    Jonathan Bengel from Naked Tax Talk joins me today for Part I of his story to tell of his epic adventure on his 500-mile journey while walking the Camino de Santiago trail. Jonathan gives details of his hardships, the other pilgrims he and his husband met along the way, and his mistakes while hiking the trail. He also shares his spiritual and philosophical perspective and lessons learned from this adventure through Europe.

    What is the Camino de Santiago Trail?

     

    The Camino de Santiago is also known as the Way of Saint James. This is an epic Catholic pilgrimage to the Spanish city of Santiago de Compostela starting in France. The Camino is actually a network of trails with its most popular route, the Camino Francés, sprawling from the city of Saint-Jean-Pied-de-Port at the foot of the French Pyrenees to Santiago de Compostela in northwestern Spain. 

     

    This well-worn trail has been walked since the early ninth century and has hosted notable people such as royalty, Roman armies, and Catholic pilgrims. Recently, it has attracted a more diverse crowd. In 2017 alone, over 300,000 hikers, known as “peregrinos,” or pilgrims, completed the trek to Santiago.

     

    Beth Jusino is the author of the book Walking to the End of the World: A Thousand Miles on the Camino de Santiago. “Walking the Camino is a chance to intentionally slow down and move at a human pace, to join a history that’s so much bigger than any of us individually.”

     

    Why Jonathon Chose to Walk Over 500 Miles on the Camino de Santiago Trail

     

    The Camino de Santiago is a unique window into the Iberian Peninsula’s historical, natural and cultural beauty. If you look at pictures online, it’s easy to see why he chose this adventure. Actually, he tells his story of why he went and about his husband choosing this journey for them to complete. 

     

    With only walking one mile for training, Jonathan and his husband took off for three months and walked the entire trail from start to finish. Listen to his comedic adventure story, how he overcame many of the physical challenges, and how he experienced life, death, and birth on the Camino de Santiago.

    In this episode, I’ll share with you what you want to do when you visit Stonehenge, visit this World Heritage Site during COVID, and events in Stonehenge and other places of interest, which are featured in the English Heritage organization. Before you visit Stonehenge, make sure to discover more about traveling internationally by picking up The Guide to Traveling Gluten Free before you travel!

     

    History of Stonehenge 

    The earliest structures known in the immediate area are four or five pits, three of which appear to have held large pine ‘totem-pole like’ posts erected in the Mesolithic period, between 8500 and 7000 BC; however; no one understands how these posts relate to the later monument of Stonehenge.

    When much of southern England was largely covered by woodland, the chalk downland in the area of Stonehenge may have been an unusually open landscape which is the most plausible  reason why this ancient place became the site of an early Neolithic monument complex.

    This complex included the causewayed enclosure at Robin Hood’s Ball, two cursus monuments or rectangular earthworks (the Greater, or Stonehenge, and Lesser Cursus), and several long barrows, all dating from the centuries around 3500 BC. The presence of these monuments probably influenced the later location of Stonehenge.

    Book Ahead to Visit Stonehenge During COVID Travel

     

    Advance booking is essential to visit Stonehenge, along with wearing a mask at all times. Stonehenge is limiting visitor numbers to help keep everyone safe, and you won’t be able to visit without your booking confirmation. If you’re a Member or Local Residents Pass holder, your ticket will be free, but you still need to book in advance.

    A remarkable opportunity to spend time inside the tranquil circle of Stonehenge, the VIP experience at Stonehenge takes you up close to this world-famous monument. Walk among the inner circle of the Stonehenge ring and learn the secrets of the stones from your knowledgeable host and experience the power and mystery of these ancient sarsens and bluestones for yourself. 

     

    Once you arrive at the stones, you can wander amongst these ancient stones, discovering all the fascinating details on these mighty sarsens and bluestones that are only visible up close. Your knowledgeable host can answer questions. While you're in the stone circle, make sure to take photos; you just can't stand on or touch the stones. Visit for an hour outside of their general admission opening hours with a maximum of 30 people per session. 

    Admission Costs for Stonehenge

    Stone Circle Experience is priced at £47 for adults (18+) and £28.20 for children aged 5-17. Children under 5 years of age are free. English Heritage Member discounts are available. Guidebooks are priced at £6 and made available in eight languages, detailing the history of Stonehenge and its remarkable landscape. 

