    On today's episode of All in the Industry®, Shari Bayer has a special episode from her recent trip to Santiago, Chile, with Carolina Bazán, chef-owner of Ambrosia and Ambrosia Bistro in Santiago. Carolina opened Ambrosia with her family in 2003. With the help of her partner, sommelier Rosario Onetto, she began the Hidden Kitchen movement in 2012, focusing on market produce and seasonal ingredients, which led to Ambrosia’s new location and concept; a modern family bistro, outside of the classic gastronomic circuit, where fresh market products leads a seasonal menu that changes daily. In 2017, Carolina and Rosario opened their own restaurant, Ambrosia Bistro, located downtown with a very hip vibe and simple, seasonal menu. Carolina was named Best Female Chef by Latin America’s 50 Best Restaurants 2019, and Ambrosia Bistro is currently #72 on The Worlds 50 Best Restaurants. Carolina is a contributor to Shari's new book, CHEFWISE: Life Lessons from Leading Chefs Around the World (Phaidon, Spring 2023).     Rethinking Surplus: Innovative Solutions to Excess

    Surplus is usually defined as what’s left over when the demand, or need, of a population has been met. However, in the context of the food system, this definition leaves us with more leftovers than answers. What might be referred to as surplus food faces a core contradiction: while approximately 35% of the food we produce goes to waste, about 50 million people in the U.S. are experiencing food insecurity. This number has increased from previous years due to the Covid-19 pandemic, which begs the question – is it possible to have a food surplus when the need for nourishment is only going up?

    This week, we rethink the meaning of surplus. We start off with a lesson on embracing the food sharing economy. Then, we walk through the process of upcycling leftover grain from breweries into crackers and learn about eliminating surplus in dairy production as a response to Covid-19. Last but not least, we look at an example of closed-loop manufacturing that turns surplus waste into a common household product.

    The Honey that Hums and Blazes: Somatic Nectars of the Trance State

    Honey was revered across the ancient world — found in Egyptian tombs and Chinese apothecaries and referred to glowingly in ancient Sumerian medical texts. The myths and stories that come to us from the ancient world are soaked in honey. Honey is certainly a remarkable substance. But is that enough to explain the presence of liquid nectar in myth upon myth upon myth? There are strange commonalities in the myths and stories about nectar and honey. The association of honey and immortality. The descriptions of cascades or rivers of honey or nectar. Honey described as luminous dew. Associations of honey with rapture and prophecy. Associations of honey with sound and with particularly effulgent qualities of light. When we delve into the myths and stories, we find that the prevalence of liquid nectar in myth can only lead to the conclusion that the honey being spoken of is experiential — it is a nectar of felt experience. Specifically, the nectar of heightened awareness, of trance. Today on the podcast, we steep in the honeys of consciousness, and find a common vision of luminous, sonorous liquid that pervades mystic discourse around the world.

    One day a new monk came to Zen master Joshu and said “I am a new trainee in the temple, can you give me some teaching?” Master Joshu said, “Have you eaten?” and the monk said “yes”, Joshu replied “then wash your bowl”. In this talk, Daizan Roshi explains some of the ways that this famous but very simple little interchange can be looked at, in terms of digesting and cleaning the ’stuff’ accumulated in our life, and how it can nourish us. He goes on to discuss some of these views in relation to the life story of his Zen teacher in Japan, Shinzan Roshi.
