    This is such a delicious, nutritious, and refreshing summer or winter dish!

     2 tablespoons Extra-Virgin Olive Oil (EVOO)

     1 large onion

     2 eggplant

     2 yellow squash

     2-3 zucchini

     3-4 cups our homemade vegetarian tomato sauce (see our YouTube channel)

     1 pint of fresh whole grape or cherry tomatoes

    Preheat the oven to 375 F.

    In a large oven-safe pan, such as a cast-iron pan, add the EVOO.  Slice the eggplant, squash, zucchini and onions into thin 1/4-inch rounds.  Layer the vegetables in the pan, adding a little bit of the sauce about 1/2 way through.  Layer the rest of the vegetables and the remaining sauce.  Nestle the whole tomatoes into the dish.  

    Bake uncovered for 40-45 minutes.

    Put the leftovers in the freezer, after it cools, for a delicious winter dish!

    Exploring the Timeless Beauty of Rome, Italy

    A Journey Through History 

    Rome's history spans over 2,000 years, making it one of the oldest continuously inhabited cities in the world. From its legendary founding by Romulus and Remus to its evolution into the capital of the mighty Roman Empire, the city has played a pivotal role in shaping Western civilization. 

    Rome is a treasure trove of architectural marvels that showcase the skill and creativity of generations past. The Colosseum, an imposing amphitheater, symbolizes ancient Roman engineering and entertainment. Its grandeur and the stories of gladiators and epic battles that once took place within its walls continue to inspire awe. If you are taking a tour, book the ground flour tour. You will need half a day to explore the Colosseum.

    Another architectural gem is the Pantheon, a feat of engineering and design with its perfectly preserved dome and oculus. Originally built as a temple to honor the gods, the Pantheon's dome remains the largest unreinforced concrete dome in the world, a testament to the ingenuity of Roman architects. It is a quick visit and larger than most expect!

    Architectural Marvels

    Another exciting spot is Largo di Torre Argentina, where Julius Caesar was assassinated. Also known as the Area Sacra, this area is a large sunken square containing the ruins of four ancient temples and the Curia of Pompey. Area Sacra is another quick visit.

    For more historical sites, visit the Victor Emmanuel II National Monument and the Forum and Palatine Hill. The Victor Emmanuel II National Monument is a large national monument built between 1885 and 1935 to honor Victor Emmanuel II, the first king of a unified Italy. The iconic Roman Forum, a sprawling archaeological site, offers a glimpse into ancient Rome's political, social, and religious life. Walking through these ancient ruins, one can almost hear the echoes of the past and imagine the grandeur of the empire that once ruled a vast expanse of the world.

    The Forum and Palatine Hill are where you can find Octavian's (also known as Ceaser Agustus) house, the imperial palace, and where Romulus, the founder of Rome, lived. You will need a full day or two to explore the vast area has a multitude of history.

    All the churches in Rome are spectacular. You can walk into any for a beautiful historical and moving site. A favorite church in Rome was Sant'Ignazio of Loyola Church.

    Vatican City: A Spiritual Center

    Nestled within the city of Rome, Vatican City is the smallest independent state in the world and the spiritual epicenter of the Roman Catholic Church. Home to the awe-inspiring St. Peter's Basilica and the Vatican Museums, this tiny enclave is a pilgrimage site for millions of faithful and art enthusiasts.

    St. Peter's Basilica, with its imposing dome and breathtaking interior, is a masterpiece of Renaissance architecture. The Vatican Museums house an extraordinary collection of art and artifacts amassed by the Catholic Church over centuries, including Michelangelo's stunning frescoes on the ceiling of the Sistine Chapel.

    Remember, you must walk up the dome about 500 stairs to get to the top of St. Peter's Basilica. Pay a bit extra to take the elevator or wear comfy shoes because you still need to walk 300 stairs even with taking the elevator. Don't forget to tour the Sistine Chapel. With all its facets, you can spend as little as one and as many as three days at the Vatican. They have self-guided and private tours. Don't forget to book entry & all tours.

    The Art 

    If you are a lover of "Arte," the Borghese art museum is a must-see. Here, explore the works of Raphael, such as Young Woman with Unicorn, and works by Caravaggio. This museum is also one of the few sites where you don't need to pre-book or get a guide. However, the museum only allows a certain number of people each hour.

