    Iconic kiwi chef Al Brown is well known for his beloved restaurants Depot and Federal Delicatessen, as well as his Best Ugly Bagel shops.

    He’s published a number of cookbooks and has recently released a ‘Bach Edition’ of his recipe book ‘Eat Up New Zealand,’ featuring more than 150 recipes and on-location photos from around the country.

    Al Brown joined Jack Tame to chat about his new book and the stories and recipes within.

    Years ago, Heather founded an English almond toffee business based off of a family recipe. After almost a decade of hand crafting pound after pound of the chocolate covered buttery confection, she hustled through avenue upon avenue in getting her products into the brand giants of Whole Foods, Williams Sonoma, Nordstroms Online, among others.  

    After selling her thriving Toffee business, Heather carried her baking passion forward, diving into the competitive blogging world.  With the new moniker "Browned Butter Blondie,"  Heather has established a significant presence online and in partnering with iconic brands such as Ghiradelli and C&H Sugar.  Next up, she release her first cook book "Stuffed," a sandwich cookie book sure to make your sweet tooth smile.

    Episode 26: Food Stylist Mariana Velásquez on Colombia's Cuisine of Generosity

    With Caribbean and Pacific coastlines, rain forests, jungles, great valleys and rivers flowing from the Andes Mountains, desert, and fog forests, Colombia is a country with deep regionality and distinct food, culture and customs. As the country exports more and more talent in music, innovation, art, design, fashion, and now food, today we are going to introduce you to a brilliant tastemaker, chef, and food stylist, Mariana Velásquezz, a native of Bogotá. She’s spent the past two decades residing in New York and cooking in restaurant kitchens, food styling, and writing/collaborating  on cookbooks and published her own cookbook called Colombiana, which she says brings it all full circle. Mariana shares why Colombia's culinary philosophy means ‘more is more’ and the inherent joy and generosity present in its cuisine, and culture, which anyone traveling to the region will immediately savor.

    In this episode we talk about:

    • Mariana’s childhood memories of her grandmothers and the strong women in her family who modeled for her how to ‘dress’ a table.

    On this episode of the podcast, we’re celebrating Pride Month and talking about Out in the Kitchen: A Cookbook for those with non-discriminating taste compiled in 1995 by Maine Won’t Discriminate, a political coalition based in Portland, Maine. The cookbook was raising money to fight an anti-gay rights referendum that was on the ballot in Maine in the mid-1990s. We talk with Susan Sanders and Nancy Wanderer who were part of Maine Won’t Discriminate, and have 8 recipes in the book. And for our cooking segment, Karl made Nancy and Susan’s recipe for Spanakopeeta, Margaret made Tom Andrews’ Wicked Good Maine Lobster Chili and Backyard Rhubarb Pie, and Don made Oyster Dip and Gougeres.

    In this episode we also start a conversation about the large specialty Midwestern community cookbook publishers (which will be continued in an upcoming bonus episode), and discuss at length how community cookbooks reflect changing communities and new charitable causes in American society.

    When I think “Renaissance man” I have images in my head of sculptors, painters, physicians, inventors… people like Leonardo, Brunelleschi and  Michelangelo - all worked in Florence about 20 km away from my guest’s hometown. 

    I don’t often think of James Beard award winning celebrity chef and restaunteur, a multi book New York Times best-selling list author, An Italian Military Academy student who decided that studying medicine wasn’t for him and went off to Morocco, Brazil and Cuba to study drums, who also loves to ride Duccati’s, has some pretty serious leaves (as in tattoos), was also Knighted in 2019 and who you can now see often on Instagram doing ‘lives’ with his wife Debi Mazar cooking up a festival of food from the kitchen of their Brooklyn home.

    That said, I do think about somebody who is on a continual search for the NXTLVL and not afraid of being reborn - in the true sense of the word “Renaissance.” Someone like Gabriele Corcos who seems to be in a continual search for filling his life with the adventure of the unknown.

It took awhile to figure out what that job would look like, but eventually she landed a dream job as a food editor at Martha Stewart Living. From there, Bench rose to senior food editor and became the food director of Ladies' Home Journal magazine. Now, Bench—perhaps best known as Tara Teaspoon—is living the New York dream, having just published her first cookbook.