    Stonehenge and other English Heritage Sites Events

     

    When visiting England, you can check out more history by visiting other sites listed on the English Heritage register, which are nearby Stonehenge, such as Tintagel Castle, Pendennis Castle, and Old Sarum. In addition, you can create a week-long trip by adding Dover Castle, Osborne, Hadrian’s Wall, and the Battle Abbey, which are also situated along with southern England.

    In this episode, I’ll share with you how to travel gluten-free when you’re flying. Find out how to pack your food, learn how to successfully get through TSA without getting your bag searched and how to communicate to the airlines that you need a specialty gluten-free diet.     Finding Food in an Airport

     

    Finding safe options to eat in an airport can be super tricky! Many airport restaurants are slammed busy serving, so this puts a high level of cross-contamination in place and creates an unsafe food prep environment for anyone who is Celiac.

     

    Nowadays, some airports are posting their restaurants and offering gluten-free offerings, such as Atlanta Airport Restaurant Menu and Salt Lake City Airport Food Guide. You can look at the restaurants they have and choose accordingly. I will look for Freshens as they have certified gluten-free smoothie offerings, PF Changs for safe food, and Jersey Mike’s subs, all of which offer safe Celiac food. Although Jimmy John’s doesn’t have a gluten-free protocol, I’ve never been sick of one as they are food aware and will change their gloves and give you separate condiment packages.

     

    Types of Snacks to Pack While You’re Flying

     

    When you’re flying gluten-free, certain types of food and snacks are better to take than others when you’re traveling. For example, when traveling, you’ll want to avoid large packaging, food that crumbles easily (such as rice crackers), liquids more than 2oz, chocolate, or any types of coatings which will readily melt. You’ll also want to avoid snack items that can easily leak such as peanut butter and any food that has liquid in the pouch.

     

    You’ll want to look for and bring a snack on the airplane as many airlines do not have safe gluten-free snacks. My favorite snacks to bring on a plane are nuts, meat sticks from EPIC, protein bars, pumpkin seeds, dried fruit, and crackers. 

     

    How to Pack Your Gluten Free Snacks When Flying

     

    When packing your snacks, make sure to put them at the top of your suitcase so that they don’t get squished in transit. If you’re packing your snacks in a check-on bag, put smaller bags into a larger Ziploc bag so that they are easy to see if the agent opens up your checked bag after scanning. 

     

    Using packing cubes is a great way to organize your vacation necessities, including your food and snacks. I recommend getting smaller sized packing cubes so that you can easily pack your items in a weekend bag or suitcase. 

     

    You’ll also want to make sure that you have travel-sized liquids and cosmetics in your bag before you check it or carry-on the airplane.     Getting Through Airport Security with Gluten Free Food

     

    This part can be tricky if you don’t know what to do! When I pack my snacks, I double Ziploc my snacks in bags. After double Ziploc, I’ll take my snacks out of my bag and put them in a separate bin so that agents who are looking at the scanner can tell it’s food and not a dangerous weapon LOL. Additionally, putting all your food in Ziploc bags protects your food packaging from being touched by the TSA agents, keeping your food clean and safe.

     

    Ordering Gluten-Free Food for Your Flight

     

    Make sure to specify that you need a gluten-free meal as soon as you book your ticket. Always call the airline you booked with directly to ensure they have your specialty diet needs taken care of so you aren’t stuck without food on a long flight.

In addition to reviews, you can find out what types of foods different restaurants serve and which gluten-free protocol a restaurant has in place.

    When COVID hit, the pandemic turned the restaurant industry on its head. With hours, seating, and many other factors changing, Jason added COVID information so that our community could add information about how and when you could dine and if the establishment was still open.

    In this episode, I'm chatting with Tim Pickett, who is the founder of the Utah Therapeutic Center. Tim sees patients with chronic illnesses such as chronic pain, auto-immune diseases and terminally ill patients, all of whom are seeking relief from their symptoms without using pharmaceutical drugs.

     

    What is Medical Cannabis?

     

    Medical cannabis is using the marijuana plant and extracting the healthy, inflammation-fighting components of the plant. You can receive medical cannabis in tinctures, edibles, whole flowers, vape cartridges, balms, and sprays. “The art of Medical Marijuana and plant-based medicine is to ascertain what ratio and strain might be right for the patient, how best to administer the plant as medicine, and how to utilize patient feedback to get the best outcome.”

