    Today on our episode #381 of All in the Industry®, Shari Bayer's guest is Valerie Chang Cumpa, an award-winning Miami-based chef who along with her family, including her brother Nando, opened Itamae in the Miami Design District, focusing on Nikkei cuisine; and in 2019, the team opened a fast casual off-shoot concept, B-Side, inside popular Asian Food Hall, 1-800-LUCKY. Her latest restaurant is Maty’s in Miami’s Midtown neighborhood, which has a modern take on comida criolla, the traditional Peruvian food of Valerie’s upbringing. Valerie, or Val, quickly garnered praise as one of the city's top young chefs, earning an Eater Young Gun nomination (2018), two James Beard semifinalist nominations for Rising Star Chef (2019, 2020) and nominations for Best Chef South (2022, 2023). And the accolades have continued, including Itamae on The New York Times' coveted Restaurant List in 2021, and as a Michelin Bib Gourmand in 2022; Maty's on Bon Appetit's 24 Best New Restaurants in 2023, and The New York Times' Restaurant List; Val and Nando were the first siblings to be named together to Food & Wine Magazine's Best New Chefs Class of 2023. And Val was nominated as a 2024 James Beard Awards semifinalist for Maty’s in the Best Chef: South category. Val participated in SOBEWFF 2024 (South Beach Wine & Food Festival) presented by Capital One, which took place February 22-25, 2024 in Miami, Fl., hosting a wonderful collaboration dinner at Maty's with Chabela Coss and Ana Castro, which Shari attended.

    Explore Cognac starting at No.3 The Château for wedded bliss!

    No 3 The Château is a stunning venue in the Cognac region which hosts many weddings through the warmer months each year, as well as other "experiences", but it has not always been that way.

    After developing various properties in the UK, interior designer Julie Berry (aka Jules) decided to take up a challenge of renovating a château in France. She settled on the Cognac area and started a search which resulted in the wonderful find of the château she calls home today. No 3 The Château is surrounded on all sides with miles of cognac vines, and walking distance to the village complete with boulangerie. Even though it was in a state of disrepair, Jules could sense the potential and could see the light-filled rooms with huge windows being a beautiful place to both retreat and be calm, as well as come together and celebrate.

    A recommendation from Jules which I will definitely use in the future, is the program Explore Cognac. This website highlights a number of experiences that tourists can uncover in the Cognac region. There are activities such as jewelry making, bike riding, barrel making, just loads of ways to discover all there is to do in Cognac. No 3 The Chateau has 2 experiences on the site, one for bread making in their old bread oven and another to host a dinner for 12 in the château dining room with a Michelin Starred chef! 

    No 3 The Château is a highlighted château on the Château Bee website and is booked out for a couple of years in advance! So if you're considering planning a wedding in France, get cracking! Booking a long way in advance is going to be a must!

    • In December 2009, Billboard magazine ranked Aaliyah at number 70 on its Top Artists of the Decade, while her album Aaliyah was ranked at number 181 on the magazine's Top 200 Albums of the Decade.

    Lindsay Hoopes went from working with Kamala Harris on tough cases to taking over her father's Napa Valley winery, which is a job twist she never saw coming. As the CEO at Hoopes Vineyard, she's navigated challenges as complex as those she encountered as a lawyer back in San Francisco. When the 2017 fires blanketed the grapes with smoke, Hoopes had to choose whether to compost the year's crop or find a way to save it. Her move to salvage the vintage with a Napa-appellation Brandy (coined Napagnac) put a spotlight on the future of Napa Valley as the wine industry contends with climate-change related issues among others.     Kate Hill on Bordeaux and Armagnac

    Kate says she lives in one of the most beautiful little corners of southwest France along the canal dig around in the farming area. A big river valley, very fertile soil, and very diverse agriculture, including grapes and wine.

    She says that as a cook she couldn't have landed in a better place when she came over 30 years ago. Kate operated a Canal Barge, and was cruising along from Holland south, and the boat engine broke down here. She ended up sinking a little bit more time in this area around Agen, and learned to love it. It reminded her of northern California, her most recent home in the US. It's a four season kind of gentle climate, with farming and wine––sort of like Northern California. She says she got stuck in the mud here and bought an old house on the side of the canal where she parked her boat.

    Kate has been restoring the place she bought over the years, and created a cooking school that was based there. Recently she decided to quit standing at the stove as much and sit more at her computer, writing. Kate has been working on a new book, that will be a bit memoir plus food, plus stories travel. She's calling it Finding France, because it is about how she found France and  still finds France, and how you could find France, no matter where you live. It's sort of a state of mind. 

    As the cooking school winds down, Kate is pivoting her guest house into a creative residency for writers, photographers and cooks, and anybody in the food arts basically, to come like an artist residency.
