    Born in and raised in Ecuador, Veronica Fitzgerald moved to the US with her family in North Carolina as a teen. Growing up she was treated to her grandmother's empanadas on a regular basis, eventually learning how to make them as well. Years later, she treated her family and friends to her empanadas, and subsequently the pandemic inspired Veronica to create her business, V Empanadas. Soon thereafter, V-Empanada's was a hit, and she opened a shop inside Lancaster County Farmers Market. So, the next time you visit, be sure to check out Veronica's freshly made Empanadas and scratch-made guacamole, sauces, and desserts when you're there!

    The best way to end a meal is with something a little sweet--something that Pastry Chefs Sally Gadea and her husband Jemil know a lot about. Both Allison and Jemil have years of experience working as Executive and/or Corporate Chefs for high-end restaurants over the years; a key aspect that has helped refine what they offer inside their Yardley, PA-based business, Panna Gelateria. Of course owning and running a business takes a lot of skills too--and the pair sought out help from SCORE in Bucks County, PA. to aid them in getting started. So, a little help from their SCORE business mentor and the combined culinary pedigrees from both Chefs later...Panna Gelateria and Bakery was born. Now, you can indulge your sweet & savory cravings when you visit Panna Gelateria. Their menu offerings will always keep you interested--they have an ever-changing menu of small-batch gelatos, pastries, and more!

    Who let the dogs out? Allison and Sam Mattiloa did! And they invited all of your (fully vaccinated and trained) pups to the party too! Inspired by the pandemic to finally add a fur-baby to their family, Allison and Sam adopted Buda into their lives. But the pandemic lasted longer than anticipated, so the Brewerytown couple were fur-ther inspired to create a human and dog-friendly space to safely socialize. That space, called The Boozy Mutt, incorporates a bar, restaurant, and an indoors & outdoors space for pups and their fur-friends to play.     Desde Tinku nos llamó la atención varios titulares de noticias del dia de ayer que hablan de las tendencias de los consumos en España y también a nivel global

    • Las ventas del sector del dulce en España se elevaron un 12,2%, hasta alcanzar los 6.757 millones de euros en 2022, un ejercicio marcado por la inflación de costes de sus principales suministros, según los datos del informe anual 2022, elaborado por la Asociación Española del Dulce (Produlce), que integra a 69 empresas fabricantes.
    • Sabores Express, cadena argentina de empanadas, desembarca en España, donde se ha marcado como objetivo alcanzar los 100 locales en los próximos dos años, según informa en un comunicado.
    • Las acciones de la cadena estadounidense Domino’s Pizza se han disparado más de un 11% en Wall Street tras conocerse este miércoles que la compañía ha alcanzado un acuerdo con Uber Technologies para el reparto de sus productos a domicilio.
    • Las ventas en el mercado español de productos de panificación y pastelería industriales crecieron un 19% en 2022, tras el aumento del 3% del año anterior, alcanzando los 4.900 millones de euros, en un contexto de sensible repunte de los precios, según los datos del estudio Sectores ‘Panificación y Pastelería Industriales’ publicado por el Observatorio Sectorial DBK de Informa.
    • Grefusa, compañía dedicada al sector de los snacks, frutos secos y horneados, ha elevado sus ventas un 12% en 2022, alcanzando los 153 millones de euros, cifra que ha duplicado en los últimos diez años, y ha mantenido su margen de beneficio gracias al impulso del consumo fuera del hogar, según informa en un comunicado.
    • La multinacional de ‘snacks’ y refrescos PepsiCo cerró el segundo trimestre con un beneficio neto atribuido de 2.748 millones de dólares (2.467 millones de euros), lo que equivale a un avance del 92,3% en comparación con el mismo periodo del ejercicio anterior, según las cuentas publicadas por la compañía, que ha revisado al alza sus expectativas para 2023.
    • La Asociación de Productores y Exportadores de la Fresa de Huelva, Freshuelva, ha informado de que el sector ha culminado la campaña 2022-2023 con una producción total de 243.310 toneladas de fresas, lo que supone un descenso del 10% respecto a la campaña pasada, según los datos aportados por las empresas asociadas.

