Finding Gluten Free Friendly Food Tours While Traveling

Are you scared to take a gluten free food tour? Even with my experience, I avoid food tours because I don’t trust that someone else will ask the right questions for me. Today, I chat with Katrina McGhee, who is gluten intolerant - not Celiac - about how she approaches and asks about food tours. Caution: If you’re Celiac you will want to use your own judgment with food tour safety. Look for a food tour with dedicated gluten free restaurants or a completely gluten free food tour.

Questions to Ask Food Tour Operators

If you find a food tour, look to see if they mention food allergies or accommodating food allergies. If they don’t, you can reach out to the tour operator and ask them directly the following questions:

    • Have you had someone with a food allergy on your tour?

    • What gluten free offerings do these places have?

    • Are all these locations familiar with gluten allergies?

    • What is the protocol at these places?

    • Do you offer exclusive gluten free food tours?

Be Cautious When Booking a Food Tour

Even when you ask all the right questions, you can still end up getting food you can’t eat. Although my guest did a variety of food tours, I personally wouldn’t book a food tour. Why? Because they are too risky to chance getting sick because I have to depend on the knowledge and experience of someone else to vet food establishments and I’m not personally willing to take that risk.

Katrina is gluten intolerant, not Celiac, and if you're intolerant you have more food options. You don’t have to worry about cross contamination and you don’t get as sick. My advice is if you’re intolerant, you could safely eat on a food tour. If you’re Celiac, I wouldn’t book a food tour unless it was a tour in Italy or another gluten-free friendly place, and the tour locations were exclusively gluten free. For me, it would be too stressful and not fun if I had to watch everyone else enjoying their food after I paid for a food tour ticket on my vacation.

    Makeena App with Karen Frame

In this episode, we get into the development of Karen Frame’s Makeena app, the only app that offers rebates online for gluten-free and specialty diet foods! “Makeena is a free, easy to use loyalty app that earns you cashback and rewards after you purchase healthy & eco-friendly products at any retailer.”

    How Makeena Started

Karen’s dad was a science professor at the University of Illinois. Through her dad, she learned science, mathematics, social studies, and English on a device that was a touchscreen back in the ’60s and ’70s.

After she married, she and her husband went to a small natural foods and products store in Urbana, Illinois, called Strawberry Fields. “ Their team was helpful and would always point you in the right direction.” Moving to Boulder in 1993, Karen and her husband shopped at Alfalfa’s and Wild Oats. These were much bigger stores compared to their old hometown store, Strawberry Fields. That was the “aha” moment where she realized she should build touchscreen kiosk systems that allow the consumer to navigate the retail environment.

Karen tells the story of how her journey culminated in blazing the path of the Makeena app. “I felt like I had all these different roads, and they all led to Makeena. It was an intersection of what I should be doing. I am really passionate about the idea that if we could make better-for-you products more affordable and accessible for everyone anywhere they need to shop, then we’re going to have a cleaner planet and a healthier population. This is the bigger vision that I have as the founder. That’s what keeps me going because it is tough to be a founder.”

How Karen Decided on a Name for Makeena

“Keena” means ‘happiness’ in Swahili, ‘‘abundance’ in Hawaiin and ‘machine’ in Arabic. The name was also available as a website and was available for national trademark. She likes that her platform gives brands a “stamp of approval for curation.” Because Makeena stands for ‘happiness’, she wants to make sure that both the shopper and the brand are happy. Karen also wants to make the world “a cleaner place” and that there is abundance for everybody - for consumers and brands. Technology comes in on the app side of her business, making this information available through her app on the world wide web.

    Guest Bio

Karen is passionate about being an entrepreneur and making the world a better place. She firmly believes that building a technology company in the natural products space will encourage people to shop healthier because Makeena will make it easy for them to make smarter choices. Karen became an entrepreneur in the early 1990s when she moved to Boulder, Colorado, and built and operated two interactive touchscreen kiosk companies, one for the real estate industry and one for the natural products industry.

