    Today, my guest is a health coach and food blogger who dedicated her life to creating nourishing food that tastes incredible. She inspires healthy living through lifestyle choices with easy plant-based recipes. Debra has many gluten-free recipes on her blog, and she’s always looking for more folks who want to create their own health journey and promote their own well being by making informed food and lifestyle choices. 

     

    Processed Food Vs. Unprocessed Foods

     

    When we can eat foods that are closer to nature, then our body recognizes these foods and knows what to do with them,” says Debra. When you buy pre-packaged foods, even though you are purchasing gluten-free, it may not be enough to “achieve vibrant health.” Just because your food is gluten-free doesn’t make you healthy.

     

    She explains that our bodies get confused when we eat processed foods and can send out an auto-immune response. Having sensitivities, allergies, or auto-immune issues is your body’s way of saying that it doesn’t agree with the food choices that it’s been given. 

     

    Using Plant-Based Whole Foods

     

    “Say you’re making lasagna, you can use your vegetable peeler to make zucchini noodles to layer your lasagna, so you don’t have to resort to using processed gluten-free pasta.” She says to embrace the large varieties of whole foods available and use them in creative ways to make different dishes.

     

    Eating Gluten-Free Doesn’t Have to Be Costly

     

    Instead of eating packaged and processed gluten-free foods, Debra suggests eating whole foods for better nutrition and significant food savings for your wallet. “Whether you’re eating vegan, vegetarian, or gluten-free, it’s the packaged and processed food that is the pricier option.”

     

    Focus on Foods You Can Eat

     

    Being gluten-free, it’s easy for us to focus on and be sad about what we can’t eat, especially when watching others freely eat whatever foods they want without hesitation. Instead of focusing on what we can’t eat, focus on what you can eat! “When you focus on what IS available to you as opposed to highlighting what’s not available to you, it’s the flip side. This mindset helps you embrace all that’s there. When you focus on what’s not available, it puts you in a mindset that’s less healthy.”

    Moab was just voted #2 on TripAdvisor's Travelers' Choice Awards for New Trending and Emerging Destinations, and it's easy to tell why! With so many great outdoor adventures in one town, Moab is sure to be on traveler's hit lists. Here are nine great gluten-free and Celiac-friendly restaurant choices you'll want to check out while vacationing in Moab.

     

    Denny's Diner has a gluten-free protocol to serve food that is under 20ppm! Can you believe it? I love eating breakfast at Denny's 24 hours. I've eaten at different restaurants all over the United States and have never been sick eating at one!

     

    Love Muffin Cafe for freshly squeezed juices and gluten-free baked items along with amazing egg dishes! Make sure to check out their dairy-free options as well.

     

    Sweet Cravings has gluten-free sandwich offerings along with knowledgeable staff to help you navigate the menu and choose Celiac-safe foods.

     

    Fiesta Mexicana has the gold find with a dedicated fryer! Their chips are safe so grab a plate for lunch and dinner. The staff is very knowledgeable and can direct you towards gluten-free finds.

     

    Go to Moab Brewery for the best-brewed sodas as they create their own brews on-site. Whether you are in the mood for alcohol (don't drink the beer) or a soda, they've got you covered for post-hiking relaxation with a good menu.

     

    Bangkok House for lunch and dinner, and dump gluten-free soy sauce on all your food! Good Asian food choices on their menu.

     

    Moab Coffee Roasters for their coffee and tea - but don't eat the food! They have amazing flavors such as English Toffee, which I absolutely can't get enough of when I go to Moab.

     

    Moab Garage Company is actually inside a remodeled old garage and has a cool atmosphere. MGC also carries a great selection of teas and coffees to start your day outright.

     

    Sunset Grill is an upscale restaurant with gorgeous views of Moab and gluten-free menu choices.

     

    Desert Bistro is a fusion restaurant whose staff is incredibly knowledgeable about the ingredients in their food, and they specialize in allergy protocol. The perfect date-night restaurant, Desert Bistro, has the most amazing gluten-free desserts that you can share with that special someone!

     

    Moab Food Truck Park has a variety of ethnic and American foods. Each food truck has its own protocol so check with the server or owner of the food truck to verify which options are safe.

     

    98 Center Moab is an Asian-Vietnamese-American fusion restaurant that understands what it means to have Celiac disease! I was way impressed with their staff knowledge and their mostly gluten-free menu, and the remainder of their menu can be made gluten-free—lots of vegetarian and meat choices, a great place to go for lunch or dinner.



    Where to Stay

     

    Purple Sage Flats and Moab Flats are two boutique hotels in Moab that have been completely redesigned in the past five years to a chic, modern comfy place to stay that features amenities such as kitchens in every room, laundry facility, hot tub and complimentary mountain bike use! There’s a picnic area and fire pit outside to kick back and relax during the warm summer nights.

