    By definition, an heirloom has proved that it's resilient, timeless, and special enough to have been passed down for generations. That's how Schoolhouse started, with the discovery of a collection of cast-iron molds that stood the test of time. For the past 18 years, Schoolhouse has designed and manufactured high quality home goods with "heirloom quality" as the guiding light.

    As President, Sara Fritsch works across teams to lead the company mindfully without wavering on quality. Their supply chain is a big part of their value statement and their competitive advantage. They manufacture as much as they can in the US, with the majority of their wares being manufactured and shipped from their very own factory in Portland.

    With transparency and control over their supply chain, and a high mix / low volume approach to their catalog, Schoolhouse stays true to the task of making modern heirlooms.

    How two friends went from education to inebriation

    Schoolhouse Brewing's founders Thomas Monti and Justin Waller became friends when they were both teachers.  They both shared a love for good beer and brewing, and educating others.  Schoolhouse started as a bottle/growler/homebrew shop where the guys continued a strong focus on the educational aspect.  Recently, they graduated to the pros with the opening of their taproom in Marietta, GA.

    Monti and Waller join us in the studio this week (along with a surprise visit from our friends FishScales and Skinny DeVille of Nappy Roots) to talk about their journey, share some brews, and reminisce on some mostly forgotten beer styles.  We also learn about their open-source brewery concept, all of Schoolhouse's recipes are available on their website.  If you have a question on one of the recipes they'll happily give you some advice.

    E173: Sipping Sasquatch with 903 Brewers
    Sasquatch lives at 903 Brewers

    903 Brewers founder and head brewer Jeremy Roberts is happy to sit down and chat with visitors about the legendary Sasquatch.  He's never seen the beast in the wild, but he's keeping an eye out.  903's big milk stout is named after the ape, Sasquatch's base is a sneaky 10% and some of the Reserve variants (like the Double Chocolate Cherry Stout we sampled) hit at a heavy 15% ABV.  The box encourages you to "Age it. Drink it. Trade it. Share it."  We skipped step one and didn't make it past step two.

    Roberts admits they haven't quite nailed an IPA that's caught on, but they aren't worried about riding that hype train.  They're happy to brew their stouts, a huge variety of cream ales, and many other styles.  Their Down with PastryArchy series takes those cream ales and adds crazy additions like strawberry cake and cinnamon rolls.  Some fruity versions even get served from a slushie machine to help beat the Texas heat.  The brewery is celebrating their 6th anniversary this May and they are in the process of expanding to a new building, an old 3-story schoolhouse in downtown Sherman.  The new space will offer a larger tasting room, large ballroom and meeting area, and expanded brewing capacity.

    We also talk about the restrictive direct sales laws in Texas.  Brewpubs, distilleries, and wineries are allowed to sell beer to go, but production brewers aren't.  903 switched to a brewpub model because of the limitations the laws put on his growth.  Fortunately, Texas HB762 is up this year looking to change that.

    If you find yourself in Sherman, TX make sure to stop by 903 Brewers.  You're guaranteed to see Sasquatch.
