    Food Science with Dr. Stephan van Vliet! 401

    Dr. Stephan van Vliet earned his PhD in Kinesiology and Community Health from the University of Illinois at Urbana-Champaign and received post-doctoral training at the Center for Human Nutrition in the Washington University at the St. Louis School of Medicine. As a former member of the Duke Molecular Physiology Institute within the Duke University School of Medicine, his work focused (and still does) on the effects of primary compounds- such as protein, carbohydrates, fats, and vitamins and minerals- and secondary compounds- such as phytochemicals, polyphenols and antioxidants- and the molecular mechanisms by which they impact human metabolism. His work often also involves physical activity interventions and utilizes an integrative approach to improve human health. Dr. van Vliet performs clinical and translational studies to evaluate the effects of whole food ingestion and physical activity interventions on body composition, physical function, inflammation, and intracellular signaling pathways involved in regulating muscle mass with advancing age. He is currently an assistant professor at Utah State University, where we got to record this live conversation!

    This week's guest is Paul Murphy, Don's friend and fellow journalism student and practitioner at Utah State University. After graduation, Paul began his broadcast journalism career in Texas, then returned to Utah and worked at KTVX for more than a decade. After that, he jumped into government service as Director of Communications and Policy for the attorney general’s office, where he was for a dozen years. And he’s done plenty since, which we talk about. We had a great time chatting with Paul, and really hope you enjoy the conversation.

    Today we have a conversation with Jay Wamsley, who started out as a reporter in Cedar City, Utah, and after working for a while in public relations settled into 31 years as faculty adviser and publisher of Utah State University’s student newspaper, The Utah Statesman. Jay’s helped launch the journalism careers of too many reporters to count, probably, and we’re lucky he said yes to sitting down with us.