Since then, Karen has been general counsel for several emerging growth and publicly-held software and data analytics companies. Karen earned her degree in accounting and business from Indiana University and a CPA and a law degree from the University of Illinois. She also attended Oxford University, focusing on international business transactions, and taught Principles of Business for Entrepreneurs in the Cross Campus Entrepreneurship Certificate Program at the University of Colorado.

Gluten Free COVID Camping Snacks and Foods

Since many people have been camping for their COVID vacation, I wanted to share with you great gluten-free food prep tips for creating meals, camping snacks, and food storage when you're camping. I've learned these experiences the hard way by making mistakes while on the road and eating out of the back of my car or at the campfire. Take steps to eliminate the hassle and expending energy on clean up when you're camping with these camping COVID-19 tips!

I love camping. I love the outdoors, sleeping outside, sleeping in my hammock, having a campfire every night, not caring about smelling like campfire smoke or makeup. The beautiful trails I hike and the out-of-the-way places I find when I'm taking that road trip to my next camping spot. There are so many things to love!

    Storing Food for COVID Camping

    Ice

Use dry ice! There are several reasons not to use regular ice in your cooler.

    • Regular ice is heavier when you first get the ice and even heavier when the ice melts, and you have a pool of water in your cooler
    • Food in cooler gets wet when your ice melts
    • Have to throw out good, expensive food - ever tried to eat wet gluten-free bread?
    • Dry ice lasts much longer than regular ice.

Be careful not to touch dry ice with your hands as you can get a burn. Handle with paper or a towel! Although a bit more expensive, dry ice is worth the extra cost because of the benefits listed above.

    Coolers

Best cooler: Yeti coolers, they are pretty pricey, starting at $79.99 for a lunchbox, however; they are the best option when you are not going to be near any dry ice for days. The description from their website reads, "Extreme insulation power and durability are bare minimum requirements for every cooler we make — and we never stop there. Our hard coolers don't flinch in the face of snowstorms, the beating sun, or even bears, and our soft coolers are leakproof, waterproof, and quick to carry. As for our foldable lunch bag, that's only for those of you who enjoy ice-cold drinks and a fresh meal on your lunch menu."

    Storing Food in Your Car

When I go on a road trip, I get shallow plastic boxes. Why shallow? I can more easily organize my food and see my food because it's one layer deep and not several layers. If you get containers with a sunken top, you can easily tape a paper label to the bin so you can see what is in that container. Put canned, aluminum packaged, nut butter, snacks, and other sealed items in these bins.

Make sure to not leave open food in containers or your cooler, especially if you are in bear country. They can peel down a locked door car window to get to your food. Definitely NEVER store or bring any food, toiletries (because they smell like food to a bear), or any food wrappers into your tent. This will attract bears at night, and they don't like that you are preventing them from getting to their food.

    Gluten-Free Snacks for Hiking

If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags.

For example, if you have 14 different types of squeezable fruits, put all the squeezable fruits in one Ziploc bag. This way, when you are packing snacks for a hike, you can easily find what you want, and choose a flavor. You can tell your kids that they get to pick three snacks, from any of the snack bags you have brought. This is an easy way to give out and pack snacks before a hike.

You can also give each child a Ziploc with their name on the front with a permanent marker. This way, their bag is their responsibility, and they won't accidentally take someone else's snacks when it's time to stop and eat.

    My Favorite Gluten-Free Hiking Snacks

In previous podcasts, I've talked about how you can avoid messy foods when you pack for travel. This also includes camping and hiking. In Utah, especially in the summer, it gets scorching here! Anything and everything, including lip balm, will melt inside your car. Make sure not to bring snacks with a coating or that have large amounts of chocolate. This is especially true with protein bars and cookies, make sure to try them out first before you take them camping with you.

    Yes!

