    A Southern French Feast

    A Southern French Feast

    Wine. Food. Merriment. And a touch of southern French sun.

    That just about sums up this episode.

    We're exploring Occitanie - the sun-kissed southern French region that stretches from the western Rhone through Languedoc and Roussillon into South West France.

    Taken as a whole, it's the world's largest vineyard and makes around 5% of global wine output.

    In the past, these regions have been criticised for focusing on quantity over quality and being out of touch with the modern wine world.

    But things have changed significantly in recent decades, as the vineyard has been drastically shrunk and successful producers have focused on quality, innovation, value, indigenous varieties and the future.

    And that's not all this part of the world is known for. It also boasts a mighty fine gastronomic scene. 

    So yes, you guessed it: we couldn't resist. 

    In this episode we're serving up six dishes inspired by southern French ingredients: mushroom arancini, Mediterranean shellfish stew, cod with beurre blanc and winter ratatouille, Toulouse sausage casserole, duck shepherd's pie and Roquefort.

    Then we find Occitanie wines to pair with those different dishes, neatly illustrating the diversity of the region in the process, from elegant sparkling wine to lusciously sweet Vin Doux Naturel via a brand new style of Picpoul de Pinet that we didn't know about.

    Along the way we hear from expert Matthew Stubbs MW plus growers Jean-Claude Mas (Les Domaines Paul Mas) and Pauline Nadal (Domaine Nadal Hainaut).

    Somehow we touch on manure, fried brians (yes, you read that right), Asterix, bootcamps, touchy-feely labels, wines with soul and a nitrogen generator.

    Enjoying Disney's Halloween Party and Tips for a Missed Flight

    We embarked on a spectacular journey through the realms of Disney World, from the spooky Halloween party to the unexpected meetings with characters and Youtubers. We captured the essence of our trip, the laughter, the mishaps, the culinary encounters, and even our enlightening experience with the TSA at the Orlando airport. Ever wonder what happens when you miss a flight home from Disney World? Well, Mykhailo and Kristin found out the hard way, but it resulted in a couple of unexpected extra days filled with magic. 

    Our adventure continued to the Disney resorts, the Polynesian Village and the Grand Floridian, where we indulged in a gastronomic delight and a shopping spree. We uncovered a handy boat transportation option, and discussed our anticipation to ramble towards the magnificent gates of the Magic Kingdom. The fun didn't stop there, as we had the chance to visit the Animal Kingdom and explored EPCOT on our bonus Disney days, becoming Guardians of the Galaxy escapees and surviving the Rainforest Cafe.

    Our Disney World escapade wasn't just about us, we wanted to share the joy and bring you along for the ride.     Unconventional Lesson in Food and Wine Pairing Part 2

    Hello and welcome to Part 2 of our Food and Wine Pairing episodes!  Charisse and Kristi continue to explore food and wine pairings in an unconventional way.  Leveraging training methods from wine certification experts, we break down a few pairing myths and explore three wines against the 5 flavors your tongue identifies - salty, sweet, bitter, sour and umami. 

    With a "charcuterie tray" of sugar, salt, lemons, tomatoes, mushrooms, brie, popcorn and dark chocolate, we set out to dissect the influence of each flavor against 3 wines. 

    White Wine:  Texas Heritage Oaked Albariño
    Red Wine:  Boeger Merlot
    Dessert Wine:  Casa Mandel Boullosa Carcavelos

    In Part 2, we start with a recap then dive right into the Boeger Merlot to explore how red wine is impacted by our “charcuterie items”.  This fruity, mildly tannic and medium acidity red responded in surprisingly different ways to the food and flavor pairings than the Oaked Albariño.  Tune in to find out how!

    Wrapping up with an amazingly unique and rare 1988 Carcavelos dessert wine, what can two wine loving friends do but pop the cork and continue the science experiment.  We hope you’ll try similar pairings for yourself and take our nerdy tips and savvy tricks along with you on your own wine journey!

    Wrapping up the episode with our Wine Find, this time we bring a little technology into the game.  Stelvin (or screw caps) embedded with website NFC tags called “Edivinum” sending consumers straight to the winery’s website.  This not only provides marketing content and wine details, it is an inventory control mechanism to help winemakers know exactly where their products are and when they are consumed.  Just unscrew the cap, pour a glass then register the 4 digit code inside on the website as “consumed”!  How cool!  Our example is from Vigneti Massa Timorasso Derthona / Piccolo Derthona 2021.

    I turned on my recording device early in this episode to talk about a little bugaboo that made a surprise appearance in my wine glass the other day.  Any guesses what it was?  

    If you guessed cork taint, you guessed right!

    The twist here is that the cork taint had me confused for a bit because it showed up a little differently than what we usually think of as cork taint!

    In this episode, we’ll talk about some common wine faults and then zero in on cork taint and the myriad ways in which cork taint can ruin a bottle of wine.  Listen in to pick up a few nuggets of information around what causes cork taint, how you can detect it, and what you should do about it.
