    James Beard: SWTW Covers the Colonial Culinary Classic in Ft Worth

    What better way to celebrate the culinary and beverage geniouses of Fort Worth, TX than to partner with the James Beard Foundation?     NZ Chardonnay: No Longer the Second White Wine of New Zealand

    NZ Chardonnay:  No Longer the Second White Wine of New Zealand

    For most wine drinkers, Sauvignon Blanc is THE white wine of New Zealand. We're here to debunk yet another myth and challenge you to think about NZ Chardonnay! From the focus of organic / biodynamic / regenerative farming to low intervention winemaking, winemakers let the chameleon varietal shine.  The land, the climate, even within the same vineyard is creating amazingly different expressions of Chardonnay and we're super excited to share them with you!

    We explore Chardonnay from Central Otago to Auckland through interviews with wineries and wine makers - this is a must listen episode for sure!

    • Felton Road Wines, Bannockburn, Central Otago, South Island
      • Winemaker Blair Walter deep dives the distinct soil types even within same vineyard giving unique expression to their Chardonnay.  Passion for land as evidenced in their biodynamic farming practice leaves the true impression of care for NZ's land, - the soil just feels and smells different as if it’s a living breathing organism.
    • Te Whare Ra, Marlborough, Northern part of South Island
      • Winemaker Anna Flowerday who partners (with her husband,  Jason, tends some of the oldest vineyards in the region with some dainge back 20+ years or more.  Organic / Biodynamic farming, minimal intervention winemaking (no fining agents, yeasts, winemaking and small batch focus, hand pick / hand sort grapes, keep 100% control of the vineyard to bottle) add complexity to their Chardonnay. 
      • Anna shares her humor as she describes their wines by pairing them with celeb personalities which is a fun idea, but you totally get it when you listen to her tell these stories
    • Kumeu River, Auckland, North Island and Hawke’s Bay (purchased in 2017) 
      • Paul Brajkovich shares Kumeu River's history as family owned, long legacy of growing grapes and making wines back to the 1940s.
      • CHANCE OF A LIFETIME - similar to 1976 Judgement of Paris moment, Paul shares a blind tasting where Kumeu River's Chardonnay's 
        are placed against a range of Premier Cru and Village Burgundies from the best producers.  The panel of well known somms, wine critics and the like blinded the wines and Kumeu triumphed over top white Burgundies in every flight apart from one, where it came first equal (tied).
    • Man O’War, Waiheke Island, part of Auckland region but distinctly separate
      • Takes 45 min ferry to island and another 45 min bus ride to the winery on the opposite side of island and you'll find yourself at Man O' War, an enormous 4500 acre farm - about 20% of total island - full of animals, beehives, gardens, vineyards, lodging for staff etc…  plus76 vineyards!
      • Cecelia Bravo hosts and shares how Man O' War is going against the grain with their Chardonnay!

    While many of NZ's Chardonnay wines don't make it to the export market, we highly encourage you to seek some out and hopefully we'll get the word out for more and more distributors to get these lovelies into the US or wherever you're listening!

    Weston Eidson:  A Live Chat With the Winemaker and His “Vertical”

    Live from The Magnolia Wine Bar!  SWTW’s first live event was a smashing hit and this episode has 2 parts - our pregame interview with Weston Eidson and snippets of our live discussion with audience participation - in the wine tasting of course!  We’ll apologize in advance for the background noise!

    When winemaker Weston Eidson lets Mother Nature play leading lady in his wine styles for Montagu and Silver Ghost, popping the cork on his verticals is a delicious exploration.  In prepping for this episode, Charisse, Weston and Kristi searched high and low for the Silver Ghost 2019 Cabernet Sauvignon to round out our vertical tasting.  Not every plan comes together and we had to get creative!

    • 2019 Silver Ghost was obviously a huge fan favorite - we couldn’t find any anywhere!
    • 2020 fires in Napa were Mother Natures cruel way of testing Weston’s winemaking legacy as he scrapped his entire harvest rather than make smoke tainted wine

    Never fear, we had the perfect solution!  2020 Montagu Pinot Noir, 2021 and 2022 Silver Ghost Cabs!  Not the typical vertical, but the wines led us down a fabulous path of exploration!  Stay tuned for a fun filled, informative chat followed by a whole lot of wine chatter!

