Non lo so se il gusto per il dolce e per l'amaro sia una cosa ereditaria, ma nel caso io credo di avere ereditato da mia mamma che prende il caffè senza zucchero, mentre mio papà ci metteva tre cucchiaini in una tazzina piccola di caffè. Io ho da che ricordo il caffè l'ho sempre preso senza zucchero e non mi piacciono le bevande dolci e mi piacciono invece le bevande e anche i cibi amari.
à una cosa strana perché geneticamente noi nasciamo con una repulsione nei confronti dell'amaro. Ci sono dei video che fanno vedere gli ultrasuoni, quelli a 3D, quando il feto entra in contatto, nella pancia della mamma, con una sostanza amara, fa una brutta faccia e significa che al feto quella cosa amara non piace. E i bambini, neonati appena nati, sono comunque attratti dalle cose, dalle cose dolci.
Il sapore amaro è una cosa strana, perché è una cosa che ci viene molto, molto, molto indietro dai nostri antenati di milioni di anni fa. Addirittura pare che il senso, il sentire, l'amaro, si sia sviluppato quando eravamo ancora dei pesci, 4 milioni di anni fa, i nostri antenati acquatici e lo abbiamo sviluppato e poi si è mantenuto, e tra tutti i sensi del gusto che ci aiutano a individuare i vari sapori dolce, amaro, salato, umami e gli altri che non mi ricordo, quelli che ci aiutano a sentire l'amaro sono molto, molto, molto, molto, molto più numerosi degli altri. Non solo, ma basta pochissima presenza di amaro, molto, molto meno rispetto al dolce, al salato eccetera perché noi ce ne accorgiamo subito, perché?
Perché i nostri antenati, quando ancora stavamo nelle giungle e nelle foreste, era importante sapere se una pianta era amara o meno perché spesso le cose amare erano cattive, erano velenose, erano rancide e comunque ci facevano male al pancino, quindi ci avvertiva questo senso: attenta questa cosa amara, non mangiarla.
Oggi le cose non stanno più così. Oggi un sacco di gente, e mi includo tra questa gente, ama le cose amare. Perché? Come succede? Diciamo che rispetto a quando i nostri antenati abitavano nella foresta, oggi non dobbiamo più prendere delle decisioni di vita o di morte per sapere se una cosa ci ammazzerà se la mangiamo perché, si spera, le cose che mangiamo le compriamo in negozio o comunque non sono cose velenose che ci fanno morire.
E poi c'è proprio una cosa genetica che alcune persone sono più propense di altre ad amare i cibi amari. Ecco, io mi catalogo tra queste persone, a me piacciono le cose amare, non metto zucchero nel caffè, non metto zucchero nel tè, non metto zucchero nelle bevande, non mi piacciono le bevande dolci. Aggiungo però che vado matta per le meringhe e per la torta australiana che si chiama Pavlova.
TRANSLATION
I don't know if the taste for sweet and bitter is an inherited thing, but in the case I think I inherited it from my mom who takes coffee without sugar, while my dad used to put three teaspoons in a small cup of coffee.
For as long as I can remember, I have always taken coffee without sugar and I don't like sweet drinks, and I like drinks food that are bitter instead.
This is a strange thing because genetically we are born with a revulsion toward bitterness. There are videos that show ultrasounds, the 3D ones, when the fetus comes in contact, in the mother's belly, with a bitter substance, it makes a bad face and it means that the fetus does not like that bitter thing. And babies, newborn babies, are attracted to sweet things.
Bitter taste is a strange thing, because it is something that comes to us very, very, very far back from our ancestors millions of years ago. Even it seems that the sense, the taste for bitterness, developed when we were still fish, 4 million years ago, with our aquatic ancestors, and we developed it and then it has been maintained, and among all the taste senses that help us to detect the various flavors sweet, bitter, salty, umami and the others that I can't remember, the ones that help us to feel bitterness are much, much, much, much more numerous than the others. Not only that, but it only takes very little presence of bitterness, much, much less than sweet, salty and so on for us to notice it immediately , why?
Because for our ancestors, when we were still in jungles and forests, it was important to know whether a plant was bitter or not because often bitter things were bad, they were poisonous, they were rancid and anyway they hurt our tummies, so it warned us this sense: watch out for this bitter thing, don't eat it.
Today this is no longer the case. Today a lot of people, and I include myself among these people, like bitter things. Why? How did it happen? Let's say that compared to when our ancestors lived in the forest, today we no longer have to make life-or-death decisions about whether something will kill us if we eat it because, hopefully, the things we eat we buy in the store or at least are not poisonous things that will cause us to die.
And then there is just a genetic thing that some people are more likely than others to like bitter foods. Here, I catalog myself among these people, I like bitter things, I don't put sugar in coffee, I don't put sugar in tea, I don't put sugar in drinks, I don't like sweet drinks. I will add, however, that I am crazy for meringues and for the Australian cake called Pavlova.

Mentre registro questi tre minutini grezzi di là in cucina, qualcuno mi sta preparando una Pavlova. La Pavlova è una torta tipicamente australiana, e se ci sono persone della Nuova Zelanda in ascolto adesso diranno no, non è vero, non è australiana e della Nuova Zelanda. In Australia si racconta che sia originaria dell'Australia e che il nome Pavlova viene dalla ballerina russa Anna Pavlova, che era in visita in Australia e Nuova Zelanda, e per onorare la sua presenza gli hanno fatto questa torta. à una torta tipicamente estiva e praticamente tutta fatta con albumi d'uovo montati a neve e zucchero, poi si mette a cuocere nel forno a temperature bassissime per 20 mila ore e dopo che si toglie dal forno questa crosta di meringa si riempie con panna montata e poi si farcisce con frutta fresca. à una torta tipicamente estiva, infatti spesso viene fatta per Natale, che in Australia viene d'estate. La Pavlova è solo uno degli esperimenti che facciamo a casa, ci piace sperimentare con la cucina. Qualche tempo fa, dieci giorni fa, abbiamo fatto i Lamingtons, che sono queste altre, un altro dolce australiano, che in Australia è molto... per chi piace la roba molto dolce è buono, è una specie di pan di spagna tagliato poi a dadini imbevuti farciti con marmellata in mezzo e poi imbevuti nella cioccolata fusa. à venuto fuori una schifezza perché secondo me abbiamo preso la ricetta sbagliata. Non sono stata io a scegliere la ricetta. Quando io scelgo le ricette straniere cerco di sceglierle da un sito straniero. Invece chi si è occupato della scelta della ricetta ha preso una ricetta tipo giallozafferano, che per carità , mi piacciono le ricette giallozafferano, ma nel caso dei Lamingtons la ricetta era completamente sbagliata perché è venuto fuori una schifezza. Un'altra ricetta che abbiamo fatto, presa dai mondi lontani, è quella presa dall'anime Food Wars, ed era una ricetta buonissima. Immaginate una una cotoletta alla milanese, quindi una fettina impanata, abbastanza normale, servita però con panna montata mischiata a dragoncello, paprika e altre cose. E non storcete il naso, perché la panna montata di per sé è grasso di latte, quindi non è né dolce né niente. E questa cosa qui è venuta veramente deliziosa. E poi mi hai fatto scoprire il dragoncello e da quando ho scoperto il dragoncello me ne sono comprata un barattolo e lo metto dappertutto. Viva il dragoncello!
