    I've never liked beer until I tried the brew that JP from Bierly Brewing creates! I'm excited to chat with him about brewing gluten-free beer on the Travel Gluten Free Podcast. JP has been brewing gluten-free beer using gluten-free ingredients since 2016. He researched how to malt gluten-free grains to use in his beers, but he decided to move toward recipe development and brewing.

     

    Why JP Decided to Brew Gluten-free Beers

     

    JP has celiac disease. He discovered this at the age of 26 when he met his partner Amelia, who had already been diagnosed with celiac disease. So, the main reason JP decided to do the gluten-free beer was that many of his wife's family members were gluten-free. JP had been experimenting for some time with gluten-free beer, so it turned out his beer was great, and everybody liked it, starting with his family.

     

    The Brewing Process and Ingredients for Gluten-free Beer 

     

    JP uses honey, candy sugar, and rice syrup solids as part of his ingredients. He combines these with hops and gluten-free yeast. JP found out they could make an excellent pale ale, which ticked all the boxes for beer.

     

    Besides, JP doesn't use any barley, wheat, or rye. He also doesn't use oats because there is a large swath of celiacs that still cannot have oats.

     

    Discover how JP comes up with new ingredients for gluten-free beer. JP has sixteen years of experience brewing beer but still reads a lot to develop new beers. When reading, he is particularly interested in the history of the beer, why it was brewed, its ingredients, and the challenges faced.

     

    Origin and Different Types of Beer

     

    JP shares with us the different types of beers. Basically, most beers are defined by national origin. The three top ones are Germany and Austria, Central European, England and Belgian. However, with gluten-free beer, there is more freedom.

    When traveling outside the United States, you’re adding more challenges to eating safely depending on where you have decided to vacation; however; you can overcome these issues and throw down the gluten-free gauntlet with the following overseas travel advice!

     

    What Country Should I Visit for My First Trip Abroad?

     

    When you're gluten-free, there are definitely experiences that will excite and inspire you. However, you may know from experience that finding food may not be so "inspirational," especially if you have more than one food you're trying to avoid. 

     

    For your first overseas experience, I would definitely recommend trying out a country where many locals speak English, so you have less chance of being glutened. I’d also recommend flying to the country you want to visit and traveling via cruise, which lowers your chances of getting sick even more. You can easily skip eating lunch during the day when you are out galavanting around because of the sheer amount of food you will eat at other times during your cruise. Two of my favorites I would definitely recommend: London and Iceland.

    Welcome to the Travel Gluten Free Podcast. Today, I have Katie Barbaro from the Casual Ecstacy Podcast. Katie is an occupational therapist, comedian, and up-and-coming author. She believes that life should be lived like an improv show, and hopes to help others awaken their potential. 

     

    Solo Travelling the World 

     

    Katie is an extensive traveler. In 2018, she spent the year visiting Thailand, Iceland, England, France, the Netherlands, and other parts of Europe and Asia. She decided to leave her normal life behind because of her life coach, who identified many of her personal values. Katie asked herself, “What would feel the most me?”, and decided that travelling the world with no plan and only her intuition to rely on was the answer. 

     

    Katie did much of her traveling thanks to the Workaway platform, which allows volunteers to connect and live with host families in exchange for a few hours of work. Throughout her trip, Katie stayed with friends new and old, meeting many open-hearted people and volunteering at incredible places. 

     

    Surrendering to the Present Moment

     

    When travelling Asia, Katie found a different kind of relaxation in her body upon landing. There was a peacefulness in Asia that wasn’t present in Europe or the U.S.. In the West, we’re taught that being busy equals happiness. For Katie, travelling brings her into the present moment. She’s gone into many new and unique situations with the intention of learning and appreciating, as a lifelong student. 

     

    Katie talks about the spontaneity of solo travelling with an anecdote of her motorbike rental in Indonesia. She was never someone who would ride anything with two wheels before, but by pushing herself out of her comfort zone, she got to evolve her own idea of who she is. Through traveling, Katie has cultivated her intuition and learned how to be at home with herself, no matter where she is. 

     

    Publishing Her First Book 

     

    Katie recently published her book, “Fed Up An Illustrative Guide to Food Freedom.” She hand-wrote and illustrated the book to document her recovery from disordered eating. The cartoon-based memoir focuses on her raw and honest experience with over-exercising, calorie-counting, and more.

     

    Katie feels that the harmful pressures of diet culture in the U.S. are inescapable, and strongly believes in speaking out in order to demystify the taboo around eating disorders. If you have any kind of weird relationship with food, Katie says, this book is for you.

