    Episode Introduction

Hey there, listeners! Marco Ciappelli here, welcoming you to another episode of Audio Signals. We're on a mission to explore the vast universe of narratives, focusing on the storytellers themselves. Storytelling, as you know, isn't just about tales; it's a bridge that connects generations, cultures, and souls. As our world becomes increasingly digital, the power of a well-told story is immeasurable. It's the lifeline of our shared experiences and collective consciousness.

Today, we're diving into the captivating world of food, wine, and the intricate tales they tell with our guest, William Echikson. William's illustrious career in journalism and communications has seen him contribute to prestigious outlets like The New Yorker and Wall Street Journal. His tenure at Google, where he oversaw vast regional communications and initiated Google's op-ed program, further solidifies his understanding of narratives in a modern context.

Our conversation promises a wealth of insights:

    • We'll explore the profound ways in which food mirrors societal shifts. How does the pace of life in France, both fast and slow, resonate in its culinary choices? How have historical events like the rise of Protestant Europe and the affluence of Spain influenced our dining tables?
    • Bordeaux's wine world is not just about the grape. It's a reflection of French-American dynamics, diplomacy, and the intricate nuances of international relations.

Bill's experiences and travels offer a unique perspective on this gastronomic journey. From understanding how food choices reflect our histories and geopolitics to the tales hidden in a bottle of wine, we'll traverse a world where every bite and sip holds a story. The bustling markets, the serene vineyards, age-old recipes passed down generations, and the innovative culinary fusions of today - each has a tale to tell, reflecting our collective identities, politics, economies, and more.

If you're intrigued by the crossroads of food, history, and narratives, today's episode is a feast you won't want to miss.

    Kwanghi Chan Can't Be Stopped

Is there anything Kwanghi Chan can’t do?! The Dublin-based chef and cookbook author owns two restaurants, a food truck, a retail sauce company, and regularly appears on TV. Born in Hong Kong, Kwanghi moved to Donegal when he was eight and grew up cooking in his uncle’s Chinese takeaway. As an adult, he chose a culinary education over art school and went on to work in a number of Michelin-starred restaurants before going out on his own. Kwanghi’s first book, Wok, came out last year and is the first Irish-Chinese cookbook to be published in Ireland.

We’re so excited to have Kwanghi Chan help us to kick off the second season of Dyed Green. On this episode, we speak with Kwanghi about his career trajectory, what Chinese food in Ireland is like, white people cooking Asian food, and the future of the food industry in the face of all of today’s challenges.

Dyed Green is a project of Bog & Thunder, whose mission is to highlight the best of Irish food and culture, through food tours, events, and media. Find out more at www.bogandthunder.com.

    The Art of Eating

    The Art of Eating

“It’s not just the great works of mankind that make a culture.  It is the daily things, like what people eat and how they serve it” - Laurie Colwin, Home Cooking

    Welcome……
There is something about food that weaves its way in and out of life, that we cannot deny.   When I wrote this some time back I was in the middle of the day to day yet, musing over women and food, and how everything was pulsing around me, the orchard, the sunshine, the books on the shelf, the mentors I would seek to understand through the many resources on my bookshelf….. Julia Child, Elizabeth David, Nigella Lawson, Diana Henry and many more.

These writers and culinary mentors were singing to me, and somehow I was in the middle of it all, somewhere between the daily and the sublime, reaching for a pear, scrawling down words, moments, memories, menus, and recipes.  This is the art of eating and everything I love about life.

Food For Thought: Cooking with Massimo and Friends, and Living the Simple Life

Welcome to Episode #14:  Food For Thought, Cooking from the Cookbook ‘Bread is Gold: Extraordinary Meals with Ordinary Ingredients’ as a project to see me though this year.  I have no doubt it will take me that long......And surrendering to the Simple Life as I know it.

Wow, things have changed so fast we barely know what will happen today nor tomorrow.  We are in the middle of unprecedented times, certainly in my own personal lifetime never mind my kids.  Italy is suffering so much as are most countries, and we are watching from the sidelines on guard to our own fate with this virus.  My prayers and thoughts are with those who are experiencing the harsh reality  and pain of this time.