    Sesame based bars

    Justin's nut butters

Single serving if you don't have a nut allergy person with you

    Orgain bars and protein drinks

Blueberry almond bars and protein drinks in flavors

    Bobo's foods

    Stuffed oat bites

    Autumn's Gold

    Grain-free granola bars

    Veggie Copia

Pre-packaged olives and single-serve hummus perfect for hikes!

    Mozaics Chips

Great chips, come in single-serving bags

    Handfuls Snacks

The perfect alternative for regular trail mix comes in delicious flavors.

    Marinating Gluten-Free Foods

An easy and efficient way to prepare your marinated food is to take your favorite gluten-free salad dressing and place your meal to be marinated into a double Ziploc. If you are using tofu, make sure to use firm tofu and plan to eat the first or second night, as tofu can fall apart quickly. Also, make sure to cut in thick slabs to be more sturdy.

For a quick and easy marinade, take your food to be marinated, add favorite salad dressing, place in double Ziploc, close bag, take all air out, then seal. Keep cold until ready to use.

    Gluten-Free COVID Camping Soups

To create easy soups, prep and blend your spices ahead of time and put them in an air-tight container. Label your container. Use dried spices instead of fresh if you are not going to use them in the first two days. Then, bring along canned items that you are going to use to make your soup. Make only the amount you need for one night - storing leftovers is time and energy-consuming.

    S04 Episode 12

    KaPop Returns!

In this episode, we get into the crazy details of Dustin Finkel’s shark tank experience! What he did to prepare for his presentation, how he coordinated his staff for the experience, and what happened when his signs dropped down in the incorrect order. Find out which shark offered him a job after his presentation!

    How KaPop! Snacks Started

Dustin Finkel, standing at 6’6, is the head KaPoP! At his startup, KaPop Snacks. His CEO position at his own gluten-free snack company has given him an appreciation of what a small company CEO brings to the table. He founded KaPop! Snacks as he was looking for a snack which was nutritious, clean and tasted great; however, a snack of this proportion was nowhere to be found.  Dustin created KaPop! Snacks with ancient grains to fill these three requirements. His motto, to give people a snack with “Authenticity, simplicity and joy!”.

Be Aware of Ancient Grain Snack Ingredients

“Many ancient grain products have fillers such as corn” says Dustin and I have recently experienced the same thing! Using more ancient grain products recently, I’ve found that not only do many of these have corn, they also have rice, sometimes as the main ingredient. I was shocked to find out how many products which have the phrase “ancient grain” on their label either have very little ancient grain or are mixed with other common grains, such as corn. KaPop! Is an authentic ancient grain snack, not mixed with grains that can cause allergens.

    Why KaPop! Snacks are Popular

With 5-star reviews across many platforms, people are loving KaPop! Snacks as much as I do! One man loved KaPop so much after sampling them at a gluten-free conference that he went across the street to a tattoo parlor and had KaPop! Brand logo tattooed onto his arm!

    Gluten Free Camping and KaPop!

When you’re camping, you want a snack that is easy to eat, healthy and, if you’re hiking in hot weather, a snack with some salt. KaPop is an awesome snack to eat when you’re camping - it’s light and easy to carry, tasty and nutritious! You can get KaPop in 1oz snack size, which is great for kids, or 3oz., which is what I get when I order directly from KaPop!

Dustin Representing KaPop on Shark Tank

Dustin likens his Shark Tank exposure to having a “Super Bowl commercial for your brand.” Within 10 minutes of airing, his website went from five visitors to 50,000 visitors, 1.1 billion impressions and information exposure worth around $10 million. Listen in to find out who asked him out on a date and which shark asked Dustin to work for his company!

    Guest Bio

Dustin is a CrossFit instructor, spent 15 years in CPG, and was previously an Investment Banker at Goldman Sachs. While at his corporate position, Dustin launched the first gluten-free product to go national with Gluten-Free Chex.

