    This episode begins with a background on Ben's journey into professional kitchens. Joe and Ben discuss the crème brulee dish Ben created at the Dancing Marlin. They then move on to Ben's time at Band of Bohemia, his first fine-dining experience in Chicago. From Band of Bohemia, Ben moved on to Boka during the pandemic, and realizing where he wanted to take his career, left to join the staff at Gadabout last fall. Ben shares his thoughts on working in fine-dining and what lessons he learned from his time there; the guys also discuss spring produce in the midwest like ramps and asparagus. They pivot to talking about the most recent trend in the restaurant industry of pickled and fermented everything. Ben ends talking about his favorite meal to make for his wife and where he hopes to take his career in the future.

    Real Talk On Racial Justice in Restaurants

    Racial inequity can be found across industries in America, but hospitality is a particular microcosm where power imbalances, lack of HR support, and attitudes towards service professionals can make for particularly challenging dynamics for BIPOC staff. In this episode, host Kiki Louya hears from Raeghn Draper, founder of the Chicago Hospitality Accountable Actions Database (CHAAD), about the chain of events set off by a racist diner. Mavis-Jay Sanders, Director of Culinary Development and Education at Drive Change weighs in on the intersecting challenges faced by Queer people of color; she also shares insights into how restaurants can create supportive and equitable working environments for all.

But there are a few committed individuals and organizations that offer support and models of change to the hospitality industry and its workers. They’re tackling addiction support and destigmatizing the need for mental health counseling.     Chris Stang | How The Infatuation is Transforming the Way You Discover New Restaurants

    Chris Stang is the co-founder and CEO of The Infatuation, a restaurant recommendation website and messaging service based in New York. They are most known for publishing restaurant reviews and guides, and as creators of the hashtag #EEEEEATS. In 2018, the company acquired the Zagat rating company from Google.

    Chris grew up in Denver and found his way into the music industry after a stint in college radio, working in promotion and marketing for 12 years at Atlantic Records alongside massive acts such as Skrillex, Coldplay, Matchbox Twenty, Bruno Mars, and Santigold.

    In 2009, he had an idea to launch a food blog with his now partner, Andrew Steinthal. After some early growth, they both decided to leave their corporate jobs in the midst of their careers to dive into the world of startups. Since then, they’ve grown a loyal community in over 20 cities worldwide and raised millions of dollars in funding (most recently, a $30 million round from Jeffrey Katzenberg’s WndrCo).

    In this episode, Pat and Posh hung out with Chris during one of his trips to LA to learn about his upbringing, experience working in the music industry, the early days of launching The Infatuation, and how he’s been able to manage the company’s massive growth. Chris also shares why they acquired Zagat, the parallels between music and business, the lessons he’s learned as a founder and leader, the next wave of innovation in the food industry, and what’s coming next from The Infatuation and Zagat.