     

    Medical Cannabis is different from using marijuana for recreational use. With medical cannabis, patients are using this plant for relief of symptoms, not to get high. If you’re looking to find relief from your chronic condition and find that you want to balance the THC in your cannabis, you can try using CBD for a more balanced effect.

     

    How Can I Get a Medical Marijuana Card?

     

    In Utah, you have to qualify under one of the qualifying conditions to get a medical marijuana card. These conditions are Aids, Alzheimer’s, chronic pain, terminal illness, ALS, Autism, Chron’s, Ulcerative Colitis, seizures, MS, PTSD, muscle spasms, and cancer. To apply for a card, you must have a QMP - a qualified medical provider - who has taken and passed the certification to recommend medical cannabis. I’ve had only positive experiences at the Utah Therapeutic Clinic with their caring and professional staff.

     

    Once you have been approved for a medical marijuana card, you can meet with a pharmacist at the dispensary located near you to find out which types of cannabis are a good fit for your specific symptoms. 

     

    Where Can I Find Medical Marijuana in Utah?

     

    There are almost ten dispensaries located and dispersed throughout Utah. My go to pharmacy is Deseret Wellness in Park City. You can find a list of Utah licensed dispensaries on the Utah Therapeutic Website.

     

    How Should I Dose My Medical Marijuana?

     

    Like other medicinals used, you always want to start with small doses and work your way up. Also, you’ll want to try one or two strains at first, then change up to or add medical cannabis as needed. I’ve had great results using Limonene during the day for depression and their 1:10 tincture for joint pain. In addition, I’ve been getting much better quality sleep using the Dragonfly Bites, which are edibles.

    In this episode, I'm chatting with Crystal Kish of The Spudd Hutt about her vegetarian and mostly gluten-free food truck. Meeting Crystal at Old Town Hot Springs when I visited Steamboat last year, we talked about the importance of offering gluten-free and a dedicated fryer. Little did I know how much she took this to heart and is now creating gluten-free fried food!

     

    Why Gluten Free?

     

    When she was diagnosed with an auto-immune disease, Crystal researched and found out that gluten can be an antagonistic and inflammatory food. Once she found out that there was a need for gluten-free and realized she could convert many of her recipes, Crystal turned her vegan food truck into a mostly gluten-free vegan food truck, hence The Spud Hutt! Crystal says she is constantly learning and realizing many others are looking for gluten-free food, not just those with Celiac. She believes that eating gluten-free would make a change in the health of most people. 

     

    How Crystal Decided to Make The Spud Hutt a Food Truck

     

    Starting purchasing her food at a bulk-foods place specializing in healthy foods, Crystal supported this grocer and purchased many of her food items from here to support her local business. They decided to start a food truck amidst the COVID epidemic as it was the easiest way to get The Spudd Hutt began to. Currently, Crystal is growing and plans to add another food truck this summer and a restaurant in the near future.

    In this episode, I’ll share with you how to go spring hopping and how to enjoy countless hours soaking in hot springs, which springs I liked the best, and amazing gluten-free food you can find when you’re visiting Steamboat Springs.

     

    Colorado Road Trip 

     

    Planning a vacation to Colorado is easier than you think! Because Colorado is such a health-conscience state, there are many options that a member of our gluten-free community can enjoy safely. With plenty of health-food stores and dining options you’re sure not to go hungry when traveling to Colorado by car. In addition to traveling by car, the Denver airport is a major hub, so you can also fly-in and out of Denver International easily. Since there are only a few gluten-free places inside the airport, plan to get a bite to eat after landing. 

     

    Hot Spring in Steamboat Springs, Colorado

     

    Old Town Hot Springs

     

    From their website, "Old Town Hot Springs has eight different pools providing different functions to the facility. All of the water originates from the all natural Heart Spring and eventually flows into the additional pools. The pools vary in temperature from 103 degrees to our 80 degree lap pool."

     

    Definitely a local's favorite, Old Town Hot Springs is part of the Steamboat Rec Facility. You can purchase a day pass and soak all day long in the springs. Enjoy the waterslide, rock climbing wall, or regular chlorinated lap pool for some water fitness. 

