This story takes place in the small town of Ossett, West Yorkshire, England which is just outside of Wakefield, so when this news came out, it created an uproar in the town and the media went on a frenzy.

This episode is a conversation with my buddies Shay Helm and Shane Weigand who have been hunting Montana and other parts of the great American wilderness for the last two decades.
Both of them are very much into the culinary exploration of wild game and fish. In fact, Shay actually used to go to culinary school and Shane worked at a wild game processor in his teens. So needless to say that they know their way around the kitchen and butcher station. Shane is also very involved in using donkeys (aka burrows) to pack into the backcountry for hunts and other adventures.

We begin with an introduction to Chris and his background, from his high school years working at a mom-and-pop restaurant through culinary school and into his professional career around the globe. He describes his time working for major meat packers in Chicago, and his eventual homecoming to Indianapolis where he founded Goose the Market. Goose the Market is an old-world style market where Chris has created a down-to-earth atmosphere for his customers to order their favorite cuts of meat, sandwiches and local Indiana produce. Chris describes what he wanted to accomplish with Smoking Goose and takes care to explain all of the process and patience he applies to his products. We learn about his thoughts on flavor profiles, how every sausage and salami differs in flavor and texture, his attention to detail in creating pleasant inconsistency and what he enjoys the most about this line of work.
Belle Gunness has been described by some as one of the most degenerate serial killers in US history. Using a combination of her genius and good looks, she was able to swindle and steal the modern-day equivalent of over $8,000,000 from her targets, who typically ended up dead. On top of this, she managed to get away with it. No one is certain when or how she died as she managed to stay ahead of law enforcement until her presumed death. We think?
