    Welcome back to the Ready Set BBQ podcast, your go-to destination for the latest and most exciting happenings around the world! In this episode, we talk about the college and NFL Football, Halloween parties and costumes, Longhorn football game, dog birthday bbq, and the suite life.

    We are back and Jaime, Hiram and myself are back together.  Hiram takes a few minutes to gloat about a bet he and Jaime had.  We go over some of the outcomes of this weekends college and NFL Football games.  We talk about Halloween and how it wasn't that big of a deal for us this year.  We talk about Halloween parties and some of our favorite types of costumes.

    BBQ Time - Jaime and I make a trip to see the Longhorns in Austin.  Thought we didn't get to hit any barbecue spots, Jaime has a review about the food offerings at the Longhorns stadium.  We get pretty beat up by the mid-day sun and don't feel up to going out on the town on Halloween weekend.  I talk some barbecue as I cook up some tenderloin filets for my ride or die Beethoven's birthday.  The Pawty continues as we take it into the night grilling up some fajitas, chicken and jalapeno sausage poppers.  I talk about our upcoming cookoff in Edinburg at the South Texas Smokefest where we will attempt to defend our Reserve Grand Champion call from last year.

    Hiram tells us about the suite life and how he doesn't think he can go back to sitting where all the regular people sit to watch a concert.  He breaks down the suite living packages at the Crypto.com arena in Los Angeles.  The podcast gets a little somber as we remember one of our and everyone's friends Mathew Perry.  RIP.

    We also discuss the recipe used for Wild Turkey Fajitas. Tim harvested a Rio Grande turkey this past April in Oklahoma and it did not disappoint!

    We are back to the skeleton crew with as Jaime and Hiram join me to discuss some of the latest headlines.  It's football season as we prepare to watch week 1 of college football.  We talk about the weekend's games and then dive into some NFL talk with a surprising trade by the Cowboys to pick up Trey Lance from the Niners.  I ask the guys who their GOAT quarterback is after an interview with Joe Montana reveals his own best QB.  We also get into some boxing and celebrity fights coming up between traditional and nontraditional fighters.

    BBQ Time - I tell the guys about a new twist on surf and turf that I tried out.  I saw this on Jess Pryles's page and used all of her products for this.  I tried the new Hardcore Carnivore sausage links with shrimp on a skewer seasoned with her Hardcore Carnivore seasoning. Super fan Eddie likes what I did and did his own level 100 twist on this dish.  Totally one upped me on this one.  Jaime gives some props to Juniors as we tried their fajitas for the first time.  Solid selection with very little effort and no added seasoning.  Hiram tells us about a Gucci party he attends in the Hills for the second year in a row.  You'll have to tune in to hear about the spread they had along with live music and views of the Hollywood sign in the hills.  I talk about practicing some ribs as the American Royal cookoff nears.

    We have a full group as I am joined by Eddie and Mario from Chillin N Grillin, Jaime, and Evee.  We start by talking about the crazy NBA playoffs and the matchup between the Heat and Celtics.  We then weigh in on who won the breakup between Shakira and her Ex (who Jaime thinks is hot).  We then get into some of the weird Tik Tok foods and drinks that we've been seeing.  We may have to try some of these new ones.  The talk turns into how we celebrated our 21st birthday's as we celebrate Eddie Jr. turning the big 21.

    Mario breaks down the High School barbecue scene and what we could be seeing in the near future as high schools create teams to compete against each other in the high school circuit.  He recently mentored a group of kids from Nikki Rowe that won Grand Champs on their first cookoff. 
    I suggest that the FFA students build the pits that they will compete on.  He talks about the logistics and how they will raise money for these events as well as joining the State circuit in Texas.  Our friends at 7 Day Addiction even made them some team shirts. Our friends at Palmer Drug Abuse in McAllen are having a fundraiser and Alma and I volunteered our time and equipment to lend a hand.

    It's Memorial Weekend and we celebrate Jaime's Birthday.  Evee is upset that there are no boiled hotdogs on the menu.  We talk about what we are cooking and not cooking this weekend.  I ask the guys what's the difference between a Cookout and a Barbecue.  Some of us think a cookout is at a location like a ranch or park.  Chillin N Grillin says they don't cook with gas or propane.  They say without no flame there ain't no fame.  We talk about the 5 tips that Keyshawn Johnson has for the summer barbecue.  We threw some ribeye's and filets on the grill and it did not disappoint.  We talk about the upcoming Cook'em High Steaks Cookoff in Edinburg.  Jaime and I start our first practice of the year.   

