    We are back to the skeleton crew with as Jaime and Hiram join me to discuss some of the latest headlines.  It's football season as the NFL season finally kicks off.  We talk about some of the highlights and lowlights of the weekend.  Jaime thinks Aaron Rodgers is going to be the MVP of the season.  Oh boy if only he had a crystal ball.  Texas pulls off the game of the year in week 2 as the topple Alabama in a crazy exciting game.  Hiram talks up Deon Sanders and all the hype train that may be real at Colorado.  We wonder what's going on with Britney Spears as she goes on a posting rampage and wardrobe malfunctions in Cabo.

    BBQ Time - We cook up some beef ribs for the Texas game.  Eric puts a little twist on them as he adds some apple habanero barbecue sauce.  Game changer.  We also cook up some mollejas and as Hiram how often they eat them in LA. No Surprise at the answer he gives us.  Jaime still can't comprehend how vegans don't want to eat meat.  Hiram tries to explain how they value living animals but some are cool with eating fish because fish are dumb and it's ok to eat dumb animals.  Our buddy Jorge cooks a suckling whole pig and sends us pics.  That leads to a whole conversation about cooking and eating animals with their face showing.

     Shout out to our friends at Chillin N Grillin on their 3rd place call at the local cookoff.  We then talk about plans to have a taquiza for our sisters birthday in a few weeks.  Hiram wants some new boots to sport in LA.  Jaime tries to convince him to get something exotic like endangered baby albino alligator skins.  We think he should peacock as he is in LA.

    Ep. 46: Chillin, Grillin & Starting a Comp BBQ Team

    In this episode we do a remote podcast from the headquarters of Chillin n Grillin.   I am joined by Jaime, Hector, Hiram (in person) Johnny, Eddie and Phil. We start by talking about the excellent barbecue that Eddie prepared for us before the podcast.  We had beef and chicken fajitas, jalapeno poppers, pork riblets, mollejas, nopales, and just about every type of dip and salsa you can think of.  Needless to say we all ate well.  

    We start to talk about the differences between IBCA and CBA cookoffs.  (The two available in South and most of Texas).  Before we dig too deep we call in the other half of Chillin and Grillin, our compa Mario. Though we can all agree that we like CBA's new system, Mario misses the old days of only having to cook Pork Butt as one of the main categories.  CBA now has 4 turn in meats made up of Brisket, Ribs, Chicken, and Pork Butt while IBCA still has the same 3 meats minus the pork butt.  None of us can make sense of the comments on the new scoring system but Jaime, having judged sheds some light on that subject.                                              

    We get a little surprise by the Jaime Daddy as we are trying to pay some bills.  Jaime passes around some holiday gifts and we present a brand new Ready Set BBQ cap to our #1 fan.  

    We answer some questions from our fans in our Ready Set Q's segment.  One joe wants to know how much financially it takes to start a competition barbecue team.  We share the perspective from 4 different experiences from competition cooks on the podcast.  The numbers range from a few hundred dollars to $80,000.  Another caller (my sister Evee) wants to know how she can cook chicken and it still be moist.  Everyone has a different opinion on this one from temperature probing, to indirect cooking, marinating, and brining, I guess it's choose which works for you.  I think they all work if done right.

    Hiram gives us a peak behind the red curtain as he shares his experience from his recent  visit to see Hamilton in Los Angeles.     In this episode  I am joined by Hector, Jaime and Hiram from Los Angeles.  We start off by talking about a huge Saturday night barbecue that we just feasted on.  We always make way too much. This time it was dino ribs, pork butt, pork ribs, mollejas, and more.  We then dive into the infamous McGriddle that Jerry Jones scarfs down during the first episode of Hard Knocks on HBO.  He actually add more table salt to it.  The guys put themselves in Jerry's shoes as they talk about what a billionaires breakfast would look like in our eyes.  

    We talk about a subject that hits close to home as we give the pros and cons of Texas and Oklahoma joining the SEC.  We each gives our takes on what we think will be the good and bad outcomes of what it will mean for both teams and the future of the Big 12.  This lead to our looking forward to future tailgates in Austin and how the tailgate scene will look with SEC teams visiting Austin.  For one there will be a much better choice of home games but also the foods that will be cooked will be slightly different than we are accustomed to.  

    Hiram gives us a little movie/musical knowledge as he prepares for his big event attending Hamilton.  Turns out a bunch of barbecue guys don't know that much about musicals.  We continue to produce Jaime's dating show as more details are revealed.

    In this episode Jaime, Hector and I are joined once again by Hiram in LA.  We talk a little NBA updates and the upcoming Mayweather vs. Paul "Fight".  Is  it a fight or a money grab.  Maybe a little bit of both.  We talk about my recent cookoff where I ride shotgun for the Queen of BBQ and battling the erratic Texas weather.  We also talk about the upcoming High Steaks cookoff on 4th of July in Edinburg, Texas. Hiram gets some new into music for his segment, Behind the Red Curtain. He tells us about the new on again off again relationship of Ben Affleck and Jennifer Lopez.  We debate who would win in a fight between Affleck and A-Rod. He also tells us about celebrities getting run over by annoying scooters in LA.   We discuss Tom  Cruises leading ladies.  I share a story of Van Damme when he was shooting Street Fighter the movie.  Hector gets some new theme music for his Word on the Street segment where he shares his experience on his recent trip to Washington D.C.  He talks about some of the good eats that he enjoyed as well as some questionable service he got (or he thought).  We kinda railroad his whole segment.  We take a quiz about how Texas we really are and talk about eating a Boomstick.

    In this episode we get the band back together as the original cooking team of Johnny, Hector and I are joined by Jaime.  We give you an extra dose of barbecue talk as Hector comes out of retirement to cook in his first ever Champions Barbecue Alliance (CBA) cook off.  He battle torrential rains and winds but when the dust and mud settle he pulled off a 2nd place chicken and Top 10 overall.   We give made props to Pitmaker pits and how they fair in the stormy weather. He also shares his thoughts about the attire cooks in the Rio Grande Valley wear.  If you are a fan of dad bods you have to hear this episode. He and Johnny share their thoughts on CBA, both having cooked back to back weekends in the new sanctioning body.  Hector still wants to cook more IBCA cookoffs but likes the new scoring system of CBA.  We again talk about Aaron Lesley from Texas Oil Dust and see if we can get him on the pod someday.  I share some insight into the first ever barbecue cookoff held in Hawaii in 1959.  We submit our own recipes if we were competing in this cookoff.  Jaime loses the team when he starts to talk about racing or something.  Hector's Word on the Street this week involves Tim Tebow's comeback. I take a shot at Cowboy's quarterbacks.  We talk a little Charlie Sheen and Tommy Lee and compare their lives.,  Johnny relives his BBQ tears at his last cookoff.