    Dirt:  How terroir, specifically soil, impacts wine

    Let’s get down and dirty and talk about terroir, in particular soil.  Terroir is a word tossed around flippantly in the wine world without much explanation.  Simply put, it is a reference to the “sense of place” where grapevines grow.  This can include location, weather, altitude, rainfall, fog, proximity to water, angle to the sun or aspect, and many other elements, including soil. 

    In this episode, Charisse and Kristi break down the most common soils ideal for vineyards and explain how the differences can influence wine long before harvest, fermentation and bottling.  Geomorphology, climate, flora and fauna as well as traditions can play a part in terroir.  But the one grounding element is the soil.

    We used to think all wine was made in Stainless Steel tanks or oak barrels.  Wrong!  Wine can be fermented in 7 primary vessels.  Yes, stainless steel tanks and oak barrels are two, however, clay amphora, demijohns, wood tanks, plastic tanks / buckets and concrete (yes concrete!) vessels round out the other prominent ones!  Why are there so many different options? Tune in and you'll find out the pros and cons of each vessel are for the winemaker.  And, what each may deliver to you as a wine lover!

    Unconventional Lesson in Food and Wine Pairing Part 2

    Hello and welcome to Part 2 of our Food and Wine Pairing episodes!  Charisse and Kristi continue to explore food and wine pairings in an unconventional way.  Leveraging training methods from wine certification experts, we break down a few pairing myths and explore three wines against the 5 flavors your tongue identifies - salty, sweet, bitter, sour and umami. 

    With a "charcuterie tray" of sugar, salt, lemons, tomatoes, mushrooms, brie, popcorn and dark chocolate, we set out to dissect the influence of each flavor against 3 wines. 

    White Wine:  Texas Heritage Oaked Albariño
    Red Wine:  Boeger Merlot
    Dessert Wine:  Casa Mandel Boullosa Carcavelos

    In Part 2, we start with a recap then dive right into the Boeger Merlot to explore how red wine is impacted by our “charcuterie items”.  This fruity, mildly tannic and medium acidity red responded in surprisingly different ways to the food and flavor pairings than the Oaked Albariño.  Tune in to find out how!

    Wrapping up with an amazingly unique and rare 1988 Carcavelos dessert wine, what can two wine loving friends do but pop the cork and continue the science experiment.  We hope you’ll try similar pairings for yourself and take our nerdy tips and savvy tricks along with you on your own wine journey!

    Wrapping up the episode with our Wine Find, this time we bring a little technology into the game.  Stelvin (or screw caps) embedded with website NFC tags called “Edivinum” sending consumers straight to the winery’s website.  This not only provides marketing content and wine details, it is an inventory control mechanism to help winemakers know exactly where their products are and when they are consumed.  Just unscrew the cap, pour a glass then register the 4 digit code inside on the website as “consumed”!  How cool!  Our example is from Vigneti Massa Timorasso Derthona / Piccolo Derthona 2021.

Her passion has definitely rubbed off on Kristi and what better way to let two bubble girls have fun than to cover all things sparkling! But are all bubbles created equal? Not at all! There are many ways to put those tiny little bubbles of joy into a bottle and we’re breaking it down for you in this episode!

    Beady, semi-sparkling, pétillant, frizzante, Spumante, sparkling. All these words describe bubbles in wine, from lightly fizzy or low pressure to fireworks in a bottle or high pressure. Something for everyone to love!

    While “Champagne” can only come from the Champagne region of France, how it’s made can be used anywhere in the world. Referred to as Champagne Method, Traditional Method, Méthode Champenoise, or Méthode Classique, this process creates bubbles through two fermentation processes trapping CO2 into the wine. Vintage or non-vintage, while we touched on this in our Wine and Fashion episode, you’ll get the low down on what this means for your wine journey. We’ll introduce you to multiple alternatives to true champagne you can enjoy for daily drinkable to your biggest celebrations.

    Charmant Method, used for Prosecco, takes a whole different path in getting tiny bubbles into the bottle and not all Prosecco’s are sweet. Being bubble girls, we definitely say don’t knock it until you try it. Listen in for clues on how to find the style you desire! Ancestral Method, Continuous Method, Soda Method, Forced Carbonation, and Méthode Contemporaine round out the ways winemakers can create bubbly beauties from the most complex to the simplest, we cover them all!