    Fun Things to Do in Moab

     

    Stop at Moab Information Center and pick up a self-guided tour brochure. It’s a small tri-fold black and white brochure that’s packed full of all the tours the tour companies take you on, except that it’s free because you get to do it yourself and stop as long as you want at the different sites! Pick up a Moab Guest Guide for information and local maps on what to do. You can find these for free at any of the magazines stands in town. I picked up my copy at Denny’s. 

     

    Museums in Moab

     

    Moab Museum 

    In 1957, a group of civic leaders began to plan for a city museum, and in February 1958, the museum was incorporated as the Southeastern Utah Society of Arts and Science. Housed in a County building on Center Street, the private archeological collections from Dr. J.W. “Doc” Williams and Ross Musselman provided objects for initial exhibits, with more citizens' donations. During its first 14 months, the museum hosted more than 6000 visitors. Find out about the past rich in geological change, paleontological remnants, and human history that stretched from prehistoric cultures to Mormon pioneer families to out-of-town investors and miners with families. Spend an hour finding out how Moab came to be the town it is today in its 150-year history.

     

    Moab Giants Paleo Safari Dinosaur Park and Museum 

    “Not only is it set amongst some of the world’s most breathtaking scenery in Moab, Utah, but it’s a unique experience of the ages. Make your own tracks alongside our state of the art, life-size dinosaurs in the land they called home! Moab Giants is the ultimate place to discover the past with cutting edge technology that feels like the future! Visit the newest dinosaur museum in Utah!”

     

    Hole N” the Rock Roadside Attraction

    Visit Hole N” the Rock, a most unique home carved out of a huge rock in Utah’s Canyonlands Country. This historic 5,000 square foot home and unusual gift shop and trading post are open all year. Take a guided tour of the home, and appreciate the rich history within its walls.



    Outdoor and Adventure Activities in Moab

     

    Take a wild ride jumping out of an airplane at Skydive Moab, Go 4x4, or rent a dirt bike at Canyonlands Jeep and Car Rentals. Grab a mountain bike rental and ride some of the best mountain biking terrains in the world! Hook up with an outfitter or rent your own climbing gear for spectacular rock climbing and canyoneering. Go for some water fun and try boating, SUP Paddleboard, and river tours are available from several outfitters. You can rent snowshoes and cross-country skis in the winter, although they really don't get much snow!

     

    Moab Parks

     

    Dead Horse Point State Park 

    From Dead Horse Point's prominence, 2,000 feet above a gooseneck in the Colorado River, an ever-changing landscape unfurls. Immense vertical cliffs meet with canyons carved by ice, water, and wind creating a visual masterpiece. Plants and animals surviving on the edge of existence face many challenges of extreme conditions within this high desert environment. Stories of ancient hunters, resting along the cliff tops while knapping chert in preparation for the next hunt, and cowboys of the late 1800s, chasing wild mustangs onto Dead Horse Point, using the narrow neck to block off the natural corral. What story will you discover on your visit to Dead Horse Point State Park?

     

    Canyonlands National Park

     

    Canyonlands invites you to explore a wilderness of countless canyons and fantastically formed buttes carved by the Colorado River and its tributaries. Rivers divide the park into four districts: Island in the Sky, The Needles, The Maze, and the rivers themselves. These areas share a primitive desert atmosphere, but each offers different opportunities for sightseeing and adventure.

     

    Arches National Park

     

    Visit Arches to discover a landscape of contrasting colors, landforms, and textures, unlike any other in the world. The park has over 2,000 natural stone arches, in addition to hundreds of soaring pinnacles, massive fins, and giant balanced rocks. This red-rock wonderland will amaze you with its formations, refresh you with its trails, and inspire you with its sunsets.

     

    Grab a headlamp that has a red light so your eyes can quickly adjust to the night sky when you are stargazing at one of the parks in Moab.

    Gluten Free Holiday Baking at High Altitudes

     

    When you're cooking or baking gluten-free for the first time, you may not know what recipes are good and where to find recipes that won't let you down. I understand how challenging this can be as I went through my first holiday season with only a couple months of being Celiac under my belt!

     

    Why Is Baking Different at High Altitude?

     

    Air pressure is lower at higher altitudes. The higher you are from sea level, the lower the air pressure becomes. 

     

    If you live more than 1,000 feet above sea level, your best bet is to follow high altitude baking recipes. 

     

    Because air pressure is lower at high altitudes, any liquids will evaporate quicker. The speed of liquid evaporation makes air bubbles rise to the top and burst. Because the air bubbles leave the baked goods faster, the ingredients in your creation can become densely packed together because the air has left, creating the ingredients to collapse on themselves, giving you a brick.