    Welcome to the Travel Gluten Free Podcast. Today, I’m sharing some easy, portable gluten-free food ideas to bring with you on your next adventure. By the time this airs, I will have just gotten back from a cruise, and I’m excited to share my experience with you soon. But until then, have a few great, gluten-free tips for travelling. 

     

    What Kind of Gluten-Free Snacks to Travel With

     

    Make sure to bring snacks that don’t have any kind of coating or chocolate that will melt and make a mess out of everything. Always check the labels for glaze, chocolate, or anything of the sort. I love granola bars from Lara, and there are plenty of great brands that are free from top allergens such as Yes! or Ka-Pop!. Other snacks that aren’t brand specific that I like are seaweed snacks, apple sauce packets (yes, just like the ones for toddlers) or fruit snacks and gummies that are all made up of pure, organic ingredients. Remember to always read the label before buying something new, and don’t trust something that’s advertised as GF unless it’s certified gluten-free. 

     

    What I Look for in a Hotel Room as a GF Traveller 

     

    I always make sure to get a hotel room with either a small kitchen or kitchenette, and at the very least a microwave or fridge. It makes it so much easier to snack at night, rather than going out, and is much more convenient when packing your own safe food and drinks. 

     

    Most places will generally have a fridge and microwave, but always make sure to check. One tip I’ve learned is that many hotels in Las Vegas don’t provide a fridge you can use, instead filling it with snacks they want you to pay for. But, you can call the front desk and have them bring you a refrigerator for all of your gluten-free goodies. 

     

    Where to Shop for Gluten Free Foods while Travelling 

     

    An unexpected way to find food while traveling is in HomeGoods. They have a surprisingly decent selection of GF snacks that I like to try before travelling, so that I know what I like beforehand. WinCo also has a great variety of allergen-free foods as reasonable prices. 

     

    Another tip is to go to Whole Foods and see what they offer there, and then check the product’s website to see if you can find the same thing for cheaper. Another gluten-free staple of mine is to bring cookies for dessert, since most restaurants don’t offer gluten-free dessert options.

I’ve always loved baking, and after going gluten-free, I had to learn not only how to bake gluten-free, but how to bake gluten-free at a high altitude. Cooking and baking during the holidays can be hard enough. Free up your plate from stress and guesswork and fill it with some of these delicious holiday recipes. 

     

    I haven’t made all of these recipes yet, but every one is from one of many gluten-free sites that I love and trust. From Apple Cider Margaritas, to Cinnamon Orange Cranberry sauce, to Citrus and Herb Buttered Turkey - there’s something for everyone this episode.     Welcome to the Travel Gluten Free Podcast. Today, I’m with Jenn Bigler from Living Freely Gluten Free. She has a platform dedicated to gluten-free and dairy-free life, and is the author of two GF cookbooks. With multiple food allergies in the house, Jenn is passionate about making delicious meals for the whole family. 

     

    Food Allergies in the Whole Family 

     

    Jenn discovered her gluten allergy in her 20s, and later noticed symptoms of food allergy in her kids. Food allergy symptoms can be misdiagnosed as ADHD or other behavioral disorders, so Jenn encourages parents to be insistent and advocate on their kids’ behalf. 

     

    Now, Jenn is 10 years gluten-free. She started her blog as a recipe collection from a creative young mom learning how to feed herself and her son. She turned that blog into a business, and now inspires people with recipes to help them lead happy, healthy lives. 

     

    Family-Friendly Gluten-Free Cooking

     

    Jenn is the author of two cookbooks: “Living Freely Gluten Free” and “101 Incredible Gluten Free Recipes.” Both are gluten free and dairy free. She recommends the first to anyone who’s new to cooking and wants family-friendly, homestyle meals. The second is more adventurous, with recipes for German chocolate cake, donuts, and more. Both books focus on cooking one meal for the whole family, and doing it with confidence. 

     

    Traveling with Kids Gluten-Free

     

    Jenn always recommends packing safe snacks and meals while going on trips. Each of her kids have their own snack bag, to be refilled and taken anywhere. Lately, she’s been bringing digestive enzymes, activated charcoal, and lactic tablets to avoid an upset stomach ruining another vacation.

     

    Her family’s next trip is to Disneyland. One of Jenn’s favorite restaurants is the Wine Country Trattoria in California Adventure. With so many gluten-free options, the whole family is happy to eat there. They love that Disney is so accommodating to allergies.

    The Advantages of Camping in State Parks Gluten Free

     

    We all love our national parks. But it's so easy to overlook the sunning state parks that many of us have right in our backyard! In this episode, I share some of the benefits I've learned in choosing a state park over a national park. You'll find that you can do a lot of the same activities inside a state park. Sometimes, there's even more options for fun than at a national park! I also have a list of my favorite state parks (on both coasts!) to get you excited for your next gluten free adventure. 