    Conclusiones

    Parece que la tendencia es que crece el consumo de comida procesada y poco saludable y a la vez disminuye de manera significativa el consumo de productos saludables.

    With Caribbean and Pacific coastlines, rain forests, jungles, great valleys and rivers flowing from the Andes Mountains, desert, and fog forests, Colombia is a country with deep regionality and distinct food, culture and customs. As the country exports more and more talent in music, innovation, art, design, fashion, and now food, today we are going to introduce you to a brilliant tastemaker, chef, and food stylist, Mariana Velásquezz, a native of Bogotá. She’s spent the past two decades residing in New York and cooking in restaurant kitchens, food styling, and writing/collaborating  on cookbooks and published her own cookbook called Colombiana, which she says brings it all full circle. Mariana shares why Colombia's culinary philosophy means ‘more is more’ and the inherent joy and generosity present in its cuisine, and culture, which anyone traveling to the region will immediately savor.

    In this episode we talk about:

    • Mariana’s childhood memories of her grandmothers and the strong women in her family who modeled for her how to ‘dress’ a table.
    • How she followed her passion in food abroad, honed her skills and eventually meshed her love of aesthetics into food styling.

    • Her cookbook creation journey, the challenge faced when the pandemic hit, and how she pivoted.

    We opened the hood on Food Farms & Chefs by introducing all of you to Dan Hernandez, who owns and operates the Spirit of San Juan food truck. Hernandez' latin-based food truck offers a variety of Puerto Rican cuisine, including empanadas, alcapurrias, and his famous (and very popular) Pernil Asado.  We first met him at an event, and it was love at first bite!  So of course we had to have him on so that all of our fans could fall in love with the Spirit of San Juan too!   We then hit the road and visited the hugely successful Mama's Meatballs, which is owned by Joe & Katherine Argento.  The couple, who had previously owned a restaurant in Lebanon, PA, were looking for a new location with room to grow.  They found that opportunity in Pennsauken, NJ when Mama's Meatball's previous owner was looking to sell, and the Argento's family was ready to take on the business.  Since doing so they've made the meatballs their own and expanded upon the menu--creating delicious additions that fans of Mama's Meatballs immediately loved.   Of course we can't fill you up with food and not offer something to quench your thirst.  That's why we had co-owner of Spellbound Brewing, John Companick, join us on the show!  Companick and his partners opened the doors to Spellbound Brewing in 2014 after years of homebrewing and contemplation--and it was evident that New Jersey's love of beer has been brewing for a long time!  Several years and awards later, Spellbound Brewing is gearing up to celebrate their anniversary this October 8th with a plethora of the craft beers on tap, live music, and a lot of fun to be had!     Michele shares some mental health tips for frontline workers. Today’s guest is Emily, a dietitian at a hospital in Los Angeles. Emily moved from New York to LA in the middle of the pandemic to help her girlfriend open a restaurant that serves Latin American / Asian fusion empanadas and because LA is a nicer place to quarantine. Emily explains how she became a registered dietitian, how it’s different from calling yourself a nutritionist, and the rewarding components of her job, including helping people learn how to eat a healthy diet. 

    She shares her experience of being an essential worker during this stressful time, catching the ‘rona, getting the Covid vaccine, and the satisfaction of having a doctor listen to you. The ladies also discuss the preventative aspects of therapy and how Emily probably had a bad therapist once.

    This week on Food Without Borders, host Sari Kamin is joined in the studio by Ariel Barbouth, founder and CEO of Nuchas, which brings Argentinian food staples to NYC. In 2011, Nuchas opened its first retail location in Times Square, but it wasn't until they started their first food truck in 2012 that people started to take notice. Nuchas quickly built a reputation among the NYC street food scene, winning the Rookie of the Year Vendy Award in 2013, and in the same year opening their second retail location in Greeley Square.

    Barbouth's goal is to redefine the culinary concept of "hand-held foods" so that no utensils are needed, and so that the flavors appeal to all cultures, even to those with dietary restrictions, using only quality ingredients that are responsibly sourced.