     

    I enjoyed the size of this facility and the family-friendly atmosphere of Old Town Hot Springs. Each pool is maintained at a different temperature to find the amount of heat you are most comfortable in. Besides the large main pool with a bridge, there are several other smaller pools you can soak in that are more adult-oriented. 

    In addition to the main hot springs, Steamboat also boasts smaller springs that are not heated over 75 degrees. You can find a list and location here on this Hot Springs guide

     

    Strawberry Park Hot Springs

     

    Definitely my favorite of all the hot springs I've been to in Steamboat; Strawberry Park Hot Springs offers multiple large pools with varying levels of heat. In addition to the pools, they also have chairs and provide a large restroom with a changing area. You can stay overnight in one of their cabins, the caboose train, or bring your own tent for tent camping along with enjoying the hot springs. If you're on the risque side, you're in luck! Strawberry offers clothing-optional bathing after dark to enjoy bathing in your birthday suit.

     

    Eating Gluten Free in Steamboat Springs

     

    Do you like Greek food? If so, head over to Skull Creek Greek to eat falafels in a dedicated fryer and gluten-free pita bread! Also, check out Seedz Breakfast and Lunch Cafe, where most of their menu is gluten-free, and all of their menus are healthy! Grab gluten-free bread to go after eating your gluten-free pancakes for breakfast or lunch. 

     

    If you’re looking for a dedicated gluten-free facility, then head on over to Inclusions Bakery and Dessert Bar for a yummy and gluten-free cinnamon roll or if you’re looking for lunch, try the pot pie or quiche. Since the owner is Celiac, they understand the importance of being gluten-free and ensuring amazingly good food for all of us in the community.

     

    For more lunch choices, grab a bite to eat at Salt and Lime, where the staff can tell you what is safe to eat as their menu isn’t labeled. Looking to take your lunch out for a picnic? Call ahead, and they can have it ready for you! Also, if you like sandwiches, check out the gluten-free offerings at Winona’s Restaurant, where you can dive into a gluten-free hoagie!

    In this episode, I’ll give you the 411 on how to visit Devil’s Tower National Monument and why you want to visit the Crazy Horse Memorial. Devil’s Tower is the geologic formation that was made famous by the Steven Speilberg movie Close Encounters of the Third Kind and not much has changed in the area since the movie was filmed in 1977.

     

    South Dakota and Wyoming Travel Tips 

     

    When you’re planning a vacation to South Dakota or Wyoming, you’ll want to be prepared to drive long distances across these vast, open, and rural states. While there are many outdoor and tourist activities to be had, the most essential aspect you’ll need to remember is to consistently map out where you will go in a location that you have decent wi-fi. 

     

    Wyoming is a big state, with very few accommodations in between cities as there are many farms and thousands of acres of open space. This is definitely a place where you’ll need to do some planning ahead for your activities - mainly because the drive-in between them can be lengthy. In addition, Wyoming doesn’t have very many places that are gluten-free friendly, which adds to the amount of planning you’ll need to do in advance of your trip.

     

    Devil’s Tower National Monument

     

    If you are a fan of the Steven Spielberg movie Close Encounters of the Third Kind, you’ll definitely want to take a trip out and experience Devil’s Tower National Monument. What I love about this monument, besides the fact that I became completely enamored with this geologic feature when I first saw the movie at the age of five in 1977, is that you can easily see the entire park on the weekend!

     

    From the park entrance, check out the visitor center, which offers you views of the different sides of the monument. The Tower Trail and other hikes offer changing views of the Tower. When you drive in from the highway, you can see the one side of the Tower with the amazing and beautiful landscape surrounding this geologic feature. Definitely pull over and get a picture of the Tower a few miles out before you get into the park. Once inside the park, you’ll be able to hike around the entire Tower with the ability to see many perspectives of the geologic formation. To truly see the Tower, one must observe it from all perspectives.

     

    Before white settlers came into the area and gave this geological feature its American name, our Native American peoples celebrated and lived around the Tower for thousands of years; their modern descendants still maintain a connection with this place on a physical and a spiritual level. “Oral histories passed down by various American Indian tribes, as well as their present-day ceremonies, offer us important perspectives of the Tower.”