     

    Be mindful that you cannot substitute baking soda for baking powder or vice-versa, as it won't work. You see, baking powder and baking soda don't actually work the same way. Baking soda needs an acidic ingredient like lemon juice to activate it. And baking powder is, basically, just baking soda with the acid component already built-in. You can't use the two interchangeably. In fact, substituting one for the other can be disastrous.

    When you're cooking or baking gluten-free for the first time, you may not know what recipes are good and where to find recipes that won't' let you down. I understand how challenging this can be as I went through my first holiday season with only a couple months of being Celiac under my belt!

     

    Although I haven't made all these recipes, they are from trusted gluten-free sites that I have used in the past and have created amazing gluten-free dishes that my entire family enjoys (even the ones that aren't gluten-free!). Of course, my favorite part of any food creation is making and eating dessert! You'll find plenty of dessert ideas on my blog.     How to Celebrate the Holidays When You're Family Isn't Gluten Free with Tarryn of My Celiac Life

     

    Although Tarryn is Celiac, her husband Jake can eat a “regular” diet. Their home kitchen isn’t completely gluten-free, but Jake is very conscious about how he prepares food with gluten in their kitchen so as not to cross-contaminate Tarryn. “We don’t have bread and food that would make a lot of crumbs, to make a mess that would make it difficult to track gluten. I have my own little cupboard on the side where I can have some of my favorite snacks, which may have gluten, but I’m careful with them. I’m not necessarily eating them on the counter or without being extra careful.”

     

    Tarryn says Jake is very understanding of her Celiac disease. He has separate peanut butter, and they only have gluten-free bread in the house to be on the ultra-safe side. Since Jake is cereal obsessed, he has his own cereal bowl for his breakfast or anytime he eats gluten. “As far as utensils, I’d say our home is Celiac safe.”

    Gluten Free Baking and Food Storing for the Holidays with Rylie Cakes

     

    Rylie of Rylie Cakes first discovered she was Celiac during her college years. Her first memories of baking gluten-free were at Thanksgiving. She remembers throwing out many of the first editions of her converted holiday recipes and learning step-by-step by baking in her college dorm to create delicious gluten-free baked goods that her gluten-eating friends absolutely loved! She got the nickname “Rylie Cakes” from bringing her delicious baked cookies and cupcakes to college gatherings.

     

    “I started to reach a point where I would hear from other people that aren’t gluten-free ‘Wow, this is really good!’. That’s when I knew I was getting somewhere!”

     

    In college, Rylie decided to take up training in the culinary arts. She worked during the day and went to school starting in the afternoon and late into the night. Rylie enjoyed every minute of her culinary training. After she graduated, she decided to start her own bakery, Rylie Cakes.

     

    Rylie Cakes Bakery started out offering five different desserts and quickly grew into a small cafe. During the time spent at her bakery, Rylie created several different baking mixes, including biscuit mix, bread mix, pie crust, and shortbread mix. After several years running her bakery, she decided to take her mixes and sell them to consumers to eat and enjoy!

    Jen Fitzpatrick of The Nomadic Fitzpatricks has traveled the world. One of her first long-term overseas journeys was playing violin in a study abroad program in Madrid. The matriarch of the house Jen lived at during her program in Madrid was very accommodating and created all gluten-free home-cooked meals for Jen in the weeks she stayed at her home. 

     

    In 2019, Jen and her husband Dylan took unpaid sabbaticals from their work and set out as nomads to backpack across the world for six months - she being a Celiac.     Hawaii Insider Part II | Molokai and Kauai

     

    This is the second of a three-part series where I chat with Tony Labbe of @labbetravel about the culture, things to do, and insider tips on six of the Hawaiian Islands. In part II this week, I’ll be talking to Tony about the beautiful islands of Molokai and Kauai, what’s unique about each of these islands, his favorite places to stay and recommendations on

    The Hawaiian Islands

     

    Did you know there are a total of 132 islands in Hawaii? With eight main islands, Hawaii is the only state that is entirely surrounded by water and the only state that was formerly ruled by a monarchy and the only state that grows coffee.

     

    The earliest settlers arrived in Hawaii around 800Ad, and Captain Cook was the first European voyager to discover Hawaii in 1778. Once Hawaii was incorporated into the United States, Lahaina, Maui was the first capital, which was then moved to the current capital of Honolulu on the big island. 

     

    Mauna Kea, on the Big Island, is the tallest mountain in the world when measured from the seafloor, and Hawaii has many active volcanoes that are in the process of making this island chain larger every year. Besides being the tallest mountain, this is also the location of a ski resort and receives snow every winter!

     

    My guest, Tony Labbe, suggests trying several different restaurants while visiting any Hawaiian Island as world-renowned chefs are cooking up exquisite meals at many of the culinary choices in Hawaii. For those of us who are gluten-free, this equates to having the ability to safely eat gourmet meals with a beautiful view of the ocean!