    Culinary Delights

    Italian cuisine is renowned worldwide, and Rome is no exception. From classic pasta dishes like carbonara and cacio e pepe to mouth-watering pizzas and gelato, the city's culinary scene is a delight for the senses. Trattorias and osterias line the charming cobblestone streets, offering a chance to savor authentic flavors passed down through generations. Our top picks for all things “buonissimo” are Tempio di Bacco, Gallura. Tempio di Bacco is a delicious local spot where the owner is quite friendly. Gallura is outstanding dining with a modern twist. Don't forget to stop for gelato.

    Exploring the Neighborhoods

    Rome's neighborhoods each have a unique character and charm. With its narrow streets and colorful buildings, Trastevere exudes a bohemian atmosphere. The Spanish Steps and the Trevi Fountain are located in the charming area of Piazza di Spagna. The Trevi Fountain and the Spanish Steps are gorgeous. At the top of the Spanish Steps, The Church of the Santissima Trinità dei Monti can be found. At the same time, the historic Jewish Ghetto offers a glimpse into a lesser-known facet of Rome's history.

    Italian Bread Salad with Balsamic Vinaigrette (Panzanella)

    • 1 large pack grape tomatoes
    • 1 large English cucumber
    • 1 orange bell pepper
    • 1 medium red onion
    • 1 handful of fresh basil leaves
    • 1 pack baby arugula lettuce
    • 1 small loaf of Italian or French bread 
    • 1  1/4 cup Extra Virgin Olive Oil (EVOO)
    • 1/4 cup Balsamic vinegar
    • 1/4 cup white wine vinegar
    • 1 teaspoon of dried Italian seasoning (includes basil, oregano, thyme, rosemary & red pepper).  If you have fresh herbs, even better, about 1/2 teaspoon each.
    •  Garlic powder, sea salt and black pepper, ½ teaspoon each
    • 1 lemon

    Make the croutons:  Preheat your oven to 375 degrees.  Slice the bread into bite-sized pieces and place on a cookie sheet.  Drizzle with EVOO, then sprinkle with sea salt and garlic powder.  Toss and repeat.  Bake for 10 minutes.

    Make the vinaigrette:  Put all ingredients into a glass jar with a top.  Shake vigorously and set aside.

    Make the salad:  Chop the vegetables into bite-sized pieces and place all, except the tomatoes, in a large serving bowl.  Add the arugula and vinaigrette, then toss to combine.   Take a handful of basil leaves and cut into short thin strips.  Add the tomatoes and basil, then toss gently.

    Homemade croutons sound good?   
    If you have never made homemade croutons, check out the easiest video ever.  They are delicious!   Top your green salad, make a Panzanella / Italian Bread Salad, or just eat them.   YUM!

    Cut leftover bread into cubes and place on a cookie sheet.   Drizzle with a few tablespoons of EVOO (Extra-Virgin Olive Oil).  Sprinkle with sea salt, fresh ground black pepper, and garlic powder.   Bake at 375 F for 10 minutes.

    Make the dough.  Either by hand or in a large Cuisinart, add the 1 cup flour and 2 eggs.  In the Cuisinart, a dough ball will form when it’s done.  If doing it by hand, make a little volcano with the flour, then add the eggs in the middle.   With a fork, beat the eggs, then slowly begin to incorporate a little bit of the flour, going in circles around the volcano until all the flour is mixed.    When you push one finger into the dough, it should bounce back, but not be sticky.  If it is too sticky, add a dusting of flour and mix again. 

    Roll the pasta.  Cut a piece of the dough, about 1/4 of dough ball, covering the remainder with a damp kitchen cloth.  Either roll out the dough or use a pasta roller.  When using the pasta roller, add a little bit of flour, crank, then put the setting on the widest one, usually #0 on the machine.  Take the piece of dough and shape it into a small rectangle with your hands, then add a light dusting of flour to the outside.   Roll the dough through the pasta roller, catching it underneath.  Change the pasta roller to the next setting, add another light dusting of flour to the dough, then run through the roller.  Repeat to level 5, then check the pasta.  If it is starting to tear at all or is a bit see-through, you are done.  We only go to the 5th or 6th level (of 7 on my machine).

    Finish the pasta.  If you are cutting the pasta with the pasta roller attachment, do that immediately following the rolling of the dough.   Hang on a pasta drying rack while you continue with the rest of the dough.  To cut by hand, fold the dough and thinly slice with a serrated dinner knife.  With your hands, gently loosen the pasta so they don’t stick together.  They can rest on the countertop, or back on the drying rack.