     

    Avoid the Crowd of a National Park

     

    One of the biggest advantages of staying at a state park over a national park is the crowds. State parks are often less crowded than national parks, where the wait time just to get inside can be up to two hours. I sometimes only see two or three other people camping when I stay in state parks. With fewer people camping, hiking, or biking, you're more free to get outside and relax in the outdoors. 

     

    Less Restrictions on Your Visit

     

    State parks don't typically have the same protective regulations that national parks do. This means there is less restriction on what activities you can do in a state park. Boating and other watersports, for example, are often prohibited in national parks--but there are plenty of options inside a state park! Best of all, state parks are dog-friendly! No need to leave your furry friend behind at the campsite like in national parks; in state parks, they're allowed on the hiking trail with you!

     

    Take Advantage of Your Backyard’s Beauty

     

    Most of all, state parks are local. They’re easy to drive to, and there’s usually two dozen or more in any given state. It’s easy to find a nearby state park: just Google ‘state parks’ and your state’s name. You don't have to go out of your way to find something amazing; oftentimes, state parks can only be a 15 minute drive away. So, if you’re considering a national park, check to see if there’s a state park nearby! You can always take advantage of the lower prices, fewer crowds, and the overlooked beauty of your local state park.

    Tips on Camping Gluten-Free

     

    Since many people have been camping for their COVID vacation, I wanted to share with you great gluten-free food prep tips for creating meals, camping snacks, and food storage when you're camping. I've learned these experiences the hard way by making mistakes while on the road and eating out of the back of my car or at the campfire. Take steps to eliminate the hassle and expending energy on clean up when you're camping with these camping COVID-19 tips!

     

    Gluten-Free Snacks for Hiking

     

    If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags.

     

    Marinating Gluten-Free Foods

     

    An easy and efficient way to prepare your marinated food is to take your favorite gluten-free salad dressing and place your meal to be marinated into a double Ziploc. If you are using tofu, make sure to use firm tofu and plan to eat the first or second night, as tofu can fall apart quickly. Also, make sure to cut in thick slabs to be more sturdy.

     

    For a quick and easy marinade, take your food to be marinated, add favorite salad dressing, place in double Ziploc, close bag, take all air out, then seal. Keep cold until ready to use.

     

    Gluten-Free COVID Camping Soups

     

    To create easy soups, prep and blend your spices ahead of time and put them in an air-tight container. Label your container. Use dried spices instead of fresh if you are not going to use them in the first two days. Then, bring along canned items that you are going to use to make your soup. Make only the amount you need for one night - storing leftovers is time and energy-consuming.

    Traveling as a Digital Nomad

     

    Stephen traveled to every continent, except Antarctica, by overland travel. Moving to his next destination by train, bus, or walking, he decided on where to go next by where he could get to on the map. On the locations he chose to stay for a period of time, Stephen found a group of travelers to congregate with and decided to give that city an extended stay.

     

    Traveling as a Lifestyle in Comparison to Traveling for Fun

     

    Many traditional forms of employment don’t support working remotely before COVID, so it was definitely harder to live a nomadic lifestyle. Living as a nomad can be challenging since you aren’t in a place for an extended period of time, so it’s hard to make lifelong friends. However, Stephen was able to connect and make friends with locals in the different destinations that he visited.

    Growing Up Next to Mount Kenya

     

    As a child, James grew up in a village next to Mount Kenya, a UNESCO World Heritage Site. Elephants would routinely come into his village and eat everything they could get their trunks around! Finally, rangers came and moved the elephants back into the forest to be in the natural habitat. James enjoyed watching the rangers as a child and knew he wanted to work with wildlife as a ranger ever since.

     

    Saving the Last of the Endangered White Rhinos in Africa

     

    James became a ranger as an adult, and by the time he was able to work with the white rhinos, there were seven of them left on the planet. “My whole perspective changed when I landed being the caretaker of the last of the northern white rhinos. I refused to be the normal caregiver, giving them food and going to sleep and feeling sorry for them. Instead, I wanted to do something for them.” This gave James the motivation to speak up for them and utilize the opportunities available to raise as much awareness as possible for the rhinos and other species he was working with at the time.

    Adventure Travel with a Touch of Luxury

     

    Robin’s travel niche is providing her clients with adventure travel that has a luxury backdrop. One of her favorite escapades is on a horseback safari in glamping style. “You still get this great sense of adventure and you’re always going to a different place,” says Robin. Riding horses daily with the addition of hot meals and showers is a great way to spend your vacation time when on safari.