     

    Cruise Hawaii

     

    Tony suggests flying into Hawaii and starting at one of the islands for your Hawaiian cruise. When you begin your Hawaiian journey from the islands, you’ll forgo the long trip across the ocean and spend many of your cruise days at sea. Easily go island hopping and find new adventures on your journey!

     

    Things to do in Molokai

     

    “Molokai is usually not the first Hawaiian island people visit,” says Tony. Off the beaten path, rustic and rugged environment so much so that there are no stop signs or stoplights on the entire island! A much simpler lifestyle on this island, “When you get there, you just slow down.”

     

    Even though Hawaii is known for its championship golf, there are no golf courses on Molokai. Unlike its other island counterparts, Molokai does not feature luxury resorts. Tony suggests going to this unique island to experience more Hawaiian cultural foods, such as Poi, the fresh fish such as Ahi, and other local dishes.

     

    Visiting Kauai

     

    The geologically oldest island, Kauai, has lush rainforests, with the North Shore receiving the most rainfall of this island. On the top of the list for places to visit is Waimea Canyon, dubbed the “Grand Canyon of Hawaii,” take a helicopter ride to the Nepali Coast, and, of course, hiking through the forest.

     

    Take to the water for river or sea kayaking, SUP, and snorkeling. Find some of the most fantastic ziplining through the Kauai rainforest, or take an UnCruise aboard a ship with only 34 other passengers to experience the ultimate in luxury cruise travel!

    Things to do in Maui

     

    From its famous beaches to the peak of Haleakala, Maui offers a wealth of unforgettable sites and activities. The name Maui translates into "the best" in Hawaiian, and for travel, Maui has the most adventures to offer, including hiking, beaches, mountains, and nightlife. Before you go, note that this island definitely has a touristy feel. 

     

    Lahaina and Ka'anapali are the two most western towns in Maui and offer spectacular beaches. Lahaina is a historic whaling town where you can find fantastic dining and shopping. Check out Front Street for a thrilling night in one of their many nightclubs. In western Maui, you can find a wide variety of hotels and many beaches to enjoy.

     

    Tony's advice for those traveling to Maui is to divide your trip into a more activity-based trip and spend some time on the quieter side of Maui to enjoy some rest and relaxation. He also recommends Joe's Bar and Grill and Roy's to experience food from a Pacific Rim chef. Additionally, you should visit the Haliimaile General Store to get away from the hustle and bustle of the beach.

     

    For the gluten-free, I'd highly recommend Maui Brick Oven, the only dedicated gluten-free restaurant.  You can eat amazing foods such as mozzarella sticks, fried onion rings, and the best Italian food I've had in many years! Tony recommends the celiac-friendly Mama's Fish House Restaurant for the best fish dishes on the island. 

     

    When your sweet tooth is calling, I'd recommend Maui Bread Company as they have several delicious gluten-free selections that you will want to bring home in your suitcase. Also, visit Sugar Beach Bake Shop for doughnuts, muffins, and gluten-fre

     

    The Road to Hana

     

    “The road to Hana is more about the experience and journey itself than the destination.” Travel the road less traveled and the only road that leads to the eastern side of Maui. Stop along the way to swim in beautiful waterfalls, stop at the botanical garden and take breathtaking photographs of the rainforest. Make sure to stop at the art shop and the vegan ice cream shack to grab a scoop of animal-free, handmade ice cream. When you get to Hana, check out the general store and the park that the locals frequent.

     

    See Haleakalā

     

    Haleakalā is a shield volcano on the east side of Maui Volcano. The highest point is at 10,023 feet and is known as “the house of the sun.” This volcano forms more than 75% of the geographic mass of Maui. Bundle yourself up, bring a blanket, and visit at sunrise for a gorgeous view of the curvature of the Earth, which is one of the most highly photographed pictures of this popular volcano. Take a bicycle tour down the volcano to finish up your incredible experience of this national monument.

     

    Visiting Lanai

     

    Looking off the coast of Maui is the island of Lanai. You can easily take a ferry to Lanai from Maui. There is no shortage of fantastic golf and luxury places to stay in Lanai. Tony suggests staying at one of the two Four Seasons resorts. Manelli Bay at the beach is his favorite spa resort.

     

    You'll want to end your vacation in Lanai as it's more relaxed and an excellent place for rest and relaxation. If you're going to be more active, definitely scuba dive the shipwreck at the back of the island, go SUPPING or take a morning snorkeling expedition before the trade winds come up and make the water cloudy.

     

    Four Season's Japanese Sushi at Nobu is Tony's favorite dining experience on Lanai. Sushi chef Christopher "Tex" Texeira was born and raised in Kailua on Oahu and leads this exquisite dining experience. While you're in Lanai, check out the shopping outlets nearby. Take a ride into the small town of Lanai City to explore this small town and talk with the locals.