     

    Crazy Horse Memorial

     

    The Crazy Horse Memorial is the largest carved monument to date, and if you placed it on top of Mount Rushmore, it would easily consume the entirety of this monument. Over one million people visit this unique and beautiful work of art, which was started in 1939 when Chief Henry Standing Bear met Korczak Ziolkowski 1939 at the World’s Fair. Chief Henry hired Korczak to build and construct this massive undertaking. Along with his wife Ruth Ross and their ten children, Korczak worked daily on their new life project.

     

    You can easily see the mission of Crazy Horse Monument in practice today, “The mission of Crazy Horse Memorial Foundation is to protect and preserve the culture, tradition, and living heritage of all North American Indians. With their mission leading the way, the original sculpture has expanded into a visitor complex of over a dozen buildings, including an educational and cultural center for Native Americans, history and cultural museum, and several carving rooms. 

     

    Crazy Horse Memorial is definitely a must-see if you are in South Dakota or Wyoming, so make sure to put this monument on your list. It’s definitely an all-day experience that you won’t want to miss!

     

    Other Fun Activities in Wyoming

     

    Since you’re already in Wyoming, you may want to stop at other locations besides Devil’s Tower and Crazy Horse. One of the other activities I took part in while on my vacation in Wyoming is the Badlands Helicopter Tour we took to see Mount Rushmore National Monument. This was a great choice to view the monument as you avoid all the traffic on the way up. However, you’ll have a hard time getting good pictures of the memorial from a helicopter, but the ride-up is definitely fantastic!

     

    I didn’t get to see a few places but looked like a great option: The Mammoth Site of Hot Springs, South Dakota, the Reptile Gardens, The 1880 Train, The Prairie Berry Winery, which is the region’s most awarded winery. I’d also recommend a hot air balloon ride, which always gives you a fantastic bird’ eye view of the landscape and geology. Fly the Black Hills offers the opportunity for you to soar in a hot air balloon. Also, check out Tatanka, the Story of the Bison, and find out how the bison almost went extinct.

    In this episode, you’ll find out why Sedona is such a wonderful place to visit if you love the outdoors, my favorite things to do in Sedona, trails to hike, local landmarks and the beautiful local artwork and spiritual centers and activities you can find in Sedona. In addition to these fun activities, you can also eat at the BEST italian gluten-free restaurant I’ve been to outside of italy.

     

    Outdoor Activities in Sedona

     

    If you love the outdoors, you won’t want to leave Sedona! With tons of gorgeous red rock hikes, excellent mountain biking trails and phenomenal state parks, Sedona is a great place for any outdoor enthusiast.

     

    Slide Rock State Park in Arizona has a river running through the middle and towering rock cliffs on either side. Take advantage of the slippery rock and slide down the river on the natural rock to the pools below! It’s such a great time, especially if you love water activities. Red Rock State Park also has many outdoor trails and activities to do! Check this park out if you’re looking for gorgeous scenery to take pictures of on vacation.

     

    Trails you’re going to want to hike are Boyton Trail, Cathedral Rock, Devil’s Bridge Trail, Lower Chimney Rock Trail. If you like scenic drive, check out the Red Rock Scenic Byway in Sedona and drive state highway 179 through red rock country. Make sure to pullover to get shots of this beautiful landscape.

     

    Shopping in Downtown Sedona

     

    Tlaquepaque Arts and Shopping Village offers shops, food and scenery. You can also spend time at one of the many other shopping areas such as The Collective Sedona and Sinagua Plaza. 

     

    The BEST Gluten Free Italian Restaurant

    Picazzo’s Italian Restaurant is the BEST gluten-free italian that I’ve ever eaten! It’s safe, absolutely delicious and the entire menu is gluten-free! This family-owned and operated healthcentric restaurant has locations in Sedona, Scottsdale, Tempe, Paradise Valley and Arrowhead. “Picazzo’s sources clean, whole foods, rich in nutrients, blended with fantastic flavors. In addition, Jon also studied music such as the bass guitar, piano, harpsichord and went on to manage singer/songwriters, most notably Chris Calloway, Cab Calloway's daughters. He and Chris toured the "Cab Calloway Legacy" show together for three years. John lived in Santa Fe, New Mexico, for over two decades. In this conversation, we talk about the history and culture of this remarkable place, why it's on my bucket list, and amazing gluten-free restaurant options in Santa Fe. 