     

    Glamping VS. Camping

     

    With glamping, Robin explains, everything is done for you - the tent set-up, cooked meals, and all the amenities you need are set up and ready for you to come back to your campsite for a relaxing evening. “It’s almost like having a traveling hotel come with you on vacation.” You have a canvas tent and a sleeping bag with camping, similar to what you would expect with regular camping. 

     

    Dining While Camping or Glamping

     

    Robin can set up your gluten-free meals ahead of time, as well as vegetarian meals too! Dietary requests can be made and created on any of Robin’s vacation excursions, except for a strict vegan diet.

    Booking Your Gluten-Free Cruise

     

    Whether you’re booking online through the cruise line or your favorite website or travel agent, you’ll want to make sure to call the cruise line with your itinerary cruise number and tell them you are gluten-free. In addition, you’ll want to let them know of any other food allergies or sensitivities you have so they can list all of them on your account. This way, the Matre’ D can pull up your list and make sure you receive safe food during your cruise vacation.

     

    Choosing Your Dining Room on Your Gluten-Free Cruise

     

    Choose one dining room you would like to eat at for the rest of the week and eat there consistently as the staff, and your maitre D will be more familiar with your diet when you frequent their restaurant. To ensure you receive safe food, try to find the Matre’ D for your restaurant, and before the cruise starts, make sure to thoroughly explain your food sensitivity, allergy or Celiac and the importance of receiving safe food because of medical reasons and that your diet isn’t a preference. Be clear with him or her that you will be dining in that room all week for dinner, and you’re excited to see what dishes you can eat during your time on your cruise vacation.

     

    Dining on Your Gluten-Free Cruise

     

    Let your waiter know you have a pre-order because of a food allergy, as many people don't understand Celiac or auto-immune disease. Feel free to tell the Matre' D you put in your pre-order the night before and that you have a food allergy, and your food should come out with the rest of the food at your table.

     

    Eating Gluten-Free on the Cruise Ship Buffet

     

    Quite honestly, this is the only buffet that I feel safe eating because the chefs on cruise lines really know their food! Look around to see what choices you can see are gluten-free, such as fruit, salad without dressing, and steamed veggies. Go to the counter and ask for the head chef. He or she will give you a tour of the buffet and let you know what foods are safe for you to eat and which ones you’ll want to avoid.

However, if you don’t mind the tourist crowds and would like to spend a week or two checking out a few of the main attractions in Italy, then Rome is the perfect vacation spot for your next overseas adventure! “If you really like ruins, then Rome would be a fantastic place to vacation!” says Shireen. She suggests spending two days in Rome and spending an additional day visiting the Vatican. 

     

    Today I talk with my friend Shireen, another world traveler and culture hound! Shireen shares her experience in Rome, what to see and do when in Rome, and where you can find the tastiest gelato on your travels around Italy! 

     

    What to Know When Visiting Rome

     

    If you are looking to experience Italy’s culture, you may want to pass on going to Rome. If you don’t mind the tourist crowds and would like to spend a week or two checking out a few of the main attractions in Italy, then Rome is the perfect vacation spot for your next overseas adventure! “If you really like ruins, then Rome would be a fantastic place to vacation!” says Shireen. She suggests spending two days in Rome and spending an additional day to visit the Vatican. 

     

    Favorite Way to Travel in Rome

     

    Shireen and I are both fans of hop-on and hop-off bus tours around the globe. If you’re wanting to get a great deal on your next hop-on and hop-off adventure, check out my travel deals page on my website. We both agree that getting a deal on a bus tour is the perfect way to quickly see many of the sites. In addition, this is an excellent method to transport yourself around a city, without having to worry about parking and driving in a town you aren’t familiar with.

     

    With the bus tour, you can see many of the major attractions quickly. If you have a limited amount of time in a city, this is the perfect way to capture various highlights in just a day or two of your visit. In addition, you can get great pictures of the statues, buildings, and cultural places in the city you are vacationing when you sit in the open-air bus seating.

     

    You’ll definitely want to check out the local churches as many of them sell opera tickets for different performances at the local places of worship. Shireen says, “My friend that was with me doesn’t even like opera and she loved it!” You’ll hear the arias - the opera's highlights - which give you a condensed version of an entire opera without missing the best pieces.

     

    When in Rome, Eat Gelato!

     

    Shireen has the BEST philosophy when it comes to eating gelato: “Once you finish eating gelato, you just get more gelato! It’s a philosophy that’s very easy to live by, and very easy to follow.” I am on board with that philosophy for sure! You can find gelato every 200 yards in Rome, so it’s a great place to test many different flavors and brands of gelato!

