Grant shares his journey from urban life to livestock farming. He explains how he started with pigs and gradually diversified his farm to include layers, goats, and beef cattle. His strategic buying and selling in the commodity market allowed him to grow his herd from two to 24 cattle. He also emphasizes his commitment to environmental stewardship, using innovative composting methods and implementing wildlife conservation initiatives on his farm. Food and beverage companies across the supply chain must always be prepared for new regulatory developments in 2022 as they seek to bring new ingredients and products to market. In this episode of the Xtalks Food Podcast, Sydney talks about four potential new food industry regulations that food and beverage companies should look out for this year, including changes to the FDA’s definition of “healthy,” labeling clarity on lab-grown meat, regulating heavy metals in baby food and cannabinoid regulations. A common theme among these regulations is that multiple federal agencies must work together to move the needle, which takes time, money and resources. The team emphasise that the FDA’s focus should include food just as much as it does drugs and that these regulations are in place to keep consumers safe. 

Also, in this episode, Sydney talks about a public health alert related to concerns that the ground beef in some HelloFresh meal kits may be associated with E. Coli illness. While the FDA would normally issue a recall, no recall was issued because the products are no longer available for purchase. The public health alert comes as some federal health authorities in the country are investigating an outbreak of E. coli, with ground beef being the probable source of the illnesses. Sydney gives two other examples of ground beef-related E. Coli outbreaks and discusses the symptoms and facts about the foodborne illness. The team wonder whether companies should be blamed for not doing enough to prevent an outbreak or whether they are to be expected.

The stories of the late Union Stockyards, lovingly known by many as the Omaha Stockyards, are a cultural icon and marker of years gone by. In this episode, regional historian Ryan Roenfeld gives us the *beef* on the rise and fall of the Omaha Stockyards. We discuss the factors and influences that led to the stockyards’ development and rapid boom. Then, we dissect the demise of the yards and some of the economic and cultural impacts of the stockyards that remain today. As a special bonus, Ryan also shares his insight on some other Omaha historical icons, including the Old Market historical district. Even if you’ll never be caught dead saying “Go Big Red,” this episode will have you feeling like an honorary Husker!

Ryan Roenfeld is a 6th-generation resident of southwest Iowa and the author or co-author of numerous local historical works concerning the Omaha/Council Bluffs metropolitan area. He has also had short fiction published by Thirteenth Floor Magazine of Omaha, Nebraska and Text-Lit Mag of Nanaimo, British Columbia, several nonfiction articles in Omaha magazine, as well as poetry by Off-Beat Pulp of Kansas City, gloomcupboard.com, and the University of Iowa's Daily Palette. Mr. Roenfeld also published extensive music reviews in the Iowa City Icon newspaper as well as the West Coast and Northeast editions of Performer Magazine.

They spotlight the Farmer Veteran Coalition and give listeners a useful trick for knowing whether a cow has been grass-fed.
