    Het lijkt steeds hipper te worden: glutenvrij! Niet alleen onder mensen die écht last hebben van gluten, maar ook de 'nieuwe foodies' beweren dat het een stuk gezonder is. Opvallend veel tarwebroodeters komen de laatste jaren bij de huisarts met klachten als buikpijn en een opgeblazen gevoel. De zogenaamde broodbuik! Er is echter nog steeds geen bewijs dat tarwe de oorzaak is. Toch willen mensen zoveel mogelijk variatie als het gaat om brood. Dat merkt ook Paul Alkemade uit Anna Paulowna.