    Cook the pasta.  When the water has come to a rolling boil, add the pasta a little bit at a time.  Gently stir. Fresh pasta only needs about 3 minutes to boil.  Strain but reserve a little of the pasta water.   Return to the stockpot and toss with the EVOO, Italian seasoning, and 1/4 cup of the pasta water, to make the perfect sauce.  Warm on low for 1-2 minutes.  Season with fresh ground black pepper, Pecorino Romano cheese, and fresh cut parsley.  Mangia!

    Episode 2.30 - Let's make chicken breasts!

    Let’s make this basic prep ahead dish, that will set you up for many easy lunches and dinners throughout the week.

    Preheat your oven to 400 F.   Find a baking sheet with sides, so the chicken juices don’t run all over your oven.  This is probably different than what you would use to make cookies.  Cover the cookie sheet with a piece of parchment paper or tin foil, this will make your cleanup easier.

    Place the chicken breasts on the parchment paper or tin foil.  Drizzle with the EVOO and sprinkle with salt, pepper, and garlic powder.  Bake for about 30 minutes.  If you have bone-in chicken breasts, you will need to cook for about 40-45 minutes.

    Let the chicken cool for about 15-20 minutes, then you can shred it with your hands or two forks.

    Many of the recipes in my FIRST COOKBOOK can be used with your shredded chicken:

    Episode 2.28 - Gia's Black Bean Hummus

    This will become your new favorite HUMMUS!

    Black Bean Hummus with Chipotle and Lime.....YUM!

    • 2 (15-ounce) cans black beans or 2 cups hydrated black beans
    • 6 garlic cloves
    • 1 chipotle pepper & 1 teaspoon of adobe sauce
    • 3 tablespoons fresh lime (3 limes)
    • 2-4 tablespoons Extra Virgin Olive Oil 
    • 1/4 teaspoon salt
    • 1 bunch fresh cilantro
    • 3 stalks green onions, roughly chopped
    • 1 Seedless English cucumber
    • 3 Whole carrots
    • 1 small bag tortilla chips

    In a food processor, finely chop garlic and green onion with 2 tablespoons of EVOO.  Rinse and drain the beans.  Add the beans and lime juice, then pulse until combined.  

    Add the rest of the ingredients and pulse until you like the consistency, slowly adding the rest of the EVOO.   Taste and modify if needed.  Maybe you want more lime or more heat or more salt.  Pulse again.  Taste again.  Transfer to a bowl, cover and refrigerate for about 30 minutes.

    Appetizer:  Wash the carrots and cucumber.  Slice the cucumbers and carrots into sticks, leaving the skins on.  Serve veggies and chips with the black bean hummus.

    Episode 2.26 - 33.12 Martini with Watermelon and Mint

    Leftover Watermelon from the 4th?   Listen as Amy, Food Scientist, and I create this amazing and refreshing drink!

    33.12 Martini with Watermelon and Mint

    • 5 oz. Watermelon puree
    • 3 oz. Vodka
    • 1 oz. Simple syrup (or agave syrup)
    • Fresh mint leaves
    • 1 1/2 oz. fresh squeezed lime juice (2 limes)
    • 2 shakes of salt
    • Lime sparking water
    • 1 1/4 cup granulated cane sugar
    • Fresh grated lime zest 

    Simple syrup – the typical recipe is 1 cup of water and 1 cup of granulated sugar, but I only use ¾ cup sugar to 1 cup of water.   Bring the water to a boil, then reduce the heat to low and add the sugar.   Stir constantly until the sugar is completely dissolved, then turn off the heat.  This should only take about 5 minutes.   

    Watermelon Puree – cut all green and white pieces from the red fruit.  In a blender, fill with the red pieces, almost to the top.  Cover and pulse a few times, until all chunks are gone.  Place a fine mesh strainer over a large bowl and pour the puree into the strainer.  With a spoon, press the puree through the strainer, into the large bowl.  Discard the mesh and seeds left in the strainer.

    Prepare the glass – Zest the limes into a medium-sized bowl.   Add 1/4 cup of the sugar and mix.  In a separate medium-sized bowl, add the juice of 1/2 lime.  Dip the martini glass into the lime juice, then into the zest/sugar mixture.  

    Prepare the drink - in a large pitcher, add the puree, vodka, simple syrup, salt, and remaining lime juice.  Mix to combine.  Add 1-2 leaves of the fresh mint and muddle in the glass.   Add the drink mixture and stir.  Add 2-3 oz. of the sparkling water and stir.  Garnish with a slice of watermelon and a fresh leaf of mint.  Enjoy!
