Cynthia Duran, owner of Xinca Foods, had been seeking a vegan cheese to accompany her pupusas when, at the 2022 Summer Fancy Food Show, she met fellow exhibitor Dina DiCenso, cofounder of RIND by Dina and Joshua, who was debuting RIND's Carrot Cheese. In this episode, recorded on the 2023 Summer Fancy Food Show Big Idea Stage, Julie Gallagher, SFA’s director of content development, delves into how their serendipitous meeting led to the launch of Carrot Cheese and Loroco Pupusas.

    Episode 11 - Claudia Amaya

    Episode 11 - Claudia Amaya

    Claudia Amaya (Location: Bronx, NY)
Claudia is my wife. I wanted to interview her back at the beginning of the Bestowed series, but our schedules didn't match up for a 40+ minute bock of time. With kids, something always pops up.
Anyway, we speak about her time in film school, her film festival experiences and growing up in both El Salvador and Rockville Centre, NY. She is a very well rounded individual and keeps me inspired ever day. I'm very fortunate to be "shelter in place" with her.

Originals: We are what we eat - the dish that helps Salvadoran migrants integrate

Food is a silver lining in El Salvador—a tiny country nestled in between Honduras and Guatemala on the Pacific coast of Central America. Throughout its violent past and today’s widespread gang-violence, food has always been one of the country’s most positive aspects.

Since the civil war came to an end in 1992, hundreds of thousands of Salvadorians have fled the country in search of safety and better opportunities. While most of them find refuge in the United States, today many Salvadorans are also migrating to Europe as a result of President Trump’s harsh immigration policies.

This story is about how “Pupusas"—a type of flatbread made with corn and usually stuffed with cheese, beans and pork, and the country’s beloved national dish, helps Salvadoran migrants in Europe, find a sense of belonging and communion.

This story was produced and presented by Priyanka Shankar and edited by Priyanka Shankar and Toon Vos at KANO: a creative space for coworking and culture in Brussels.

Special thanks to Belgo-Salvadoran journalist Melissa Vida for enlightening us about Salvadoran food culture. Pupusas do sound delicious.