     

    Fun Things to Do in Santa Fe

     

    Museums are always on my list of things to do when I travel, which is why I was excited about the Georgia O’Keefe museum and the Gerald Peters Art Gallery and Folk Art Museum on the Hill. I didn’t know this, but Santa Fe is the fifth largest artistic center in the world! Apparently, Santa Fe is a significant crossroads for singers, songwriters, and artists because this city is a stopover for artists traveling to and from California.

     

    The Indian Market, where local native Americans sell their art, rugs, and other cultural items, and the Spanish Market of Santa Fe are two fun, local markets you can attend in the summer and early fall. During August and September, find lots of local goods and fare to buy and try. In addition to these two markets, visit Zozobra Art Park during harvest time for great local fun.

     

    Chaco Canyon Historical Park, located northwest of Albuquerque, is a tremendous local, national park to visit and learn the history and culture of the region. Two Grey Hills Trading Post sells a variety of native blankets and jackets. Support local Native Americans by stopping by and making a purchase!



    Gluten Free Restaurants in Santa Fe New Mexico

     

    Looking for good, gluten-free fare in New Mexico? Of course you are! Jon recommended several restaurants to eat at, and when I checked, these places were listed as gluten-free friendly, so make sure to stop by and eat at one of these establishments when you’re in Santa Fe.

     

    Try The Plaza Cafe in Santa Fe, Mollie’s, Geronimo Restaurant, which have been local favorites for decades and now cater to gluten-free! El Meson Restaurante and tapas bar is another fantastic gluten-free-friendly location you’ll want to check out while in Santa Fe.

    In this episode, I'm chatting with Gluten Free Dave who has been gluten free for over ten years. Gluten Free Dave's journey began with an autoimmune disease diagnosis of Hashimoto's thyroid disease. A long-term family doctor never tested Dave for thyroid disease because his doctor thought only women had thyroid problems. Changing doctors was a significant first step, but his doctor didn't understand gluten or nutrition. "I have always loved to cook, but since going gluten-free, I have become obsessed with baking too! I was a beer drinker before going gluten-free. I was basically on the Atkins diet after going GF as I didn't know what I was doing and only ate meat and vegetables!"

     

    After going GF, Dave didn't drink beer for over a year because he didn't know GF beers existed. There is a lot of misinformation about what a GF beer is, and he learned the hard way that gluten-removed is not gluten-free! 

     

    In line with his passion for beer, Dave has created his vacation adventures around visiting gluten-free breweries. He's visited six of the 15 gluten-free breweries in the US and has a goal to see them all. "My wife and I have planned our recent vacations around the cities that host GF breweries. We research nearby safe restaurants and love to hike." So far, Dave's visited GF breweries in Seattle, WA, Portland OR, Golden CO, St Paul MN, Madison, WI, and Tulsa, OK, with plans to visit more gluten-free breweries in the upcoming Post-COVID travel months!

     

    We talk about his experience with social media and how his social media account has created a common thread with his kids, our delicious brand we both love, Pamcakes and great gluten-free places to visit.

    In this episode, I've got Matt Bzedyl from the Gluten Free Street Gang back again! Matt has been running the account Gluten Free Street Gang on Instagram for over two years. His account takes a humorous look at the realities of eating on a restricted diet. Initially inspired when Starbucks removed their gluten-free breakfast sandwich from their menu, Matt's Instagram account has been fortunate to grow considerably since his first post poking fun at Starbucks! 

     

    Matt eats gluten-free as he was convinced his dietary issues were a result of ingesting gluten for years. When he was diagnosed with IBS, Matt learned that his digestive issue is with wheat specifically. Although he cannot eat wheat, Matt still maintains a gluten-free diet to solve his dietary problems. He is currently splitting his time between the UK and Massachusetts. He is looking to incorporate more food content going forward to highlight that it is possible to eat well while traveling on a restricted diet!

     

    We talk about his experience with two COVID lockdowns in London, the photo opportunities COVID has provided both in London and Utah and what we love about riding bikes as a form of transportation in London. Matt also enjoys the London tube and bus network and using the London cab system to get around London as the cabbies are very knowledgeable about the quickest route to get you to your destination.