Personally, he is a health enthusiast, he loves fitness, and loves eating even more! He is a CrossFit instructor and trains many of his neighbors and friends. He is constantly battling the desire to watch every ingredient that goes into his body with the desire to just enjoy eating! One night, he and a few friends gorged on “healthy chips”only to find out when they read the bag that the “healthy” snack was high in empty calories and bad fats. Surprisingly enough, they didn’t even taste that great. Justin knew there had to be a better way! He thought, “What if I could take the snacks everyone loves – like chips, snack bites, treats, and popcorn and just do them over with better ingredients?”. Being a Paleo enthusiast since 2007, he soon realized he had a bunch of ancient grains in his pantry. He thought, what if he could make a snack with ancient grains?!

Welcome to Spring Into Health! A series podcasts dedicated to health, healing and auto-immune disease.

Utah Hiking Trails to Beat COVID-19 Boredom

While working at an insurance agency, Alicia from Girl On a Hike started looking for information on hiking trails in Utah. An avid hiker, her friends, would ask her about the hikes she went on when we're good times to go, and which trails she liked the best. A friend suggested she start a blog on hiking trails in Utah. After looking around the internet for hiking trail information, Alicia couldn't find the detailed information she was looking for: what to expect on the trail, step by step information with pictures, and which trails were dog friendly. She wanted to make her blog stand out from other blogs, apps, and information on Utah trails, "I wanted to put stuff in there that nobody else had," so she started her own blog Girl On a Hike.

Building Her Blog Girl On a Hike

Knowing nothing about coding and web design, a friend directed her toward Blogger. Alicia wasn't sure if she wanted to stick with her blog, "I liked to write, but I've never written trail guides. I didn't know if this was for me if this was worth the time and money I had to put into this." She started on this platform, but ultimately her need for her own site sparked an interest to change her career to coding and web design.

Choosing a Trail for Her Blog

Alicia takes notes in her notes section, and her "to-do hiking list gets longer every year." She has many trails she would like to hike, but can't get to all of them by December. "Even though I feel like I've explored a lot of Utah, I feel there are so many trails I haven't explored."

    Basing Her Vacation Around Hiking

"I travel to explore and find new areas," she says of her vacation plans. She isn't the stay by the pool and sips a drink kind of gal. Alicia plans her entire trip around backpacking and hiking trails. She also takes her dog Charlie, who recently turned eight, along with her on all her hikes and adventures.

Listen in to find out where Alicia likes to take her dog the most, her favorite spots in southern Utah, and where you can and can't take your dogs in State Parks in Utah. Learn the guidelines for off-leash parks, Alicia’s favorite off-leash parks and why you should have excellent recall with your dog.

    Guest Bio

Alicia Baker is the owner of "Girl on a Hike," a blog that follows Alicia and her hiking companion, Charlie, a Golden Lab, on their outdoor adventures. She has lived in Utah for since 2013 and loves exploring everything from the High Uintas to the San Rafael Swell and desert. Each year, she and Charlie hike and backpack an average of 700 miles. "Girl on a Hike" has been awarded as one of the Top 100 Outdoor & Hiking Blogs from 2016 through 2019. She is also the author of "Salt Lake City's Best 52 Hikes", available only on Amazon.

Naltrexone for Relief of Auto-Immune Symptoms

Welcome to Spring Into Health! A series podcasts dedicated to health, healing and auto-immune disease.

Bioidentical Hormone Replacement with Peak Medical

Bioidentical hormone replacement therapy (BHRT) is all about finding the right balance of your body’s hormones to achieve your overall best health. Rory and Amie of Peak Medical talk about BHRT, symptoms which result from hormone imbalance for men and women and treatment. They start with a simple blood test to check your hormone levels, and follow-up with a thorough, hour-long individual consultation to explain the results, discuss your health goals, and answer questions. BHRT is not a one-size-fits-all solution. Peak Medical customizes plans for each individual. They monitor your hormone levels and adjust your hormones to keep you at your optimal health.