    COVID Disney Travel Update, Star Wars Galaxy Edge and Gluten Free Disney

     

    DisneyWorld - Perhaps the Safest Place in Florida during the COVID Pandemic

     

    In this episode, I chat about Disney Star Wars experience, the new COVID restrictions at Disney theme parks, Disney apps you can use to enhance your Disney experience, and the level of service Disney offers to those of us who are gluten-free or have specialty diets.

     

    Amidst the most significant COVID numbers yet seen, with over 15,000 cases in one day last week, the state of Florida alone has recorded more COVID cases than other countries! Even though it's tempting to go and actually get a seat on Rise of the Resistance, those epidemic numbers are way too high for me to be comfortable to fly to Florida. I will say that with all the sanitization, social distancing, and touchless services Disney has in place, a Disney theme park is most likely the place you'd be least likely to catch COVID in Florida.

     

    I'm a Disney fan by default, as when they purchased Star Wars, I became a Disney fan only because I love Star Wars. When I lived in Florida, I was a short 45-minute drive away from DisneyWorld. Our family would often go to DisneyWorld on the resident pass, which, 15 years ago, was only $99. Of course, there were blackout dates, but honestly, I wouldn't want to go during the holidays that were blacked out anyway as it would be super packed with people, and that's just not enjoyable for me.

     

    Creating a Disney Account Online

     

    If you're planning on going to Disney, you'll first want to open a Disney account for yourself online https://disneyworld.disney.go.com Next, create an account for each person in your party, then link people who are traveling with you. If someone in your travel group already has an account, do not create another account for them. Simply email them an invitation to join your group! 

     

    Create all your plans on your Disney account and make plans for the people in your party! Reserve Fastpass up to 30 days ahead of time. Now, you can create dinner reservations, reserve FastPasses, buy merchandise, and book your Disney stay all from one place! Get FastPasses for your entire group, or make dinner reservations for each individual person. If you want to divide your group into two - no problem! You can put only individuals that want to go on a ride or to a restaurant on that reservation. Additionally, you can change your reservation online 24 hours ahead of time on the app or on your desktop.

    Of course, Disney makes it super easy to separate you from your money, it's what they are good at. 

    Using the Disney App to Enhance Your Vacation Experience

     

    Next, download the My Disney Experience app to view all your park plans including hotel, dinner reservations, order meals ahead of time, access PhotoPass service, view park maps, see wait lines at different rides, find character greetings, view showtimes, access FastPass reservations created with your Disney account.

     

    When waiting in line, I recommend downloading the Disney Play app to your phone. Log in to your account and play a game that is based on your location in the park! Most games are two players, so you’ll need a person in your group to play with on the app.

     

    FastPass and FastPass Plus at Disney

     

    Fastpass can be reserved up to 30 days in advance and gives you a shorter line to wait in when at any of the parks. Fastpass + charges a fee and puts you at the front of the line. With COVID modifications, Fastpass + isn’t available right now as they are using social distancing with wait lines, and they are using the FastPass+ space for their regular line queue. Note: You can get three FP for one park per day.

     

    From the Disney website: “Follow these quick steps and you’ll be riding the fast lane to fun in no time:

    1. Add people to your Family & Friends list to enable you to reserve access to FastPass+ attractions and entertainment for them.
    2. Link your vacation package, link your tickets or link your annual pass to your Disney account. If you purchased online, the package, tickets or passes may have been linked automatically.
    3. Reserve access to FastPass+ attractions and entertainment for each day that you have a valid theme park ticket linked to your Disney account.
    4. Visit the theme park on the day that you have FastPass+ selections.
    5. Go to the FastPass+ entrance or viewing area for the selected attraction or show during the designated arrival window time.”

     

    “After you redeem your initial 3 selections, use the app or head to a kiosk to make another selection—even if you’re in a different park from your first choices!

    Valid theme park admission is required. FastPass+ attractions and entertainment experiences, the number of selections you can make, and available arrival windows are limited. Making advance FastPass+ selections requires online registration.”

     

    Disney’s Star Wars Galaxy’s Edge

     

    The ultimate Star Wars experience for any fan, if you were going to do one thing at Disney, this would be it! Packed full of fun and exciting rides, gift shops, and dining experiences (if you’re not gluten-free), the Star Wars experience will blow your mind!     Disney Know Before You Go COVID Travel Update

     

    First, you must reserve your time at any one of the four Disney theme parks that are currently open through the Disney Park Pass Reservation System. To enter a park, both a park reservation and valid admission for the same park on the same date are required for each person in your party ages three and up (limit one park per day Disney is controlling the number of people in the park to maintain social distancing).”

