Palak Patel, the Culinary Force Behind 'The Chutney Life'

Palak Patel, the Culinary Force Behind 'The Chutney Life'
In the latest episode of Chef AF, I sit down with home chef, cookbook author, and lifestyle blogger, Palak Patel, best known for her work on The Chutney Life. Patel shares her journey, from her earliest memories of being surrounded by the vibrant, aromatic cuisine of her Indian heritage, to her evolution as a home cook, creating fusion recipes that blend traditional Indian flavors with diverse global influences.
Patel delves into her deep-rooted love for food, born from large family gatherings, where she was immersed in a culture where food is central to every celebration. Her culinary style is influenced by her mother's innovative approach to cooking, which Patel has carried forward in her kitchen. She shares anecdotes from her life that have shaped her unique culinary perspective, from her upbringing in a South Asian family in America to the diverse food cultures she experienced growing up in the tri-state area.
In the interview, Patel talks about her forthcoming cookbook, The Chutney Life: 100 Easy-to-Make Indian-Inspired Recipes, highlighting her goal of making the intricacies of Indian cooking accessible for all home cooks. The book is filled with exciting flavors inspired by her travels, makeovers of classics, and Indian remakes of favorites, all borne out of Patel's ingenuity and resourcefulness in the kitchen.
Patel also shares insights into the vital role that chutney, the universal condiment in her home, plays in Indian cuisine. In addition, she discusses her journey of becoming an influencer in the food community and shares her approach to managing a culinary career alongside being a mother of two.
Palak details her approach to cooking and creating recipes. In her initial stages, she explains, she relies heavily on her intuition, cooking "from the heart" without measuring spoons or detailed instructions. This preliminary stage involves getting a general sense of the flavors and textures she's aiming for, with a particular focus on ingredients she's keen to include. Then she begins the actual cooking process, attempting to foster a creative, stress-free atmosphere in the kitchen. She emphasizes the importance of not seeing this process as work, but as a creative outlet, despite the challenges of balancing it with other aspects of her life, like caring for her children.
This intuitive, heart-driven process is followed by a more meticulous approach. She highlights the importance of ensuring her audience can successfully replicate her recipes. Once she is satisfied with the results of her intuitive cooking, she begins the process of measuring ingredients precisely, writing them down to guarantee accuracy and reproducibility. Palak shares that she strives to be as specific as possible without overcomplicating things. She shares a humorous anecdote about learning to capture her mother's traditional Indian recipes accurately despite her mother's intuitive, measurement-free style of cooking.
This engaging conversation with Patel offers a delightful blend of personal stories, culinary wisdom, and a sneak peek into Patel's new cookbook. If you have a passion for food and love exploring diverse flavors, don't miss this episode of Chef AF.

Clash of the titans: Democrats face off in NY1 primary debate

Clash of the titans: Democrats face off in NY1 primary debate

This week, longtime political titans Rep. Carolyn Maloney and Rep. Jerry Nadler, along with challenger Suraj Patel, squared off in a lively Democratic primary debate, hosted by Spectrum News NY1 and WNYC-Gothamist.

Listen to the full showdown, co-moderated by Errol Louis, in which the candidates looked to distinguish themselves ahead of the August 23 primary. The Democrats debated on issues like SCOTUS, climate change and the economy. While Patel focused on the need for new leadership on Capitol Hill, Nadler and Maloney leaned on their lengthy resumes, as they both fight for their political lives.

One of the highlights of the evening was a surprising answer to a lightning round question, which caught many off guard.

Episode 42 - The Green Knight

Episode 42 - The Green Knight

I have Nannina back on the show in order to discuss recent Arthurian arthouse horror fantasy oddity The Green Knight (David Lowery, 2021). After a bit of preamble chat about Foundation (Apple TV, 2021-)

N.B. I'd say we start getting sliiiiiightly spoilery about The Green Knight from about the 45 min mark, and it sort of ramps up from there (esp. in pt 2). We don't discuss the specifics of the ending at all until the last 20 mins, though. And I don't spoil Foundation at all, because Nannina hasn't seen it yet.

Episode 36 - Prime Minister Priti and other things that never happened

Episode 36 - Prime Minister Priti and other things that never happened

We're back in the middle of our summer hiatus with a special new episode, to tide you over until September! I’m very pleased to welcome David Bean to the show, to talk primarily about his essay in the new counterfactual political history collection Prime Minister Priti and other things that never happened (Biteback Publishing, 2021), which is due out on 27th July.

In the first part of the episode, we talk about David’s essay What if Eric Joyce had pulled his punches in 2012? in the new book, which investigates a recent divergent scenario involving a drunken punch-up with massive implications for both the Labour Party and the state of Brexit today.

In the second part, I ask David about his essay from the previous 2011 Biteback collection, Prime Minister Boris and other things that never happened (hmmmmm) which focused on a narrative where Hillary Clinton beat Barack Obama to the Democratic Nomination in 2008. Specifically, we talk about how well the essay and its take on events have aged in regard to the events of 2012 and (particularly) 2016.

In the third part, we have a more wide-ranging free-form chat about alternate history in general, and especially some of the ways we were both introduced to it as kids. Material discussed include Fatherland, 1984, Star Trek (and The Orville!), Blackadder, A Christmas Carol and It’s A Wonderful Life! We hope you enjoy the episode!

0.57 What if Hillary Clinton had secured the Democratic nomination in 2008?

We also have a Patreon - any amount of money will get you early access to episodes, and help support the show!

David Bean has been a fan of alternative history for many years. In 2011 he contributed a chapter to Biteback Publishing's 'Prime Minister Boris… ' that considered a Hillary Clinton victory in the 2008 Democratic Party primaries. He is now returning with a new essay in the new volume 'Prime Minister Priti...' He spent most of the intervening years with the Policy Research Unit at the House of Commons, and can be contacted on Twitter at @DMBean.

All original intro, outro and other incidental music recorded and made available by kind permission of Richard Gilbert.

    NOTES

Prime Minister Priti and other things that never happened can currently be pre-ordered and (after 27th July) purchased directly from the Biteback website, and through several book shops, along with the first four volumes in the series.

The former Sports Editor of the BBC is the author of over thirty books, including Nine Waves, a comprehensive history of Indian cricket and, most recently Narendra Modi The Yogi Of Populism. He has led three cricket tours of India, which have included frequent encounters with former Indian Test players on Indian Test match grounds.

Episode 002: Interview with Rinkan Patel

Episode 002: Interview with Rinkan Patel

This episode was so inspiring. Rinkan Patel represents the epitome of rewired thinking and the growth mindset.

I met Rinkan a little over a year ago, and from the very first few words he spoke I could tell that his approach to life and leadership was different than most. He was born very poor, with good family support, and eventually came to the United States as a young boy.

The story of his upbringing, his approach to life, and raising his children are inspiring and can be a lesson for us all.

    In particular, we talked about some of these topics;

    • Who Rinkan "truly" works for.
    • We discuss his upbringing and happiness through serious adversity.
    • Rinkan met Sean Achor, author of the Happiness Advantage. We talk about some of the things he took away from that and his TED talk.
    • An experience for Rinkan at age 22 that caused a profound change
    • How he responds to negativity and how he advises others to overcome negativity
    • How he talks to his kids about goals, and how he goes beyond the question of "what do you want to be when you grow up?"
    • We talk about "the fulcrum" concept

This is an inspiring story and I hope you enjoy.

    Allen Plunkett