Naltrexone’s Effect on Auto-Immune Disease and Inflammation

Naltrexone is a drug that blocks the opioid effects of drugs. The opioid effect is also known as pain relief. Naltrexone, given in doses of 50mg or 100mg, blocks opioid drugs, aka narcotic drugs, from attaching to our nervous system receptors. However, researchers have found that given in small doses, Naltrexone has huge benefits for those suffering from an auto-immune disease, specific types of cancer and IBS, among others.

    How does Naltrexone Work?

Naltrexone will bind to the receptors in your body which creates inflammation. Chronic disease leads to a chronic inflammation cycle. Naltrexone binds to your opioid receptors, not allowing your body to inflame and break the inflammation cycle.

    My Experience with Naltrexone

I’ve been living in pain daily, with few exceptions for the past two years. While seeing Amie and Rory at Peak Medical for weight loss and hormone balance, I relayed to Amie that my pain level had been rising the past few months and I wasn’t able to get my pain under control. She had recently been to a medical conference and heard a speaker talk about Naltrexone for symptoms of auto-immune disease and asked if I’d like to try out Naltrexone. I said yes!

Within two days of starting 1.5 mg of Naltrexone per day, almost all of my body, muscle, and joint pain were completely gone, along with my overall body stiffness. I felt that I’d been given a new body! Not only was my pain gone, but I was also able to work out better and feel better post-workout as a result of being in less pain! This drug is amazing! A friend of mine who had similar symptoms took Naltrexone and had similar results.

Starting off at 1.5mg, the Naltrexone dose is elevated over time until correct dosing is found. I’m currently at 3mg per day and started taking Naltrexone about six months ago. I love the way I feel and although I do get flare-ups, I can manage them much better.

I’d highly recommend clicking the link at the bottom of the show notes and making an appointment with Rory and Amie. They have literally changed my life for the better!

Solving the Gluten-Free Puzzle with Susan Neal

Welcome to Spring Into Health! A series podcasts dedicated to health, healing and auto-immune disease.

Did You Know There are Four Types of Gluten-Related Disorders?

Susan and I chat about the four types of gluten-related disorders: celiac disease, non-celiac gluten sensitivity, wheat sensitivity, and wheat allergy. These four conditions affect about ten percent of the population, however; over half of those individuals do not realize they have this health issue because their symptoms range from gastrointestinal distress to joint pain. Individuals aren’t making the connection between diet and their body reacting negatively to wheat or gluten.

    Gluten Sensitivity and Wheat Allergy

When her sister was diagnosed with nonceliac gluten-sensitivity, Susan realized how hard the gluten-free lifestyle was to adjust to from a regular diet. As a child, Susan was allergic to wheat but grew out of the allergy as a teen. When she had a health crisis eight years ago, she was tested and realized she became wheat sensitive. She was inspired to write her book Solving the Gluten Puzzle: Discover if You are Gluten Sensitive and How to Embrace the Gluten-Free Lifestyle? to help others discover if gluten might be an issue and how to transition to a gluten-free diet.

Solving the Gluten Puzzle helps readers put together your health care puzzle as there is no specific test to diagnose non-celiac gluten sensitivity nor irritable bowel syndrome (IBS). Therefore, the lack of testing creates extreme difficultly to attaining a proper diagnosis. Celiac disease has increased by 400 percent in the past fifty years; scientists believe there must be external factors causing the rise in this disease.

    Non-Classic Celiac Disease

Celiac disease is an autoimmune disorder whereby the body attacks its own gastrointestinal system when a person ingests gluten. However, with non-classic celiac disease, an individual may not even suffer from typical GI symptoms and not be aware they have celiac disease. Anyone can develop celiac disease at any age with any combination of over 200 celiac disease symptoms. To obtain a proper diagnosis the person must be eating gluten when being tested.
