    Nici Wickes: Rhubarb, orange, and white chocolate sundaes

    Nici Wickes: Rhubarb, orange, and white chocolate sundaes

    The mix of roasted rhubarb, juicy orange and vanilla-scented cream tumbled together with shards of crisp, nutty filo pastry and white chocolate sauce is simply sensational! 

    Serves 4-6 

     

    Ingredients: 

    1 sheet filo 

    2 teaspoons butter, melted 

    2 cups rhubarb, chopped into 4 cm lengths 

    1 tablespoon caster sugar 

    70g white chocolate, chopped roughly 

    2/3 cup cream 

    1 teaspoon vanilla extract 

    2 tbsp thick Greek yoghurt, unsweetened 

    2 oranges, segmented 

     

    Method: 

    1. Preheat oven to 180 C. Line two baking trays with baking paper.
    2. Brush filo sheet with melted butter and sandwich between the lined trays. Bake for 5-10 minutes or until very golden brown. Remove and cool. Break into shards.
    3. Toss rhubarb in sugar and, using the same lined tray(s), roast the rhubarb for 15 minutes until softened. Set aside to cool.
    4. In a small pot heat a third of the cream to near boiling. Throw in chopped chocolate, cover with a tea towels and leave for 5 minutes before whisking to a smooth sauce. Cool.
    5. Whip remaining cream with vanilla to a soft whip consistency.
    6. To assemble: Choose small glasses, jars or bowl and layer up rhubarb, the cream mix, shards of filo, orange segments and topping it all off with the white chocolate ganache. Be prepared to be delighted!

    Nici’s note: Plums (fresh or tinned) in place of the rhubarb are just as good in this recipe so feel free to mix it up!

    C Webb is in the building! He’s the man who’s always been at the center of the culture – from his star-studded AAU team to the legendary Fab Five years to his 15-year run in the league. The Midwest legend begins by breaking down his insanely stacked AAU teams and explaining the wild Midwest basketball culture he thrived in while growing up. Then it’s all about Michigan and the Fab Five. The boys who defined college basketball at the time. He gets into the baggy shorts and the buzz cuts, what that ride to fame as a group of college friends was like, and how painful it was experiencing losses in back-to-back championship games. Then he chats post-college, how his mother creatively helped him get over The Timeout, and how the draft process saw him through some hard times. From there, the guys take turns imagining what a C Webb-Shaq duo would’ve done to the basketball world, and Chris gives the backstory of why Shaq pushed for Penny Hardaway. It all worked out, as C Webb linked up with part of Run TMC in Golden State and snatched Rookie of the Year. He goes on to explain his Godfather-like contract, which allowed him to be a free agent after his first season, and what sent him to the East to reunite with Juwan Howard in D.C. The guys then get into C Webb’s finding out that he’d been traded to Sacramento ... while in a grocery store, and why he was so adamant about not wanting to play there. Things changed fast, though, as teammates made him love it there and his arrival led to the Kings’ most successful stretch. C Webb then touches on the final years of his career, what it was like to play with AI in Philly, and what he’s been doing since he retired, including growing his collection of African-American artifacts and teaching a master’s class at Wake Forest.     VJC Q&T podcast host Russell Schmidt has shared a journey in music education with violist Nancy Buck since they first met in 1995 at Bowling Green State University’s new faculty orientation. And for more than two decades, Nancy and Russ have maintained a joyous partnership on and off the concert stage. Nancy is a nationally-renown artist/teacher who presently serves as an Associate Professor of Viola at Arizona State University. She is also the Artistic Director and Co-Founder of the Arizona Violacademy. 

    Nancy recently stopped by the MSW-Tempe studio to share questions and tangents with Russ. In this, the second of two podcasts together, they discussed why playing with others must be an “ears-over-eyes” experience, what it means to contribute texture to music, and even how varieties of chocolate might relate to a performing artist’s concept of sound.

    About The Host: Pianist/composer/educator Russell Schmidt has performed with such celebrated artists as Carl Allen, Michael Brecker, Eddie Daniels, John Hollenbeck, Joe Lovano, Gerry Mulligan, Lucas Pino, Arturo Sandoval, and Clark Terry. Among his recordings as a leader are Anachromysticism (2012), which highlights Russell’s wide-ranging efforts as a jazz composer, Jazz Triptych, Volume I – The Sacred (2018), a collection of hymns and spirituals reimagined in the jazz language, and his most recent recording, the companion album Jazz Triptych, Volume II – The Secular (2019).

    After a distinguished career in academia, Russell joined Music Serving The Word in June 2014 as Coordinator of Education, founding MSW’s Valley Jazz Cooperative program in 2016. Previously, he served as Director of Jazz Studies at Bowling Green State University and the University of Utah. He was also a member of the Eastman School of Music jazz faculty, where he co-conducted the Eastman Studio Orchestra. A student of Rayburn Wright, Russell holds two degrees from Eastman.