    Finally, in the last segment of our podcast, we talked about some of the upcoming cookoffs and events that are coming up between our competition teams.  There's even a cookoff scheduled for a Monday.

    In this episode Johnny, Jaime and I welcome our special guest on Ladies Month, Nadia Ochoa.  Nadia is the director of Palmer Drug Abuse in McAllen and the promoter of the South Texas Courage to Change Cook-off. We start off with some headlines as it appears there is another fajita bandit in South Texas.  This time it's a lady that manages to steal over $1,000 in fajitas from an HEB and meat market in Laredo.  Salma Hayek is spotted at the Golden Globes holding a Mexican candy in her hands so after Nadia tracks some down we decide to give it a try.  There is a popular celebrity in the Rio Grande Valley known as the Bronco Pirata.  He is causing the local flea market to be overcrowded on the weekends.

We talk to Nadia about the upcoming South Texas Courage to Change Cookoff where we will be competing in the next couple of weeks.  This year the cookoff will take place in Pharr for the second year in a row.  There will be no pork butt this year as Nadia decided to stick with the main three meats. So far she has over 50 vendors and almost 30 teams.  We ask Nadia if her BBQ standards have gone up and she tell us how picky she has become with barbecue foods.

    Hiram is not on this one so I take over the behind the Red Carpet segment. We talk about the Golden Globes and as in recent years we know none of the movies.  We are surprised there wasn't more love for Top Gun Maverick as we all agree it was one of the best movies we saw all year in 2022.   I make a pitch for some past Marvel progects to get some love.

We start by talking about the Dallas Cowboys who are not as all the way back as everyone thought.   They lose a big lead in the 4th against enemies of the podcast, Green Bay Packers and cry baby Aaron Rodgers.  Another one of our favorite was not so lucky to even have a lead as they don't event show up at home.  You may have guessed it, the Texas Longhorns.  Jaime gives a recap of the recent UFC fights which were surprisingly entertaining.  We close out the headline with some Tom Brady talk and some more details about his super public divorce.

    BBQ time: The Queen of BBQ shows up over the weekend with a ton of meats to cook for the Longhorn game.  The game wasn't so great but the eats were.  She showed up with two giant marinated sirloins steaks.  Some of the biggest I've ever seen.  In addition we also had some huge loaded ribs, fajitas, and bacon wrapped jalapenos.  Needless to say there were plenty of leftovers.  Isaac tells us about the briskets he cooked for work on his Masterbuilt charcoal gravity smoker.  He give us some detail on how the smoker works and how he cooked the briskets.  I also cook two briskets for a friend on my Pitmaker safe and also share some Joe tips and cooking methods.  Johnny and I take Rudy to GW BBQ for Veteran's Day,.  It was his first time there and he was blown away by the food quality and serving portions.  Johnny and Alma cook for a local election party.

    Rudy gives us a lesson on Cryptic creatures, no not Crypto which is just as scary as of late, but creatures like Dog Men, Warewolves, Chupacabras and other legendary creatures that have scared people for many centuries.

    In this episode I am joined by Jaime, Isaac and Hector.   We start off with our favorite NFL players Deshawn Watson.  Recently he was given a 6-game suspension by an independent judge but that wasn't good enough for the NFL, so the saga continues.  We ask Hector from some legal advice on the matter.  I bring up last week's podcast as I talked about buying Troy Aikman's beer, Eight as he recently visited the Rio Grande Valley to promote it.  When I saw the sticker price, I called an audible and decided my money was better spent elsewhere.

