Feast of the Seven Fishes, a Boutique Food-forward Market, and a deep discussion of Beer and Tranquility Brewing

Feast of the Seven Fishes, a Boutique Food-forward Market, and a deep discussion of Beer and Tranquility Brewing
Rocco Gallelli who is a friend of the show, culinary genius, and Chef/Owner of Innovative Catering Concepts opened our latest show with a discussion of one of the most celebrated culinary traditions: the Feast of the Seven Fishes. Chef Gallelli joined our co-host Gene Blum to chat about the significance behind the celebratory meal, what would be eaten in the past and why, as well as where the Feast of the Seven Fishes originated. I'm sure that the discussion will pique your interest, not only with the history behind the Feast, but after hearing all the delicious foods that are eaten during the meal--you'll begin to get hungry for more. Which is why we also introduced Chef Joe Muldoon to all of our Food, Farms, & Chefs family. Chef Muldoon joined us from inside his boutique foodie haven, Haddon Culinary. The food-driven market offers a variety of prepared foods as well as numerous products that are locally and globally sourced, bringing you the best foods and culinary delights from all over the world. And rest assured, the boutique store has two locations that offer creative meals made from scratch--with no corners cut when the two chefs/owners designed their menus. I know I'll definitely be in line to pick up one of their devilishly tasty pies, sandwiches, or Revolution Coffee Roasters-based beverages. And speaking of beverages, we wanted you to be in-the-know with exactly what distinguishes the taste of those ice-cold beers we all love so much. So our very own culinary historian, and soon to be brew-master set aside some time to break down the various make-up of every beer-base. That's right--we're talking about beer basics 101. So if you've ever considered yourself a craft beer aficionado or wanted to get into home brewing, Chef Blum is breaking it all down for you and then inviting you to join him at Tranquility Brewing Company. Which if you listen till the very end--you'll learn about every last drop that they're brewing up at the FUGE's Tranquility Brewing! So we hope to see you tune in and indulge in some of the best foodie news (and wish list) around!

    Free Food and Failure

    Free Food and Failure

This week, I talk about free food and failure. More specifically, I discuss why giving away free food, and doing events for free didn't work out for me. I'm not saying that there might not be a place for it. But before you do an event, I think you need to make sure it's a good fit. Does it make sense to give out free cupcakes and the ribbon-cutting ceremony for a new car dealership? There are a lot of people looking to trade your services for "exposure", but does it actually ever help move the needle from a business standpoint? What do you think? Let me know.

Sponsor- The United States Personal Chef Association
The Covid pandemic has clearly redefined the world of dining. Despite over 110,000 restaurants closing around the country, people still want the ambiance and social connectivity that is so critical to the dining experience. Over the past 27 years, the world of the personal chef has grown in importance to fulfill those dining needs. While the pandemic certainly upended the restaurant experience, it provided an Avenue for personal chefs to close that dining gap.

Central to all of that is the United States Personal Chef Association. Representing nearly 1,000 chefs around the US and Canada, USPCA provides a strategic backbone for those chefs that includes liability insurance, training, communications, certification, and more.

One of the big upcoming events for USPCA is their annual conference scheduled July 7-10 at the Hyatt Regency Sarasota, FL. Featuring a host of speakers and classes, the conference is a way for chefs to hone their skills and network with like-minded businesspeople. For those who supply the industry, it’s a chance to reach not just decision-makers but the actual buyers of products.

    Laziest Murderer Ever

    Laziest Murderer Ever

This week, Sarah and Mary recap the LMN movie, “Party From Hell.” Sarah has a hard time with Molly’s 24/7 crazy eyes and concludes she would need a check in with a friend like that (ARE WE GOOD??). Mary’s world is rocked that a party streamer was used to murder someone and wonders if the writer’s were just in a hot hurry to get to happy hour. The co-hosts are over the moon that Dr. Eric Roberts, their favorite Lifetime lover, makes an appearance. Lots of questions and confusion, but just like always, plenty of laughs are had trying to figure it out.

Find Something That Moves You | Katy and Jose Rosa, Owners of Everest Eats

Find Something That Moves You | Katy and Jose Rosa, Owners of Everest Eats

When Katy and Jose Rosa found themselves out of work in 2019, they decided to try something completely different. After years of working in oil and gas, they were worn out by the ups and downs of such a cyclical industry. Much to Jose’s surprise, Katy had just started to feed their family 100% plant-based meals. He couldn’t believe how great the food tasted and how good he felt, so he naturally wanted to share it with extended family and friends. It was right around this time that they were asked to cater a company event. That evening, their food was a big hit, and the idea for Everest Eats was born.

Although their menu is totally plant-based, they continuously receive rave reviews from vegans and meat eaters alike. The homemade ingredients, rich flavors, and hearty nature of the meals have wide appeal and have won over followers of all types of diets. Katy and Jose are inspired by their two children, Everest and Denali, and creating a sustainable business that is environmentally sensitive is an important factor in the choices that they make. Almost two years into operation and Everest Eats is a full-blown family business with Katy’s mom and dad now involved in the creation of the mouth-watering dishes and desserts that come from their commercial kitchen.
