    Memorable Moments:

”This diet has made a difference in us even being able to travel. So of course we’re going to stick with it because I, myself, having been gluten free for a couple of years, know when I get some gluten and how badly I feel. And the last thing I want is to feel that way on vacation…and the same is true for my child.”

”We’re not going to fudge it. People are always like, ‘You have to live a little bit.  You’re on vacation.' Absolutely not. That’s the worst piece of advice.”

”I strongly recommend that you practice before you go…what you need to say to keep your family safe.”

”I really want to encourage folks not to be apologetic and afraid to speak up. We’re so afraid of being a hassle, being a bother. But many people who work in the food industry…they love to make their guests happy…So give them the opportunity.”

”You go from overwhelmed, ‘I can’t possibly do it. It’s too hard,' to ‘I can do it, and I feel better.’ It’s so worth it!”

”ADHD kids thrive on routine…That is still true on vacation.”

”It’s not the vacation you used to have….There’s still a lot of mental load involved in planning.”

    Season 09 Episode 11

Gluten Free Food Tours with Katrina McGhee

Finding Gluten Free Friendly Food Tours While Traveling

Are you scared to take a gluten free food tour? Even with my experience, I avoid food tours because I don’t trust that someone else will ask the right questions for me. Today, I chat with Katrina McGhee, who is gluten intolerant - not Celiac - about how she approaches and asks about food tours. Caution: If you’re Celiac you will want to use your own judgment with food tour safety. Look for a food tour with dedicated gluten free restaurants or a completely gluten free food tour.

Questions to Ask Food Tour Operators

If you find a food tour, look to see if they mention food allergies or accommodating food allergies. If they don’t, you can reach out to the tour operator and ask them directly the following questions:

    • Have you had someone with a food allergy on your tour?

    • What gluten free offerings do these places have?

    • Are all these locations familiar with gluten allergies?

    • What is the protocol at these places?

    • Do you offer exclusive gluten free food tours?

Be Cautious When Booking a Food Tour

Even when you ask all the right questions, you can still end up getting food you can’t eat. Although my guest did a variety of food tours, I personally wouldn’t book a food tour. Why? Because they are too risky to chance getting sick because I have to depend on the knowledge and experience of someone else to vet food establishments and I’m not personally willing to take that risk.

Katrina is gluten intolerant, not Celiac, and if you're intolerant you have more food options. You don’t have to worry about cross contamination and you don’t get as sick. My advice is if you’re intolerant, you could safely eat on a food tour. If you’re Celiac, I wouldn’t book a food tour unless it was a tour in Italy or another gluten-free friendly place, and the tour locations were exclusively gluten free. For me, it would be too stressful and not fun if I had to watch everyone else enjoying their food after I paid for a food tour ticket on my vacation.

What Does it Mean to Be Gluten Free?

What Does it Mean to Be Gluten Free?

    Travel Gluten Free Podcast

    Season 09 Episode 09

What Does it Mean to Be Gluten Free?

What does it mean to eat gluten-free? Find out when my friend Marvin from the Live Healthy Podcast interviews me on his show! On this episode of Travel Gluten-free Podcast, you’ll find out about me, how I came up with my name Elikqitie, along with questions and answers which my friend Marvin asked me about how to be gluten free.

What Does it Mean to Be Gluten Free?

Being gluten free means that you aren’t eating any foods that contain gluten. So what’s gluten? Gluten is the protein found in several grains including wheat, barley, triticale, and other grains. When you don’t eat gluten, you are eliminating any grain that contains gluten along with any processed foods that contain gluten including those with ingredients such as: modified food starch, hydrolyzed protein, and natural flavors or spices as these ingredients all have the possibility to contain gluten.

Eating Gluten Free as a Preference

If you’ve eaten out or you’ve talked to anyone breathing on the face of our planet, you know that some people eat gluten-free to try it out or as a preference. While that is fine, there is a significant distinction between eating gluten free as a preference and avoiding gluten because of medical reasons such as Celiac disease or a food allergy.

