    The mission of the James Beard Awards is to recognize exceptional talent and achievement in the culinary arts, hospitality, media, and broader food system, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive.

     

    Each year some of the brightest stars in the culinary world and food media are recognized at the annual James Beard Awards. In hospitality, it doesn't get any bigger! 

    We were honored to host Corner Table Talk LIVE at the 2023 James Beard Awards in Chicago where we pull back the curtain to reveal the passion and drive of eight of the industry's finest. We hear firsthand what the night meant to them and add some super cool restaurants to check out if your travels take you to any one of these cities.

    Chicago is a great host city. Our most memorable meal was at chef Erick Williams' outstanding Virtue Restaurant and Bar, also home of  Damarr BrownBest Emerging Chef whose soulful cuisine including Shrimp and Grits had us convinced it gave LA-based Post & Beam's version a run for its money, Just sayin’.

    Our guests include Gregory Gourdet's whose Haitian-inspired Kann  won Best New Restaurant, a beacon of cultural enlightenment, Chef JP Best Chef NY State from Atomix, whose journey from Korea to New York's culinary zenith is a tale of tenacity and talent, pastry artisan, and Margarita Manzke Outstanding Pastry Chef from LA-based Republique who was unable to attend the Awards but longtime staffer Kaley Shannon filled in and did a terrific job!

    We also spoke with the inspiring Olivia Watkins and Karen Washington Humanitarian of the Year of New York City-based Black Farmer Fund, whose commitment to land stewardship and social equity is reshaping the agricultural narrative, the incomparable Ellen Yin Outstanding Restaurateur of High Street Hospitality Group whose achievement is a testament to innovative spirit and community-building prowess, and the effervescent Chef Andrew Black Best Chef Southwest, whose culinary ingenuity at Grey Sweater in Oklahoma City is matched only by his dedication to community upliftment. We topped off the evening with Rob Rubba of Oyster Oyster in Washington D.C, whose sustainable approach and heartfelt leadership won him the title of Outstanding Chef, proving that the path to culinary greatness is paved with purpose and integrity.

We have been fortunate to have an association with Wagstaff almost since its inception close to 25 years ago.     From a young age Nico had a head in the cupboard and an eye over the shoulder of his grandmother learning about the depth of flavour and the variety of spice in Caribbean cooking and soul food. Bringing this knowledge to Latin America, he ran a catered event company and a small restaurant in Buenos Aires for 6 years. Combing the depth of the flavours & aromas from the Caribbean with south American zests, the menus began to take more influences from Peru, Colombia, Argentina and Mexico. Caribbean cooking with Latin influences via Ireland.  Since then he makes regular appearances on Irish TV in cooking segments like RTEs "Today Show" and Virgin medias "Ireland AM" and was in house chef for the TV programme "Lodging with Lucy" Along with Articles published in the Sunday Times and Independent and award winning recipes. On today's episode Zella and Nico talk about Nico's journey in food rooted in his Irish and Jamaican heritage.

    Food is Medicine - Meet Our Retreat Chef for 4/30/23 in Vermilion Ohio

    Jacquelyn, a Certified Holistic Health + Wellness Coach/Vegan Chef, started her journey in health and wellness after she was diagnosed with a crippling autoimmune disease called Ankylosing Spondylitis, (a.k.a the bamboo spine) in 2015 and used food as medicine in conjunction with yoga and meditation to reverse her symptoms. 

    She believes what we feed our body is equally as important as what we feed our mind. Living the vibrant life she’s always envisioned, she now takes her experience, knowledge, and love of food to help others overcome their struggles with health and get on the road to recovery! 

    Jacquelyn recently moved back to the Midwest after living in Chicago, Paris, and California over a span of 20 years. She opened a vegan kitchen, located in Perrysburg, OH., where she offers her Meal Prep Services as well as Health Coaching Services. She educates those curious about sustainable vegan living, and provides organic, plant-based meals to the Michigan/Ohio area and hosts Wellness Retreats that incorporate movement (usually yoga), meditation, and a three-course, plant-based meal paired with food education.

    As the founder of SolFood Collective, is a Certified Holistic Health + Wellness Coach/Vegan Chef helping people transition to a plant-based lifestyle and educating people on the benefits of using food as medicine and vegan living. She was featured on The Great Food Truck Race on Food Network, season 10.

    James Beard Award winning Restaurant, then Top Chef Competitor Jen Carroll's Executive Chef joins us to talk about Spice Finch and Center City District's Restaurant Week

    We began our episode by serving up the freshest meals in Camden County as we spoke with the co-owner and Chef of Corinne's Place.  Originally born from a small catering business, the Founder Corinne Bradley-Powers grew her business into a beloved neighborhood spot; offering scratch-made foods that visitors from all over would travel to enjoy. Eventually word spread and her meals became so enticing that even celebrities and food critics became repeat customers.  Mrs. Bradley-Powers eventually sold her business to Trevor Vaughan & his partner, Craig Sawyer, but not without Corinne's blessing; Corinne's new role within her famed restaurant is being the new owner's consultant.  After ownership of the restaurant changed hands in 2019, Corinne's Place was nominated (and won) the James Beard Foundation's "America's Classics" Award, which is given to establishments that have remained open for at least 10 years, and reflect the character of its community.  We touch on all of this and more, so stay tuned to hear about Corinne's Place's mouth-watering foods made with a whole lot of heart.

