around the world, Virgilio returned to Peru in 2009 and opened Central. Since 2013, Central has appeared on the World’s 50 Best list and has been named the #1 restaurant in Latin America multiple times. Virgilio co-founded Mater Iniciativa, which documents Latin America’s indigenous foods. In 2018, he opened the acclaimed Mil in the Andes above the terraces of Moray. He is featured on Netflix’s Chef’s Table and is the author of Central, his chef monograph published by Phaidon in 2016.