     

    FastPass+ service is suspended as they are using additional queue space to control capacity and maintain physical distancing. We will automatically cancel existing FastPass+ selections and share any future updates on the service at a later date.

     

    There are selected resorts Disney has opened to guests. Disney Springs shopping opened in June. Remember that COVID is changing Disney’s offerings, so make sure to check their website for more information.

     

    Make sure to view Disney’s new COVID precautions page before you make reservations to the park. Here is a summary of precautions Disney is taking to keep everyone safe:

     

    • Mandatory use of face masks
    • Sanitizing rides
    • Seating guests six feet apart
    • Hand washing stations located throughout the park
    • Physical and social distancing
    • Modified experiences
    • Temperature screenings are mandated at areas throughout the park

     

    Disney’s disclaimer: “An inherent risk of exposure to COVID-19 exists in any public place where people are present. COVID-19 is an extremely contagious disease that can lead to severe illness and death. Even though we are in the middle of COVID, you can plan today what you will dream tomorrow, so look into the park you are interested in going to and keep your eyes open for new park openings.

     

    Remember to be safe, wear a mask, wash your hands often, and definitely do not travel if you are in a high-risk group for COVID.

     

    The Peaceful Thrillseekers Advice on Attending Theme Parks

     

    When you are planning to go to a theme park, and you are bringing the family, make sure to have your reservations ahead of time as soon as possible. If you’re going to Disney, create a Disney account for all members of your family, and connect them under your name. You can reserve FastPasses for all your guests at the same time, right online!

     

    Are you an Amazon Prime member? If so, you can order supplies ahead of time and have them shipped right to your Disney hotel room! He definitely recommends doing this in advance of your trip to avoid any “hiccups.”

     

    If you are going with a group of friends, Oscar recommends starting at the back of the theme park, working your way forward to avoid the crowds. Many people start at the front of the park and move to the back end. Doing this in reverse helps to cut down on groups and wait times. He also advises avoiding crowded holiday times, as this will increase your wait times on rides and reduce the chances of riding on all the spins at the park you are visiting. 

     

    Definitely bring sunscreen, sun hat, poncho and sunglasses that you are not afraid to lose! These are essentials, especially in Florida theme parks. Wear comfortable walking sneakers - definitely don’t wear flats or heels to any of the theme parks. If you’re wearing sandals, make sure to wear the type that has the strap across the front and back of your foot to keep them secure, especially when you are riding coasters!

     

    And, if you go to a theme park more than once a year, definitely invest in an annual pass for that park. This will save you hundreds of dollars and give you the flexibility to go to your favorite park for fun, once a year, special events.

    Theme Parks for Kids and Parks for Adults

     

    For kids, Oscar recommends Disney, Legoland, Sea World, Fun Spot.

     

    Adult-centered theme parks include: Busch Gardens, and Universal. Although Universal does have more adult rides, they do also have rides for children. Oscar mentions that Cedar Point in Ohio is his dream coaster park and that he will make a mecca there one day.

    The Celiac Project Documentary

     

    The inspiration for this film came after director Michael Frolichstein struggled with a series of "mystery ailments" before finally being diagnosed with Celiac Disease at age 40. Michael was shocked to learn that this auto-immune disease, which affects 1% of the US population, is 83% undiagnosed or misdiagnosed. 

     

    His journey to meet others who had suffered, as well as to get answers from experts, led him to uncover more mysteries within his own family. The documentary ultimately explores what we can do individually and as a society to advance the conversation and raise awareness about the disease.



    Guest Bio

     

    Following a lifetime of dismissive doctors, unexplained symptoms, and emotional stress, filmmaker Michael Frolichstein received a life-changing diagnosis at the age of 40—celiac disease. Camera in hand, Frolichstein set out unaware of the odyssey before him. The result is “The Celiac Project,” a powerful, first-of-its-kind documentary; its goal is to raise awareness about celiac disease. 

     

    The documentary is currently rolling out on different Public Television stations nationally. Soon after completing the film, Michael met Cam Weiner at a screening of his film. Cam related to Michael’s story, as his own health issues and subsequent diagnosis with celiac disease forced him to pause his budding film career. The two forged a secure connection and a shared mission of raising awareness. 

     

    Together, they launched a weekly podcast in January of 2016 to discuss and highlight issues and topics relevant to the celiac and gluten-free community. There are over 225 episodes to date, covering a myriad of fascinating topics and special guests.

    How Makeena Started

     

    Karen’s dad was a science professor at the University of Illinois. Through her dad, she learned science, mathematics, social studies, and English on a device that was a touchscreen back in the ’60s and ’70s. 

     

    After she married, she and her husband went to a small natural foods and products store in Urbana, Illinois, called Strawberry Fields. “ Their team was helpful and would always point you in the right direction.” Moving to Boulder in 1993, Karen and her husband shopped at Alfalfa’s and Wild Oats. These were much bigger stores compared to their old hometown store, Strawberry Fields. That was the “aha” moment where she realized she should build touchscreen kiosk systems that allow the consumer to navigate the retail environment.