Adjusting to Gluten Free Eating and the Gluten Free Lifestyle

While some people find out about Celiac disease as a child and grow up eating gluten free, I didn't find out until the age of 42. Being of French and Italian descent, I believed that my gastronomic enjoyment was over because I didn’t think I would ever be able to eat bread or pasta again. However, there are some amazing food brands out there and I can enjoy almost any food that I want in its gluten-free form. Learning how to make food again was challenging, but the real challenge was knowing how to eat when I’m not in the city that I live - the big challenge is learning how to travel gluten free!

Best Places to Travel When You’re Gluten Free

Marvin turns the table on me when he asks me the best places to eat for gluten free travelers, where I’m going on my next trip, and what I miss the most. (Note: since we recorded this show I have gotten my fix of buttery croissants and I would love to go back to the European bakery and get more!).

    What is in Gluten-free Bread?

    What is in Gluten-free Bread?

    Travel Gluten-Free Podcast

    Season 08 Episode 27

    What is in Gluten-free Bread?

The holiday season is upon us, and it’s that time of the year we will be doing lots of cooking for our family and friends, so we need to be extra careful to ensure our food is gluten-free. Join us in today’s Travel Gluten-free Podcast as we talk about what is in gluten-free bread as we also look in depth at gluten-free grains and non-grain gluten-free flour.

    Gluten-free Versus Certified Gluten-free

In America, it takes up to six months to pull a product that doesn’t have the correct label off the shelf, so you want to be keen on any product labeled as gluten-free because it might have been processed in a facility that handles wheat. Find out why as a Celiac, you should always go for certified gluten-free products. I will also share the certifications that come with certified gluten-free foods.

    Gluten-free Bread Ingredients

Listen in as I share the different non-grain gluten-free flour, usually made from root vegetables or nuts. Gluten-free grain flours are okay for Celiacs so long as they are produced in a facility that doesn’t handle gluten. Find out some amazing grain-based gluten-free flour to bake your bread.

Additional Ingredients for your Gluten-free Bread

Gluten-free bread tends to be a little drier because they lack gluten. I share the trick I use to make my gluten-free bread moist, plus other ingredients that will make your bread tastier and fluffier whether you are vegan or not. Also, find out why I picked  Simple Mills as one of my brand partners as I take you through some of my favorite ingredients from Simple Mills.

    The Ten Places Gluten Hides

Upon learning that she had Celiac disease, Miri Pizan  was dismayed to discover how little the general public knew about food allergies and set about educating everyone on how to accommodate those with medical food restrictions, to build stronger community bonds. In today’s Travel Gluten-free Podcast, Miri Pizann from the Safely Sated Gluten Free Consulting, joins us as we talk about the ten places gluten hides.

    Miri’s Gluten-free Journey

Acid reflux issues and some discomforts here and there was Miri's starting point in discovering she was gluten intolerant. Miri shares with us the challenges she faced while figuring out what was safe to eat after being diagnosed with Celiac and how she came to learn of so many alternative foods that are gluten-free and tasty. In her journey, Gluten-free cookbooks were a major resource that Miri relied on to identify recipes. Listen in as Miri shares with us some of her favorite gluten-free cookbooks.

The Founding of Safely Sated Gluten-free Consulting

Receiving a vote of confidence that she could educate others on the gluten-free lifestyle, from a member of her women’s group, set Miri on the path of starting Safely Sated Gluten-free Consulting. Miri talks about how her experience and knowledge of a Gluten-free lifestyle were fundamental in running Safely Sated Gluten-free Consulting.

What Should Be Your  First Step After a Diagnosis with Celiac

How do you have fun and enjoy good things while living a Gluten-free life? This is a fundamental question many Celiacs have to answer for themselves. Miri suggests starting with easy wins by beginning with easy recipes and using readily available ingredients. Listen in as Miri shares some great foods to try out and what to avoid as you adjust to living a gluten-free life.

    The Places That Gluten Hides

Miri recommends finding hidden gluten as another important step to take as a newly diagnosed Celiac. Soy sauce, Licorice, some mixed spices, toothpaste, pet food, and cosmetics are among products we use frequently that have hidden gluten. Miri takes us through a comprehensive list of items that contain gluten and should be avoided. Besides what to avoid, Miri also highlights some great alternatives to ensure you pick products that are safe for Celiacs.

    Extra Benefits of Eating Gluten-free

Maintaining a healthy weight, being more open to trying out new recipes that are more nutritious, and having an enhanced taste bud are a few of the additional benefits of living Gluten-free. We discuss some of the benefits we have enjoyed as a result of adopting the Gluten-free lifestyle.

