    Aujourd'hui, environ 80% des animaux en France sont élevés sans accès à l’extérieur.  

    L’élevage représente au niveau mondial, 14,5 % des émissions de gaz à effet de serre et 12% pour l’Union Européenne

    Ancestrale, la pratique humaine de consommer de la viande suscite de nombreuses questions. Elles s’articulent essentiellement autour de trois enjeux : la santé humaine, l’environnement et l’éthique. Entre les partisans de l’abolition de l’élevage, ceux qui prônent une évolution des pratiques et ceux qui campent sur le statu quo pour des raisons culturelles ou économique (la filière de la viande étant très importante), de nouveaux acteurs émergent avec de nouvelles alternatives. Elles sont rendues possibles par les progrès scientifiques et technologiques, à l’instar des promoteurs de la viande cellulaire, cultivée en bioréacteur. Plusieurs futurs s’esquissent donc pour la consommation de viande. Les auditeurs de l’IHEST ont fait le point. La synthèse de leurs réflexions est proposée dans un nouveau podcast.