     

    When you want to eat great food, Europe is the place to get high-quality, delicious food that you can’t get in the United States. EU foods have a much higher standard, so many Celiacs who can’t eat dairy in the US but can eat dairy in Europe. Matt says, “If you go into many of the big grocery stores, there’s a good part of the store dedicated to ready-made food. All of them that have this product also have a sizable gluten-free section.”

    In this episode, I've got Rob Roy from Adventure Bound Podcast. Rob is an active-duty Navy Pilot who recently discovered a passion for the outdoors. Rob and his wife made it a goal to take their firstborn son to 12 National Parks before he turned 12 months old. We chat about National Parks, what they are, how we discovered National Parks, and why you want to visit them!

     

    Zion National Park is a favorite of Rob as this was the first park where he discovered the National Parks. "When we went to Zion I didn't know what it was." Rob visited Zion for a friend's wedding, which helped him understand the National Park System. He loved the greens, trees, and the terrain that results from the mix of desert and precipitation forming the trees against the stunning red rock. 

     

    Before he moved to Seattle, he and his wife took west to Washington State to see the Olympic National Park, Mount Rainier National Park, and the North Cascades. Out of all the National Parks he's visited, Rob says the wow factor is the best at The North Cascades National Park. "When you're talking about unspoiled, rugged beauty, there's no place like it." Since their original trip, they now live closer, although they would have to make a weekend trip with the three-hour drive to get there.

    In this episode, I’m giving you the 411 on fun things to do in Kanab, Utah! You may not have heard about Kanab, but if you are an outdoor enthusiast, Kanab is a best-kept secret for outdoor fun! With so many slot canyons, hiking trails, and beautiful landscapes, Kanab is a great place to go if you love the outdoors minus lots of crowds.

     

    Balloons and Tunes Roundup Hot Air Balloon Festival in Kanab

     

    For a fun and exciting event, check out Balloons and Tunes Roundup! Held the third weekend in February, Balloons and Tunes Roundup features an outdoor market, festival, and, of course, hot air balloons. Get amazing pictures of these beautiful aviators flying through the Utah blue sky against the red rock of southern Utah, talk to balloon owners and enjoy the excitement of watching hot air balloons travel in the sky.

     

    Outdoor Activity Hiking in Kanab Utah

     

    Dinosaur Tracks hike is 2.9 miles north on 89, hike out through the trail up to the plateau and see Make real tracks of ancient dinosaurs who roamed across the land millions of years ago! See images of these on my Instagram.

     

    The Wave is one of the most famous photographed hikes with gorgeous strips of red rock hills everywhere! To take this amazing hike, you’ll need to attend the lottery to get a permit to hike The Wave. Definitely obtain a permit as rangers are there to patrol, and the fine is $100,000 for illegal hiking as this is an environmentally sensitive area. The drawing for The Wave permit occurs at 9 a.m. (arrive by 8:30 to fill out an application). If a permit is won, it will be for the following day. In the winter months, the Grand Staircase Office draws for Saturday, Sunday, and Monday’s permits on Friday.

     

    If you miss the Wave permit, check out White Pocket slot canyons. While you’ll need an ATV to get into

    Hike White Pocket is a great alternative that doesn’t require a permit. With either location, we recommend hiring a local guide. You can get there on highway 89 mile marker 01.




    Another amazing slot canyon to hike in Kanab is Peek-A-Boo Slot Canyon. Head north 8.1 miles on 89

    Make a right (road not labeled) onto the turnoff for the Peek-a-boo trailhead. Three miles of dry wash after paved highway. We hired a guide and went canyoneering, which was a blast! 

     

    The Toadstools is an easy 1.5-mile hike each way with scenery that looks like you've landed on another planet! Take highway 89 east to milepost 20. Slow down to look for the trailhead as it's right off the road but can be easily missed when traveling at highway speed.

     

    Coral Pink Sand Dunes is a great family-friendly Utah state park where you can get beautiful photographs of Utah sand dunes. Avoid going there in the summer heat!

     

    Squaw Trailhead is a local Kanab hike that is located behind Jacob Hamlin Park. Nice view of the city and red rock from the top of the trail.