    We then talk about some BBQ as Hector is on the podcast so be ready for some pretty heavy bbq talk.  I saw a video on social media that we break down.  The person lathers mayo on the brisket before he seasons and puts on the smoker.  As the brisket reaches the stall, he then proceeds to make a foil boat for the brisket with the thought that the brisket will be half wrap so still remain MOIST however the top of the brisket will continue to develop a nice bark.  Something to maybe try in the test outdoor kitchen.  We then talk about my second weekend in a row cooking bbq pizza on the Weber Kettle.  I come up with 4 different pies with some input from my sister.  We make a traditional pepperoni pizza, then follow it with our twist on a Hawaiian that includes a yogurt/garlic sauce, Canadian bacon, jalapenos and cheese. The next offering is a meat lovers if you will topped with pepperoni and ground brawts, followed by thick cut mushrooms.  Last but not least I spread some jalapeno cream cheese, top it with crispy bacon, jalapenos and freshly grilled fajita chunks.  All winners in my book.  

    Hector and Jaime share their experiences of visiting GW BBQ and Catering during the week. One of the guys has a successful trip and the other does not.  Hector only wants to go back for the Brisket smash burger.

    Another bandit makes his way onto the podcast but this time it's a brisket bandit.  Apparently there was another brisket heist in Austin as a man successfully steals 20 briskets off the pit of La Barbecue.  We wonder how this can keep happening and why there are no employees present when this goes down. We then share our thoughts of what this person did with all that brisket.

    We close it out talking some college football as our team the Texas Longhorns are scheduled to play Alabama in September.  We can't believe what the tickets are going for.  Hector gives us a peak behind the curtain from the VIP section of the games.  I'm mad cause I didn't get any buffet.

    In this episode I am joined by Jaime, Johnny and Isaac.  We start off with some headlines talking about our fellow Longhorn Kevin Durant.  He keeps making some questionable decisions that have us questioning his character.  We then talk about one of our favorites on the podcast, Elon Musk.  Some news came out this week that he knocked up one of the CEO's of one of his companies.  Jaime thinks he's just listening to his advice on the podcast and thinks all rich guys should leave it in.  We then talk about another billionaire who is in trouble for sexual misconduct, Vince McMahon.

    We give a recap of the Texas Cook'em High Steaks in Edinburg.  We were very happy with our spot this year once again but again some of the cooks did not have it as good as us.  Who has it better than us....nobody. I then give a recap of the results and we have one very good call but a disappointing day overall.  Everyone forgets to bring an ice chest as we try to find ways to keep our meet, 80 water bottles cool and most importantly our beer.  Johnny's tents don't survive the windy day.  We talk about the new set up and how we enjoy the new location.  Then we get into the SCA (Steak Cookoff Association) portion of the cookoff.  As always Brett ran an A+ show but we bring our Mickey Mouse operation to the competition.  Hear about the huge mistake we make that could have cost us some big money.

     We continue to talk about the steak cookoff.  Johnny has an idea to do away with all the meats and just make it a steak cookoff.  We talk about the lack of steak cookoffs in South Texas and how it would look like if it was just a steak cookoff.  We put our promoter hat on and talk about some changes that could be made in the future of this cookoff.  We think that more backyard guys and joes could possibly compete if it was only a steak cookoff.  We ask the questions to the joes to see what they think.

    Johnny takes the show on the road once again as he makes a visit to Valentina's BBQ in Austin, Texas.  Right away he is not impressed by the set up and port o potty bathroom.  He also takes a look at the menu and once again not happy about it.  His experience at Smoke Crafters BBQ in Mission Texas makes him question how this Austin eatery can be so popular if it doesn't even compare. I guess ignorance is bliss.

We break down the footage from twitter and try to figure out if it was a slap or a punch.   Hector finally joins the podcast in mid-season form.  Hector gives us a review and funny story of a new bbq pit he bought over the weekend to cook a cabrito and how he cooked the cabrito. Since we didn't see any of the movies we decided to make our own awards that we called the Daddys.

    In this episode Jaime, Isaac, Marisol and I are joined by our special guest Nadia Ochoa De La Garza (Executive Director of Palmer Drug Abuse Program).  We start by sharing a story about a fellow Edinburg man that is suing Applebees for serving him too much and causing him to crash into an 18 wheeler.  Jaime gives us a UFC story about Cain Velasquez going postal and picks up 10 counts of attempted murder.