     

    Karen tells the story of how her journey culminated in blazing the path of the Makeena app. “I felt like I had all these different roads, and they all led to Makeena. It was an intersection of what I should be doing. I am really passionate about the idea that if we could make better-for-you products more affordable and accessible for everyone anywhere they need to shop, then we’re going to have a cleaner planet and a healthier population. This is the bigger vision that I have as the founder. That’s what keeps me going because it is tough to be a founder.”

     

    How Karen Decided on a Name for Makeena

     

    “Keena” means ‘happiness’ in Swahili, ‘‘abundance’ in Hawaiin and ‘machine’ in Arabic. The name was also available as a website and was available for national trademark. She likes that her platform gives brands a “stamp of approval for curation.” Because Makeena stands for ‘happiness’, she wants to make sure that both the shopper and the brand are happy. Karen also wants to make the world “a cleaner place” and that there is abundance for everybody - for consumers and brands. Technology comes in on the app side of her business, making this information available through her app on the world wide web.

     

    Guest Bio

     

    Karen is passionate about being an entrepreneur and making the world a better place. She firmly believes that building a technology company in the natural products space will encourage people to shop healthier because Makeena will make it easy for them to make smarter choices. Karen became an entrepreneur in the early 1990s when she moved to Boulder, Colorado, and built and operated two interactive touchscreen kiosk companies, one for the real estate industry and one for the natural products industry. 

     

    Since then, Karen has been general counsel for several emerging growth and publicly-held software and data analytics companies. Karen earned her degree in accounting and business from Indiana University and a CPA and a law degree from the University of Illinois.     Gluten Free COVID Camping Snacks and Foods

     

    Since many people have been camping for their COVID vacation, I wanted to share with you great gluten-free food prep tips for creating meals, camping snacks, and food storage when you're camping. I've learned these experiences the hard way by making mistakes while on the road and eating out of the back of my car or at the campfire. Take steps to eliminate the hassle and expending energy on clean up when you're camping with these camping COVID-19 tips!

     

    I love camping. I love the outdoors, sleeping outside, sleeping in my hammock, having a campfire every night, not caring about smelling like campfire smoke or makeup. The beautiful trails I hike and the out-of-the-way places I find when I'm taking that road trip to my next camping spot. There are so many things to love!

     

    Storing Food for COVID Camping

     

    Ice

     

    Use dry ice! There are several reasons not to use regular ice in your cooler.

    • Regular ice is heavier when you first get the ice and even heavier when the ice melts, and you have a pool of water in your cooler
    • Food in cooler gets wet when your ice melts
    • Have to throw out good, expensive food - ever tried to eat wet gluten-free bread?
    • Dry ice lasts much longer than regular ice.

     

    Be careful not to touch dry ice with your hands as you can get a burn. Handle with paper or a towel! Although a bit more expensive, dry ice is worth the extra cost because of the benefits listed above.

     

    Coolers

     

    Best cooler: Yeti coolers, they are pretty pricey, starting at $79.99 for a lunchbox, however; they are the best option when you are not going to be near any dry ice for days. The description from their website reads, "Extreme insulation power and durability are bare minimum requirements for every cooler we make — and we never stop there. Our hard coolers don't flinch in the face of snowstorms, the beating sun, or even bears, and our soft coolers are leakproof, waterproof, and quick to carry. As for our foldable lunch bag, that's only for those of you who enjoy ice-cold drinks and a fresh meal on your lunch menu."

     

    Storing Food in Your Car

     

    When I go on a road trip, I get shallow plastic boxes. Why shallow? I can more easily organize my food and see my food because it's one layer deep and not several layers. If you get containers with a sunken top, you can easily tape a paper label to the bin so you can see what is in that container. Put canned, aluminum packaged, nut butter, snacks, and other sealed items in these bins. 

     

    Make sure to not leave open food in containers or your cooler, especially if you are in bear country. They can peel down a locked door car window to get to your food. Definitely NEVER store or bring any food, toiletries (because they smell like food to a bear), or any food wrappers into your tent. This will attract bears at night, and they don't like that you are preventing them from getting to their food.

     

    Gluten-Free Snacks for Hiking

     

    If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags.

     

    For example, if you have 14 different types of squeezable fruits, put all the squeezable fruits in one Ziploc bag. This way, when you are packing snacks for a hike, you can easily find what you want, and choose a flavor. You can tell your kids that they get to pick three snacks, from any of the snack bags you have brought. This is an easy way to give out and pack snacks before a hike.

     

    You can also give each child a Ziploc with their name on the front with a permanent marker. This way, their bag is their responsibility, and they won't accidentally take someone else's snacks when it's time to stop and eat. 

