Předcházet vzniku odpadů a získávat tak další suroviny. To je jedno ze základních pravidel cirkulární ekonomiky. Často si pod tím představujeme třeba odřezky z nějaké výroby nebo třeba obaly, které jdou znovu nebo jinak využít. Biopekárna Zemanka ve spolupráci se společností Ugo ale ukazuje, ze tímhle principem se jde řídit i v potravinářství. Zemanka běžně vyrábí převážně sladké zákusky v bio kvalitě, to znamená s velkým důrazem na kvalitu používaných surovin a snaží se při být právě i udržitelná, tedy hodně se ohlíží i na to, odkud jejich suroviny jsou a jestli při jejich produkci dodržovaly určité standardy. Biopekárna Zemanka si už vyzkoušela třeba i pivní krekry z mláta plzeňského Prazdroje. Ugo zase vyrábí zeleninové a ovocné šťávy, z čehož jim zůstávají výlisky, které doteď likvidovali jako bioodpad. Nově ale ani tato vylisovaná zelenina nepřijde vniveč - Zemanka z nich začala vyrábět zeleninové slané krekry. Co bylo třeba udělat, aby tato spolupráce mohla začít? A jak složité je využívat tyto druhotné zdroje z výroby? To mi v této Loopě popíše zakladatel Biopekárny Zemanka Jan Zeman - ale podíváme se i do výrobního závodu Uga v Krnově.