In the short term I am concentrating my energies on what I can do today that is creative, intentional and purposeful.  Creativity is called for in times of crisis.

Making the decision to flat out cook from the bountiful ‘Bread is Gold’ cookbook is not a light one.  It takes time, thought, intention, resourcefulness and conviction.  Time will tell about the conviction part however I am enjoying the process and finding my way even if I am slightly anxious how this will turn out.  Onwards I say.......

    • Welcome to Episode #11 and the Eternal City of Roma.  This is the final chapter of the book share In the Shadow of a Cypress: An Italian Adventure and Season 1 on the podcast A Writer In Italy.

What a journey it has been.  These last days wandering around Rome from Piazza to Piazza sipping cappuccino and people watching in Piazza della Rotunda were full of delight and spontaneity.  The travelers dream day.  No real destination, just the beauty of turning into a hidden street and discovering the best gelato one has ever tried or a stationary shop to tempt the purchase of just one more journal to write in.

The day has me wandering across Ponte Sisto to Trastevere in a reverie about life and how it is important to seek and create space for yourself.  I cannot help but reflect on the weeks that have captured something beautiful in Italy.

Stay tuned to the absolute end of this share for details on Season 2 and the next episode to share in 2020, and books and my discoveries of a few Roman treasures of the 21st Century kind.  I do rattle on a little until I decide to just do it and share my inspirations before running off to the school gate.....

Certainly this recent podcast had me juggling the creative life and the realities of living in Australia at the end of 2019.  However, I was more than happy to share the days in Amalfi and pages from my book  ‘In the Shadow of a Cypress’ in podcast land.....

Amalfi was a collection of rich moments.  The architecture, the history, the location, the sea and the shades of colourful umbrellas on the beach at Positano certainly captured my spirit.  Moments only a traveler who is open to a little coastal magic can have.

This episode shares days in the village of Amalfi, Positano and Minori until the inevitable return back to Rome for the last part of the journey.  Andiamo......

Returning to Siena after many years it was wonderful to be sitting and sipping a cappuccino staring at the beauty of the Palazzo Pubblico on my first morning in the Centro Storico of this Unesco World Heritage medieval city.

Siena is an obvious choice if visiting Florence.  An hour and a half away on the train or by car through majestic countryside and you find yourself in a city like no other. Once upon a time it was a stop on the pilgrimage route as the pilgrims came from the south to Rome along the Via Francigena.

With its fan shaped piazza, Gothic Duomo, wonderfully dark secretive streets, the non stop celebrations of the Palio Race and the many Renaissance treasures there is much to discover and enjoy inside and outside of the medieval walls.

Welcome to Episode #7:   A Conversation with Cookbook Author, Food Writer and Photographer Emiko Davies about Italy, Books and Family.......

I had a lovely time over coffee at Tilley’s Lyneham on a chilly winters morning in Canberra chatting and getting to know Emiko and all of the wonderful details about her three cookbooks and how she started as a Food Blogger in Florence, Italy.

I very much enjoyed this conversation forgetting that I am on the recording too, hence all of my oohs and ahhs while listening in rapture to the wonderful details of Emiko’s life.

Studying art restoration and etching, living in Florence, starting a Tuscan food blog to cure her creative energy and fuel her days, getting the call to write a book, navigating motherhood and Florence, moving to the Maremma in the middle of writing and completing ‘Florentine’, observing and eating seasonally..........All of it a fabulous journey to partake in and share.

I love book publishing stories so had to get to the bottom of how and when this all happened and Emiko is a wonderful story teller so I am grateful she had the time to chat in the lively ambience of Tilley’s on a bustling Monday morning, jazz tunes and all.

The Transformative Power of Food Literature

Meet four more HRN Hall of Fame inductees – they're all writers who have changed the way we talk about food. We take a look at the journeys that shaped their literary voices, explore the culinary landscape they work with, and examine the transformative effect their work has had on what we eat and where it comes from.

The name Michael Pollan is synonymous with books which have inspired millions to think and eat differently.