    Kevin is joined by the critically acclaimed Director/Writer/Producer George Tillman Jr. to discuss making movies from the heart.

    George Tillman Jr., Director, Producer, Writer
    With a career spanning over two decades, George Tillman Jr. has brought a unique voice and perspective to the film industry, tackling a wide range of genres and themes in his work. He is best known for his films Soul Food, Men of Honor, and The Hate U Give, as well as for producing the successful Barbershop franchise.

    A tale of two test screenings (3:28)
    George Tillman Jr. reminisces about his disastrous first test screening in Beverly Hills and how that experience made him fearful of future audience screenings. He contrasts this with the audience screening for Soul Foodand how that screening became one of the highlights of his life.

    Early influences (10:49)
    Tillman discusses the two films that influenced him as a teenager: Taxi Driver and Cooley High. Cooley High was the first film Tillman saw with African Americans in the lead roles, and it showed real friendships and relationships. Taxi Driver stood out to Tillman for its camera work and the way it controlled the viewer's experience.

    Working with De Niro (20:35)
    Kevin asks George about his greatest influences and mentors. George talks about working with Robert De Niro on Men of Honor and how De Niro guided him in post-production, even advising Tillman to cut some of De Niro’s own performance for the sake of the film.

    The $150,000 movie success (24:18)
    Tillman talks about raising money for his first film, going mainly to family and friends in Chicago, and taking that movie to Hollywood and selling it to Savoy Pictures for $1,000,000. Unfortunately, Savoy Pictures went out of business, and that first film was lost, but it helped Tillman make connections that led to green lighting Soul Food.

    Kevin asks George what he has learned on his journey as a writer, producer, and director. George talks about making movies from the heart and about telling the stories that you want to tell.

    Feeling the audience's reaction (43:05)
    Kevin asks George to talk about audience test screenings and if the audience response was responsible for big changes in any of his films. George goes into what it feels like to participate in a test screening and sit among the audience. He talks about how he made changes to a movie based on what he felt around him at the audience test screening. They then go into positive test screenings as a validation of the filmmaker’s instincts.

    Hey Fam! Its been a while since I last posted. Sorry about that. I have been very busy, over the last year, with many positive things going on, with my career and philanthropic ventures I wanted to take. However, with all of that focus, I didn't quite have the bandwidth to put in the creative effort needed in order to produce a great podcast episode. As well, I was a bit burned out by continuing to produce high quality content that you would not only enjoy but get something out of.

    While I am not sure what the future hold for this series, the one thing I do know is that I got a bit of a second wind to telling my story of my trip I took to think about the future of me in the Summer of 2022.

    S2:E24 Caroline Randall Williams I Speaking Truth

    What is a monument but a standing memory? An artifact to make tangible the truth of the past. My body and blood are a tangible truth of the South and its past. The black people I come from were owned by the white people I come from. The white people I come from fought and died for their Lost Cause. And I ask you now, who dares to tell me to celebrate them? Who dares to ask me to accept their mounted pedestals?

    You cannot dismiss me as someone who doesn’t understand. You cannot say it wasn’t my family members who fought and died. My blackness does not put me on the other side of anything. It puts me squarely at the heart of the debate. I don’t just come from the South. I come from Confederates. I’ve got rebel-gray blue blood coursing my veins. My great-grandfather Will was raised with the knowledge that Edmund Pettus was his father. Pettus, the storied Confederate general, the grand dragon of the Ku Klux Klan, the man for whom Selma’s Bloody Sunday Bridge is named. So I am not an outsider who makes these demands. I am a great-great-granddaughter.

    Such is the powerful, articulate, unabashed voice of guest, Caroline Randall Williams, whose family roots display an impressive cultural richness. She is the daughter of best-selling author Alice Randall, with whom she co-wrote the award-winning Soul Food Love cookbook and Avon Williams III, a well-known former diplomat who served as acting Principal Deputy Counsel of the Department of the Army, and first cousin to former U.S. Supreme Court Justice Thurgood Marshall. Caroline's grandfather was a prominent civil rights lawyer and former Tennessee state senator, Avon N. WIlliams Jr.. She is also the great-granddaughter of scholar Arna W. Bontemps, the African-American poet, novelist and noted member of the Harlem Renaissance. Yet this cultural royalty is juxtaposed against her DNA verified results. She is the great-great granddaughter of Edmund Pettus, US senator of Alabama, senior officer of the Confederate States Army and grand dragon of the Klu Klux Klan. 

    A gifted writer, Caroline is able to bridge history with current conditions, articulating it in a way that causes you to sit there shaking your head and say, those are the right words. Based in Nashville, Tennessee, Caroline is a multi-genre writer, educator, performance artist, and Writer-in-Residence at Vanderbilt University. As the host of the new Discovery+ show Hungry For Answers (produced by Viola Davis), Caroline travels the United States uncovering the fascinating, essential and often untold Black stories behind American food.