    We talk about this years' Courage to Change Cookoff by Palmer Drug Abuse Program on April 1st and 2nd.  Nadia tells us about some of the past cookoffs and how Covid-19 had an effect on the last couple of years.  This year's cookoff has a new location and will be sanctioned by a new organization, Champions Barbecue Alliance.  There is an extra meat however Nadia doesn't know what a pork butt is. This year the cookoff will have some Market Days for vendors to participate.  There will also be some new cutting board trophies and aprons for the winners.

    We take over Hiram's Behind the Red Carpet segment as we tell a story about the new Batman movie.  A man tells his wife that he has to miss the birth of his child because he has to go to the opening of the Batman movie before he sees spoilers on Facebook.  We'll have to wait for Hiram to give us his review though I'm sure I'll watch it before.  Isaac tells us about the birth of his child and his experience.  Nadia gives Tom Brady a pass to do whatever he wants.  We then go into a whole talk about the magic of childbirth.

Gas, Movies, grapes.  I think about changing to Natty Light.  We do our best to share out cost saving tips for the Joe Army.  Isaac doesn't want to feed his daughter Spam, he's worked too hard.  Nadia saves the segment with some sage parenting advice.

    In this episode I am joined by Jaime, Hector, and Eddie (via Phone).  We start off by talking about the Super Bowl.  Most of us were pro Bengals but the end result didn't go in our favor.  We did make a bet in Vegas that we collectively hit so at least there was that.  Jaime gives us a poor recap of the UFC fights. We give a shout out to our Super Bowl Giveaway contest winners.  

    Eddie gives us a recap of a cookoff that he competed in this past weekend.  He doesn't have the other half of Chillin N Grillin but still puts his best effort.  Weather may have played a part as the results did not go in his favor.  I judge my first Champions Barbecue Alliance cookoff and share my experience and details on the process.  I discover there is some shenanigans afoot and we talk about how to fix the underlying issues.  

    We say goodbye to Eddie as we give some details on the Fried Chicken Sandwiches that we made.  Hector gets some special made brioche buns made and we marinate the chicken thighs overnight.  We then do a double dredge and deep try the chicken.  We compose our ultimate sandwich with some Jess Pryles, Alabama White Sauce (and siracha) on the bottom bun. Then we add the chicken and drizzle Hector's sweet heat sauce.  We then add some pickles that I made and then bun and magic happens.  It's an explosion of flavor in your mouth.  We definitely won the chicken wars. If that wasn't enough we also made a fajita, sausage, molleja botana and some potato logs.                                                                                                                                                                                                                     

    We finish off by talking about Kyler Murray being a baby and the Super Bowl halftime show.  Jaime things he spotted a Ninja Turtle hanging upside down.

    Ep. 46: Chillin, Grillin & Starting a Comp BBQ Team

    In this episode we do a remote podcast from the headquarters of Chillin n Grillin.   I am joined by Jaime, Hector, Hiram (in person) Johnny, Eddie and Phil. We start by talking about the excellent barbecue that Eddie prepared for us before the podcast.  We had beef and chicken fajitas, jalapeno poppers, pork riblets, mollejas, nopales, and just about every type of dip and salsa you can think of.  Needless to say we all ate well.  

    We start to talk about the differences between IBCA and CBA cookoffs.  (The two available in South and most of Texas).  Before we dig too deep we call in the other half of Chillin and Grillin, our compa Mario. Though we can all agree that we like CBA's new system, Mario misses the old days of only having to cook Pork Butt as one of the main categories.  CBA now has 4 turn in meats made up of Brisket, Ribs, Chicken, and Pork Butt while IBCA still has the same 3 meats minus the pork butt.  None of us can make sense of the comments on the new scoring system but Jaime, having judged sheds some light on that subject.                                              

    We get a little surprise by the Jaime Daddy as we are trying to pay some bills.  Jaime passes around some holiday gifts and we present a brand new Ready Set BBQ cap to our #1 fan.  

    We answer some questions from our fans in our Ready Set Q's segment.  One joe wants to know how much financially it takes to start a competition barbecue team.  We share the perspective from 4 different experiences from competition cooks on the podcast.  The numbers range from a few hundred dollars to $80,000.  Another caller (my sister Evee) wants to know how she can cook chicken and it still be moist.  Everyone has a different opinion on this one from temperature probing, to indirect cooking, marinating, and brining, I guess it's choose which works for you.  I think they all work if done right.