    What’s For Gluten Free Breakfast?

    What’s For Gluten Free Breakfast?

    Travel Gluten-Free Podcast

    Season 08 Episode 14

    What’s For Gluten Free Breakfast?

Most people assume that breakfast meals like bacon and sausages are gluten-free because they are made of meat protein. However, you'd be surprised where you would find gluten lurking in your breakfast! In addition, you'd also be surprised about the many gluten free breakfast options that are available to you! In today's Travel Gluten-free Podcast, I will take you through some fantastic ideas for your gluten-free breakfast and what foods to avoid if you're Celiac or gluten intolerant.

Foods to Avoid for your Gluten-free Breakfast

Breakfast cereals are an everyday staple in the American diet. But be forewarned: there is no lack of gluten in cereals! Many people believe that rice cereals are safe because they are rice-based. However, in my experience, I've found that many rice cereals have gluten!

Malt sweetener or malt flavoring, a common sweetener for rice cereals, is made from barley, which has gluten. I share why you should be careful when consuming breakfast cereals with rice and, ultimately, why you should avoid any foods containing malt or maltodextrin. I cover reasons to look out for maltodextrin in breakfast meats and other breakfast foods and how to label read to ensure your breakfast sausages and bacon are gluten-free.

I also discuss why you should be careful with oats as a Celiac and share some gluten-free oat brands. With oats, you want to ensure that they are purity protocol or certified gluten-free because of the cross-contamination during processing. In addition, you can be sensitive to oat protein. Listen in to learn more details about why oats may affect you if you have Celiac disease.

Food Ideas for your Next Gluten-free Breakfast

Keto cereals are a good choice for a gluten-free breakfast, especially for those on the keto diet or if you're looking to cut out or reduce the amount of sugar in your diet. Discover some fantastic gluten-free keto cereal brands, what to look out for in keto products and why all keto products are not gluten-free.

Find out why certified gluten-free granola is a great option to include in your breakfast and where to find them. Gluten-free bagels and bread are an excellent addition to your breakfast; I share with you some great bagel and bread brands on the market. Since dairy can be hard on your body if you are a Celiac, I'll share why you can find a great alternative to dairy in plant-based protein drinks. In addition, I share some out-of-the-box ideas for your gluten-free breakfast, such as smoked salmon and the healthy fats you can add to your gluten-free breakfast.

Cooking Gluten Free Jewish Foods with Matt Weinstein

Finding healthy and delicious alternative gluten free recipes is always a challenge for many of us who have Celiac disease. In today’s Travel Gluten-free Podcast, I’m excited to host Matt Weinstein from the Glass of Weinstein. Matt is a dedicated gluten-free cook and content creator. Listen in as we talk about his Jewish heritage, how he started cooking gluten-free Jewish foods, and his process for recipe development.

    Discovering Celiac Disease

Matt talks about how he discovered he had Celiac in 2014. He found out after experiencing symptoms he thought were caused by other factors. We recorded this episode in May, which is Celiac awareness month. Matt emphasizes the need to have more enlightenment to the public on the effects of Celiac since most people haven’t grasped the seriousness of the disease.

The Glass of Weinstein Gluten Free Jewish Recipes is Born

Matt credits his mum for arousing his curiosity and love for food through her love for cooking which came out even more during the big Jewish dinner like Yom Kippur.

The Glass of Weinstein was born during the pandemic. With theaters closed and Matt in the theater business, Matt didn’t have much to do. So he turned to his love for cooking for inspiration and eventually discovered that remaking his traditional Jewish foods into a gluten-free recipe was a great way to share delicious traditional Jewish foods while transforming them into amazing gluten-free recipes.

How Matt Created his Gluten Free Recipes

Gluten-free food has a reputation for being subpar. Matt gets his motivation to make his recipes by turning around this stereotype of gluten-free food. Matt has a true passion for delicious gluten-free food, constantly testing out recipes to create delicious gluten-free meals! Listen in as Matt shares some of his favorite recipes at Glass of Weinstein. Being a lover of fine wine, Matt also talks about types of wine and cider and how he incorporates them into his recipes.