     

    My Favorite Gluten-Free Hiking Snacks

     

    In previous podcasts, I've talked about how you can avoid messy foods when you pack for travel. This also includes camping and hiking. In Utah, especially in the summer, it gets scorching here! Anything and everything, including lip balm, will melt inside your car. Make sure not to bring snacks with a coating or that have large amounts of chocolate. This is especially true with protein bars and cookies, make sure to try them out first before you take them camping with you.

    Marinating Gluten-Free Foods

     

    An easy and efficient way to prepare your marinated food is to take your favorite gluten-free salad dressing and place your meal to be marinated into a double Ziploc. If you are using tofu, make sure to use firm tofu and plan to eat the first or second night, as tofu can fall apart quickly. Also, make sure to cut in thick slabs to be more sturdy.

     

    For a quick and easy marinade, take your food to be marinated, add favorite salad dressing, place in double Ziploc, close bag, take all air out, then seal. Keep cold until ready to use.

     

    Gluten-Free COVID Camping Soups

     

    To create easy soups, prep and blend your spices ahead of time and put them in an air-tight container. Label your container. Use dried spices instead of fresh if you are not going to use them in the first two days. Then, bring along canned items that you are going to use to make your soup. Make only the amount you need for one night - storing leftovers is time and energy-consuming.

    How KaPop! Snacks Started

     

    Dustin Finkel, standing at 6’6, is the head KaPoP! At his startup, KaPop Snacks. His CEO position at his own gluten-free snack company has given him an appreciation of what a small company CEO brings to the table. He founded KaPop! Snacks as he was looking for a snack which was nutritious, clean and tasted great; however, a snack of this proportion was nowhere to be found.  Dustin created KaPop!     “Many ancient grain products have fillers such as corn” says Dustin and I have recently experienced the same thing! Using more ancient grain products recently, I’ve found that not only do many of these have corn, they also have rice, sometimes as the main ingredient. I was shocked to find out how many products which have the phrase “ancient grain” on their label either have very little ancient grain or are mixed with other common grains, such as corn. KaPop! Is an authentic ancient grain snack, not mixed with grains that can cause allergens.

    Dustin is a CrossFit instructor, spent 15 years in CPG, and was previously an Investment Banker at Goldman Sachs. While at his corporate position, Dustin launched the first gluten-free product to go national with Gluten-Free Chex. 

     

    Personally, he is a health enthusiast, he loves fitness, and loves eating even more! He is a CrossFit instructor and trains many of his neighbors and friends. He is constantly battling the desire to watch every ingredient that goes into his body with the desire to just enjoy eating! One night, he and a few friends gorged on “healthy chips”only to find out when they read the bag that the “healthy” snack was high in empty calories and bad fats. Surprisingly enough, they didn’t even taste that great. Justin knew there had to be a better way! He thought, “What if I could take the snacks everyone loves – like chips, snack bites, treats, and popcorn and just do them over with better ingredients?”. Being a Paleo enthusiast since 2007, he soon realized he had a bunch of ancient grains in his pantry. He thought, what if he could make a snack with ancient grains?!

    Utah Hiking Trails to Beat COVID-19 Boredom

     

    While working at an insurance agency, Alicia from Girl On a Hike started looking for information on hiking trails in Utah. An avid hiker, her friends, would ask her about the hikes she went on when we're good times to go, and which trails she liked the best. A friend suggested she start a blog on hiking trails in Utah. After looking around the internet for hiking trail information, Alicia couldn't find the detailed information she was looking for: what to expect on the trail, step by step information with pictures, and which trails were dog friendly. She wanted to make her blog stand out from other blogs, apps, and information on Utah trails, "I wanted to put stuff in there that nobody else had," so she started her own blog Girl On a Hike.

     

    Building Her Blog Girl On a Hike

     

    Knowing nothing about coding and web design, a friend directed her toward Blogger. Alicia wasn't sure if she wanted to stick with her blog, "I liked to write, but I've never written trail guides. I didn't know if this was for me if this was worth the time and money I had to put into this." She started on this platform, but ultimately her need for her own site sparked an interest to change her career to coding and web design. 

     

    Choosing a Trail for Her Blog

     

    Alicia takes notes in her notes section, and her "to-do hiking list gets longer every year." She has many trails she would like to hike, but can't get to all of them by December. "Even though I feel like I've explored a lot of Utah, I feel there are so many trails I haven't explored."

     

    Basing Her Vacation Around Hiking

     

    "I travel to explore and find new areas," she says of her vacation plans. She isn't the stay by the pool and sips a drink kind of gal. Alicia plans her entire trip around backpacking and hiking trails. She also takes her dog Charlie, who recently turned eight, along with her on all her hikes and adventures.
