Winemaker Notes
Pale and pretty in crystal-clear pink with orange undertones. The nose is delicate and fruity with notes of white peach and apricot mixed with passion fruit and mango. The taste is full, fresh and crisp with echoes of the fruity aroma amplified by citrus zest and sweet spices (cinnamon and cardamom).
Domaine Ott Winery
In 1896, after a tour of France’s many vineyards, Marcel Ott, a young graduate in agronomy engineering, finally found an estate that inspired him. To set the scene, we are in Provence. The Mediterranean is lapping at the shore a mere stone’s throw away...
In these parts, growing vines is the legacy of ancient times. Alas, a short while before Marcel Ott’s discovery, phylloxera had wreaked havoc on the vines. The land was cheaper, but the vineyards would have to be replanted. The wine had lost a great deal of its soul in the vineyard’s reconstruction. Marcel Ott bought several estates and began renovating them with the determined ambition to create great Provencal wines from noble grape varieties.
Today, 120 years later, cousins Christian and Jean-François Ott dedicate their life to their ancestor’s love for the site. In 2004, Domaines Ott joined Louis Roederer and its fabulous selection of wine craftsmen.
Christian and Jean-François run three estates: Château de Selle, Clos Mireille (both Côtes de Provence) and Château Romassan (Bandol). Each of these properties has its own individual charm and personality. Each can be proud of their extremely elegant rosé, red and white wines.

Provence is an important wine region and its largest AOC/P is Côtes de Provence. Côtes de Provence offers vineyards on the coast, in the valleys, and tucked into multiple mountains. Those vineyards make some of the world's best dry, pink wines. There is even a Cru Classé designation from 1955! Invest 10 minutes with me to understand a bit more about Côtes de Provence.

The Paris end of Collins Street!
Nicole Ress is Melbourne's go-to Frenchie for language and travel! Nicole grew up in a French speaking household with her mother who had come to Australia from Paris in the 1950s, met Nicole's dad and settled here. It was a wonderful and unusual childhood not just because of the French influence. Nicole's father and grandfather were in the hotel business and owned the Ress Oriental Hotel in Collins Street Melbourne. When her mother saw the hotel she exclaimed to Nicole's father, with the plane trees and the architecture it looked like Paris, all it was missing were the tables and chairs on the terrasse on the street. So Nicole's father applied for a permit to have the outdoor tables and he then coined the phrase, "the Paris end of Collins Street" which has stuck to that part of Melbourne to this day!
In this podcast chat we hear of Nicole's extraordinary life with two cultures and two countries in her heart. I was fascinated to hear of her experiences living in the city hotel in Melbourne with the Treasury Gardens as her back yard. As she grew up in this environment with guests like Maurice Chevalier staying at the hotel, she felt both French and Australian. I loved her stories of times she visited Paris and France with her family. Especially the times she had experiences with extraordinary chefs and famous wine houses that most of us can only dream about!
My favourite part of this podcast chat with Nicole is how she described her perfect French day. I have asked that question 90 times before, but this is the first time that a guest has taken me on a tour for the day where I could close my eyes and actually imagine myself there as Nicole walked me through one exquisite experience after another. She picked me as a cassis sorbet lover as we sat virtually under the orange trees in a Provence village looking out over the countryside to the Mediterranean in the distance. Bliss!
Close your eyes as you listen and you can join us there too.

Hotel Legends: Provence’s Villa La Coste
On this week’s episode, Melissa transports us to the South of France for a conversation with international hotelier Paddy McKillen about art, wine, architecture, and his passion project in Provence, Château La Coste.
Villa La Coste, a 28 suite boutique hotel, sits on the grounds of the extraordinary 600-acre estate, Château La Coste, where you will also find an open-air contemporary art museum and winery.
In this episode, you'll learn how Paddy went from working at his parent’s motor repair company in West Belfast to transforming a 300-year-old winery in the South of France into a wine estate and contemporary art park with a boutique 5-star hotel and incredible restaurants on site, including one from the Argentine celebrity chef and king of outdoor cooking, Francis Mallmann.
Between the outdoor art complex and culinary offerings, plus the state-of-the-art spa, immaculate pool area, and ultra-chic accommodations, there is good reason Melissa is excited to highlight the hotel and the massive art park at Chateau La Coste. It features works by some of the most notable names in contemporary art and architecture, with sculptures and buildings from Frank Gehry, Tadao Andao, Louise Bourgeois, Andy Goldsworthy, Tracy Emin, Sean Scully, and Ai Wei Wei, to name a few.
The South of France is home to an expansive world of art. On this week’s Destination Hack, Melissa takes you on a tour of inspiring locations, fabled collections, and natural phenomena across Provence.
Melissa’s Art Recommendations in Provence:
Towns of note: Aix en Provence, Arles, and Les Baux
Attractions in Arles: Parc des Ateliers, Van Gogh Foundation, Musée Réattu, the Luma Foundation, Lee Ufan Foundation
Hotels in Arles: Les Maisons d’Arles (L’Arlatan and Le Cloitre) (Nord Pinus)
Restaurants in and around Arles: Drum Cafe at the Luma Foundation, The restaurant at L’Arlatan; the outdoor café at Le Cloitre and La Chassagnette.