     

    When to Visit Rome

     

    Although the summertime is a good time of the year to visit if you’re looking for fewer crowds, it’s also scorching in Rome during the summertime. Of course, you can visit in the cooler months for better weather, but you will find that it’s more crowded in Rome.

     

    Visiting the Colosseum in Rome

     

    “There’s so much history around the Colosseum in Rome.” As a lover of history, the Colosseum was the perfect spot for her to visit. You can learn many of the details about the mystery of the Colosseum that you didn’t learn in school. “You also don’t realize how big it is until you are standing right next to it. The Colosseum is massive!.” She says, “There’s something very magical about knowing how many thousands of years old it is, and yet it’s still standing. You’re really standing in history.” 

     

    The Pantheon

     

    Considered a religious structure, the Pantheon is a sundial that is restricted to the amount of visitors that can walk the steps in an effort to preserve this ancient Roman landmark. When you visit, you’ll need to be covered to your shoulders and down to your knees, similar to when you could visit Notre Dame in Paris.

     

    The Infamous Trevi Fountain in Rome

     

    This ornate fountain contains many statues of Roman gods, in various poses, with water spouting from the carved stone. Every year, people climb into the fountain, although that is not allowed in Rome. However, Italian police are standing around the fountain, so be warned that you can get caught if you decide to take a dip in the Trevi Fountain!

     

    Visiting the Vatican

    Jerry Bigam joins me today to chat about the history and development of his delicious and tasty line of gluten-free foods and gluten-free snacks. Jerry and Kinnikinnick have spearheaded many firsts in the world of gluten-free food, including the first food company to sell food from a company website and is currently the only family-owned gluten-free food company. Listen in to discover how Jerry grew the business to what it is today, how Kinnikinnick is celebrating their 30th anniversary, and the new gluten-free items they are producing for their anniversary celebration!

     

    Meet Jerry Bigam

     

    Jerry is a native Canadian whose wife was diagnosed with Celiac disease in the early 90s. With a lack of good gluten-free food, Jerry and his wife found Kinnikinnick and decided to purchase half the company. He took Kinnikinnick from a 3,000 square foot facility selling in Canada to a multinational gluten-free brand. You can find out more about the history of Kinnikinnick on their heritage page.

     

    Why Kinnikinnick?

     

    Kinnikinnick is the name for Bearberry, the favorite fruit of Canadian bears. Naturally high in Vitamin C, these bright red alpine berries are a vital food source that lasts the local bears through the winter.  Native Americans prize them as well, using them in pemmican which is a nutritious mix of meat protein and fat that lasts for years, similar to beef jerky.. In Algonquin, Kinnikinnick also means ‘mixture’, referring to its use with tobacco and believed to carry the smoker’s prayers to the Great Spirit. Tea from the leaves is also used to treat urinary tract diseases and can help with obesity.

     

    History of Kinnikinnick

     

    In 1991, Ted Wolff and Gudrun Von Selzam moved to Canada from Germany. After stints working in health food stores, they came up with the idea of producing allergy-conscious foods for Edmonton's Farmer's Market. With Ted in charge of recipe development and Gudrun running the marketing department, Kinnikinnick was born!  

     

    In 1992, Ted and Gudrun had enough of a following to open their first store, a tiny 250 sq ft space on Whyte Avenue. The following year, they expanded and moved to a 1,500 sq ft store selling made-from-scratch gluten-free creations as well as cookies and pasta. The little business with a big heart begins to boom, and so does their family with the arrival of daughter Robin.

     

    Ted and Gudrun doubled the size of their business by taking over the space next door and opening their doors as the first gluten-free restaurant café in Canada! Within a year, their constantly evolving line of buns and baked goodies are selling in health food stores in Canada. 

     

    Lynne Bigam, their #1 customer, diagnosed with Celiac disease, is impressed with Ted and Gudrun's goodies. She and her husband Jerry decided to buy into the company and expand their focus on building new markets.

    Meet Maya Tomosello

     

    Maya met her husband online and went on vacation to Jamaica for their first date. “I knew he was the one when he opened his suitcase and it was filled with gluten free food, snacks, and bath products.” A Saint Louis native living in Maryland, Maya was married in Fall 2021 during the pandemic. Having worked in the food industry since she was 14 years old, she has a knack for getting things done in the service industry. Diagnosed with Celiac disease at the age of 18, she has lived abroad four times since her diagnosis and navigated the gluten-free lifestyle in three different countries outside the US.
