    79: Perfecting the Painful Pleasure of Nashville Hot Chicken, with Johnny Ray Zone

    A Los Angeles native, Chef Johnny Ray Zone began his culinary career as an apprentice, working as a garde manger at Figaro Bistrot in Los Feliz. He worked under chefs like Thomas Keller in Beverly Hills, Gordan Ramsay in London, and Nobu Matsuhisa in West Hollywood, before becoming the executive chef at La Poubelle in LA's Franklin Village. Most people today know him as the cofounder and executive chef of Howlin' Rays, the first Nashville hot chicken spot to open on the West Coast, and the restaurant many say kickstarted our national hot chicken craze.

    Villa Park native and University of Illinois, Chicago graduate, Joe Fontana got his start as a valet working at over 140 restaurant and bar venues including some of Chicago’s staples such as The Redhead Piano Bar, Ranallis, Mothers, and the Italian Village. After finding a passion for the industry, Joe worked his way up from barback, to server, to bartender to manager at the late Doc Ryan’s in Elmhurst. 6 years of pursuing different marketing and sales jobs in the “real world,” Joe decided to return to hospitality with a small dream of opening a restaurant. So in 2015 Joe opened a pop-up Meatball stand in Oceanside, California. It wasn’t long before the meatball stand was selling out night after night and Meatball Republic was born. In 2016 Joe signed a lease for the Meatball Republic, but after a heartbreaking real estate deal gone wrong, Joe was forced to look at other locations. After a year of searching for the right spot, a golden gem made it self available, but this time it wasn’t for meatballs. In 2017, Joe opened Fry the Coop, a Nashville Fried Chicken joint focused on becoming the “In and Out” of Nashville Hot Chicken. Fry the Coop got off to a fast start serving 1000’s of guest per week in its first month and has big plans for the future.

    Arman Oganesyan | How Dave’s Hot Chicken Went from a Parking Lot to Nationwide Franchise

    Arman Oganesyan is the co-founder of Dave’s Hot Chicken, a Nashville-style hot chicken joint based in LA which he started with his two childhood friends, Tommy Rubenyan and David Kopushyan.

    Before getting into the food and hospitality business, Arman was an actor and comedian who also created videos on Vine and YouTube. After discovering hot chicken following a visit to Howlin’ Ray’s and being inspired by the concept, the three friends got together and started selling their own out of a parking lot in Hollywood in May 2017.

    After just a few days of being open and an EaterLA article, Dave’s quickly became a popular go-to spot for locals and started amassing a large Instagram following. After just 6 months, they moved into their first brick-and-mortar on Western Avenue. Fast forward almost a year later, they have some BIG plans in the making including locations #2 and #3 and a nationwide franchise rollout!

    Pat & Posh sat down with Arman to hear about his upbringing, how he met his co-founders, founding Dave’s, and the struggles and successes they’ve endured along the way. We also chat about their vision for expanding the concept, how they plan on scaling the business, and his thoughts on the hot chicken craze in LA.