     

    Gluten Free Restaurants in Kanab, Utah

     

    There are four restaurants that I would highly recommend visiting when you are in Kanab! First, Vermillion 45 is the only French restaurant in downtown Kanab but is the best French restaurant I’ve been to in the US and has all their gluten-free offerings labeled. Wild Thyme Cafe has excellent American fare and many gluten-free offerings. They have several vegetarian and vegan dishes as well! Rocking V Cafe offers sandwiches and a good selection of gluten-free offerings for the entire family.

    Peekaboo Canyon Wood Fired Kitchen has amazing gluten-free wood-fired pizzas and incredible gluten-free desserts that you will absolutely love!

    In this episode, we will dive into tools you can use to find amazing gluten-free friendly, and dedicated gluten-free restaurants to eat at on Valentine’s Day. If you're new to the gluten-free scene or you've been gluten-free for a while, you can still have a hard time finding a great restaurant. Whether you are a foodie or not, looking for a restaurant at home or on vacation, getting a good gluten-free meal at a nice restaurant can be daunting.

     

    You can use several tools when you want to find a great restaurant for you and your family and friends! Filter for a price, type of food, and ambiance. Learn how to cross-check your restaurant choice and find out the difference between a gluten-free friendly restaurant and a dedicated gluten-free restaurant. Additionally, listen in to find out which three questions to ask when calling a restaurant to determine if they are safe for celiacs.

     

    Opentable

    One of the resources I love to use is OpenTable. OpenTable is a reservation site, and I use this resource because it’s easy to instantly filter and find restaurants and reserve online. You can use OpenTable's online website or their mobile app to book a table. Your account setup is free. Find restaurants and make reservations through OpenTable and receive points when you dine at that restaurant using an OpenTable reservation. When you reach a certain level of points, you will receive rewards through OpenTable.

     

    Find Me Gluten Free App

    Find Me Gluten Free is available online and as a mobile app. Look for gluten-free friendly, dedicated gluten-free restaurants, places to eat with dedicated fryers. Find different gluten-free features and offerings such as gluten-free bread, gluten-free desserts, late-night, a local chain, vegan-friendly, vegetarian friendly.

     

    Trip Advisor

    Another way you can 'Find' restaurants is at Tripadvisor. Setup a free account and use this resource to find restaurants in your neighborhood or when you are traveling. Usually, we think of Tripadvisor only when we're traveling. I also like to find fun things to do when I'm going on vacation or at home. Look up restaurants in the town you are eating in and browse by food, community picks, gluten-free and vegan.

    Today, my guest is a gluten-intolerant world traveler who is a US resident living in Mongolia. She moved there almost three years ago when her husband’s job took them to live in this unpopulated country on the other side of the globe.”We didn’t even know where Mongolia was except that it was somewhere in Asia!” Not knowing anything about Mongolia, Patricia and her husband found this an opportunity for a new cultural experience.

     

    The 411 on Mongolia

     

    The capital city of U is massive, with massive skyscrapers and tall buildings. "It is a contrasting city as it has very old Soviet buildings. It also has in yurts, which are the traditional housing for nomadic people, in the outskirts of the town," Patricia says you can stand in the modern skyscrapers and look down upon the valley dotted with yurts. "You can see the very rural with the ultra-modern, with the Soviet mixed."

     

    If you want to travel to Mongolia, you will need to bring your own food. There aren't many places that are gluten-free friendly or knowledgeable about gluten-free. Soups, bread, and several staples of Mongolian food culture contain gluten. Many servers do not understand what foods contain gluten unless it's a western restaurant in Mongolia. 

     

    What to Do When You’re in Mongolia

     

    "Mongolia is a vast place, and there's so much to see," Patricia recommends top destinations such as the Gobi Desert, to the west of Mongolia, you can see and visit lakes. There are other lakes to visit in the north and see the Khovsgol Festival of Ice while in the northern region for a frozen lake festival.

     

    The Altai Mountains in the northwest have a different ethnic group: the Kazakhs, located in Kazakhstan, just west of Mongolia. Here, they celebrate the Golden Eagle Festival. It is a festival to demonstrate the Kazakhs' culture to the world and promote their heritage to their next generations. 

     

    Patricia’s Global Travel Adventures

     

    Living in Mongolia has its positive aspects, such as being geographically close to many eastern European and Asian countries. She has visited over a half dozen countries in the past three years including Japan, Nepal and Spain.
