    • I would argue that when it comes to bread, half (at most) of the final result comes from the recipe.  Far more important is handling and process. You Still Need a Recipe… Probably
      • 400g Flour

      • 400g Starter

      • 200g Water

      • 10g Salt

      • Knead until smooth, place in a banneton or bowl and cover with a clean cloth. Allow to rise for a lot longer than you probably think is necessary. I’ll often do overnight. Fresh bread in the morning!

      • Preheat the oven to 450. I recommend having either a baking stone or a dutch oven. GENTLY turn out the loaf. It’s basically a balloon at this point and we don’t want any of the delicious air to escape. 

      • Okay I lied, we want SOME of the air to escape. Slash the top all fancy. You can use a lame or sharp knife.

      • BAKE! The amount of time is dependant on the equipment currently in your oven.

      • Once done allow to rest for half an hour

Here are instructions for soaking or fermenting grains, beans, nuts and seeds to give you the maximum amount of absorbable nutrients. Very important for vegetarians and vegans, especially. It’s very important to soak any natural food with a coating on it, to stop the food coating (phytic acid) from binding with vitamins and minerals like calcium, and washing them out of the body. The sourdough process of making bread also neutralizes the food coating, making whole grains more digestible. The coffee roasting process may help that way, as well.

    Gut health and mental health. There’s so much conversation about improving gut health using probiotics, prebiotics and fermented foods, but it can be confusing.

    Jo Webster medical herbalist, nutritionist, gut health and fermented food specialist is joining me in this episode to answer a few questions I'm often asked when delivering webinars to organisations as part of their health & wellbeing activities;

    In this episode of The Moss Report Podcast, Mary Hardy, MD, and David Wales, talk with our host, Ralph W. Moss, Ph.D. about recent research on an unusual treatment: fermented wheat germ extract (FWGE). 

    Recent research has shown FWGE can reduce the abnormal metabolism of cancer cells. This raises the prospect that FWGE might heal cancer cells by reversing the “Warburg Effect,” thus converting a glucose-fermenting cell back into a normal cell. 

    The research into wheat germ has a long history and a promising future, as scientific papers show verifiable results and FWGE becomes more widely available. 

    Mary Hardy, MD, is board-certified in internal medicine and a specialist in botanical and integrative medicine.     EMB #463: Improve Digestion Through Fermented Foods

    Fermented foods is without question, one of the best ways to improve digestion.

    Some of my favourite fermented foods include: Kombucha, Sauerkraut, Kimchi and Miso.

    I choose to make homemade kombucha but there is some great local businesses that produce their own, which in my opinion would be better than a mass produced product.

    If you are purchasing Sauerkraut make sure it's raw and needs to be stored in the fridge.

    Kimchi is my favourite of all of these and again I choose to make my own. Pay attention to the store bought kimchi products, many are packed with toxins that won't do your digestive system any good.

    And last on my list is Soy products. In most cases I choose to avoid soy. Unless they are fermented. You can find health benefits from both Miso and Tempeh.
