85: Crafting Beer and Community in Small-Town America, with Gary Fish

Gary Fish founded Deschutes Brewery in downtown Bend, Oregon in 1988. It began as a small pub that focused on handcrafted food, house-brewed beer and the purpose of bringing people together. Under Gary’s leadership, Deschutes Brewery has grown to become the 10th-largest craft brewery in the United States.

    Beers with the Boys

    Beers with the Boys

So this week was time for a Breakaway.   I needed a break from work.   Season 1 was wrapping up.  It was a great time to get away. A  road trip was in order. Thanks to  our Friend Charlie,   a group of us were able to come together this weekend  and hit the road to the some of the best (intentionally) and worsts… (accidentally)  breweries in central Oregon.

Derek Has Night Terrors & We Drink Deschutes Neon Daydream & Rogue Dreamland

Derek Has Night Terrors & We Drink Deschutes Neon Daydream & Rogue Dreamland

Not only is this our first podcast back after a roughly five-month hiatus. Not only did we impressively tie the beer names to match up with the fear that we would discuss. Not only does the podcast sound crystal clear with some incredible new sounds. But we have a brand new co-host! Damn, this is a good podcast. *Sips beer*. Where was I?

Oh ya, I am incredibly excited to announce that Derek (who has been on an earlier episode) is officially joining me as co-host of Beer Freaks. And as an initiation, he has to talk about his deepest, darkest fear for his inagural episode. So, Derek talks about his night terrors and sleep paralysis. And because he told me what his fear was in advance, I was able to find a few beers from some of my favorite breweries to match up with the theme: Rogue Dreamland and Deschutes Neon Daydream. The fact that they are both from Oregon was a total coincidence. I'm assuming the folks that brew beer in that state are just sleepy all the time. Or they have wildly vivid dreams, perhaps from doing too many mushrooms. I'm not sure. And I'm certainly not judging.

I digress. So please enjoy Derek's first episode as co-host. Oh, did I mention the location of the podcast has changed, too? Ya, we are out of the plywood booth I built for my garage. I'll always have love for that thing. But it was hot. I mean, it was in my Las Vegas garage. C'mon! But now, oh boy, we have a sweet setup in Derek's podcast man cave, where the beer flows like wine. Enjoy!

Black Lives Matter: Voices of Rural Oregon

Black Lives Matter: Voices of Rural Oregon

We are in the midst of a global movement, with Black Lives Matter protests erupting all around the nation and beyond. Rural Organizing Project’s multiracial network of human dignity groups is answering the call. Here in Oregon, rural and small-town communities have hosted over 75 community events in every corner of the state. People are gathering on street corners, in churches and parks, and in socially-distanced car caravans to protest and hold vigil for George Floyd, Breonna Taylor, Tony McDade, and the many other Black and brown people killed by police. Almost all of these protests were organized by young people braving a pandemic. In this month’s episode, Black Lives Matter: Voices of Rural Oregon, we’ll hear from protest organizers including Adriana Aquarius in Deschutes County and Gianna Espinoza in Wallowa County about why their communities are showing up in defense of Black lives.

Local organizers have also been taking the energy of this moment and directing it towards organizing for racial justice on the local level. Groups in the ROP network and new groups called to action by the current uprising are digging into police and sheriffs’ budgets, calling and emailing local elected officials, and talking to their neighbors about racism and white supremacy. Following the leadership of the Movement for Black Lives, rural Oregonians are working to end systemic racism in their counties, defunding the police, and investing our resources into the things that create true safety and help our communities thrive. You can learn more about the vision and demands of the Movement for Black Lives here and current opportunities for action here! Referenced in the episode, you can find the Pew Survey which found a majority of people in the US support Black Lives Matter here.

ROP is holding multiple statewide calls to strategize together about how to continue our organizing in the face of intimidation and threats from white supremacist counter-protesters and to share strategies for translating the Movement for Black Lives’ demands into each county's specific context. 127: Kyle Matthias of Deschutes on their “All-In” Approach to Innovation Brewing

127: Kyle Matthias of Deschutes on their “All-In” Approach to Innovation Brewing
If you visit the Deschutes Brewery (https://www.deschutesbrewery.com) taproom in Bend today, you can’t miss the innovation brewhouse. It’s right there in the front window to your left as you walk in, tucked beneath the towering fermentors that produce the brewery’s best-known brands. The system itself is remarkable—a seven-vessel automated system with two kettles and two whirlpools, so the brewers can split the wort stream after the mash. That is supported by a cellar of 13 nano-scale fermentation vessels and seven tiny brite tanks, all built with geometries that mimic the production brewhouse’s full scale vessels. Managing it all is Matthias, our guest on the podcast this week. In this episode, Matthias discusses the range of approaches to innovation employed by Deschutes, as well as some of the important lessons they’ve learned over the past year and a half of brewing intensively on the pilot system. The conversations includes: brewing low-calorie but flavorful IPAs dry hopping during versus after active fermentation the impact of pH on hops expression head-to-head hops tests the development process for beers such as King Crispy pilsner Deschutes’ cocktail-inspired approach to hard seltzer and its development process using alternative acids (besides lactic) in tart and sour beer the right applications for fruit juice, puree, and whole fruit And much more. “To commit to an expense as large as the pilot brewery definitely sends a message that we’re not just going to rest on our laurels,” Matthias says. “We know we need to continue to do things differently. We are continuing to deliver new products, and coming out with them faster and faster every year. [We] rely on emotion, passion, and gut instinct to come up with what could be the next disrupter in the industry.” This episode is brought to you by: G&D Chillers (https://gdchillers.com): Nearly 2,000 breweries across the US, Canada & Mexico partner with G&D Chillers. Diving into the Abyss with Deschutes Brewery

Deschutes Brewery was founded in 1988.  For a craft brewery, that's a long time ago.  Kyle Matthias, the Assitant Brewmaster at Deschutes' Pilot Plant tells us that innovation and agility are key for their continued success.

We're joined this week by Matthias and Brewmaster Brian Faivre to hear more about what's going on at Deschutes.  While sipping a few of their amazing beers we discuss beer trends, staying ahead of the game as a bigger brewery, their new flavored malt beverage Modified Theory (NOT a hard seltzer!), brewing beer in the land of legal weed, and Deschutes' new Reserve Club.