    Summer Whites You’ve Likely Never Tried

    Summer, summer, summer.  Long days, vacations, staycations, friends, family and fun.  Hot days and warm nights call for a style change in your go-to wines.  Rosés and whites reign supreme.  We’re totally on board, but this summer, we’re pouring a few new white wines into our glass and bringing you along for the ride!

    As two bubble loving wine friends, Kristi’s first surprise for Charisse is the Sparkling Riesling NV from Coeur Cause Wines.  Not only is this crisp, fresh, citrus forward bubbly deliciously refreshing, a percent of every bottle sold supports one of Coeur Cause’s charities.  Owner Stacy Bellew partners with winemaker Josh Maloney to bring a sparkler which maintains the flavor and aroma (think petrol) so true to Riesling.  Think you don’t like Riesling, this beauty will change your mind!

    Next up, Txakoli (sounds like broccoli) from Basa Lore.  Made from the Hondarrabi Zuri grape varietal, this lightly fizzy wine is typical of the Getariako Txakolina D.O. in the Basque Country of Spain.  Think steep slopes, green Spain, crisp ocean breezes and this wine exudes the perfect accompaniment to any and all of your summer fun.  It’s bright.  It’s crisp.  It’s definitely worth hunting down to stock your fridge.  Txakoli loosely translates to “enough for the home” but we’re not sure there actually is enough of this Summer delight.  Sharing her Basque and Txakoli expertise with us is Dr. Kerri Lesh, or Dr. Txakoli.

    Kristi’s summer adventure in Wisconsin and Minnesota afforded a visit to Saint Croix Vineyards with Peter Hemstad, co-owner, for a vineyard-based exploration into the world of grape variety creation.  One of the results?  Itasca!  This superb creation not only withstands the frigid MN winters, it is also hardy enough to resist pests and disease which can plague vineyards.  With 23 varieties of wine, many lesser known varietals created by Peter and the University of Minnesota, this winery should be on everyone’s vacation destination top 10.

    Hailing from La Pradera Vineyard in the Texas High Plains rounds out the final four.  From Tatum Cellars, this single vineyard, single varietal Roussanne is a rare expression of the varietal as a stand alone.  Most typically blended in the southern Rhône region of France, this wine lets Roussanne shine.  Juicy, spicy, toasty yet maintaining a freshness made for summer drinking. 

    While we know it may be impossible to find these wines in your local wine shop, we hope you’ll get them shipped to your doorstep in time for this weekend’s summer fling!

    As two women in the wine industry, what better topic for us to tackle than “Women in Wine”?!  Special guests include Lindsey Koch and Benedicte Rhyne who share their passion for wine and how they embraced their natural female skills and talents to make their way in the traditionally male oriented world of wine. 

    Meet Lindsey:  Lindsey started her career in Fort Worth, TX as a medical staffing agency before launching her own staffing company, Embracing her interest in wine she studied to become a certified Sommelier, she took the big leap of faith to start her own wine bar, WineHaus from the ground up.  After  8 years, she sold the business to a previous customer as she made the move out to Sonoma County, California to further her career in wine. Living in California Wine Country, Lindsey is currently the Estate Director for Small Vines Wines in Sebastopol, managing everything from marketing and customer outreach, to curating bespoke tasting experiences at the winery. Additionally, Lindsey and her husband always dreamed about starting their own winery and made the dream a reality, starting Curves & Edges Wines during the 2020 vintage. She focuses her efforts at Curves & Edges on two varieties that have always brought her great joy, Sauvignon Blanc and Merlot.

    Meet Bénédicte: Bénédicte (Bennie) Rhyne is a native of Aix en Provence, France. She received her master in oenology (the study of wine) from the Université de Bourgogne (Dijon), had a successful experience at Chateau Pétrus, in Pomerol, Bordeaux, before global adventures to New Zealand and England landed her at Ravenswood Winery in Sonoma, California, as a member of the winemaking-team. Here she developed a”Meritage“program increasing the winery’s production ten-fold between 1991-2001. Additionally she created a sophisticated wine laboratory with well -trained staff and quality control procedures. In 2002, Bénédicte and her family moved to Fredericksburg, TX and created a Wine Laboratory to compliment her Wine Country Consulting business.  Bénédicte served sixteen years as the winemaker of Mesa Vineyards, St. Genevieve Wine in Fort Stockton, Texas. She the spent 10 years as the winemaker of Kuhlman Cellars, a quickly growing winery whose door's opened in October of 2014 in Hye, Texas to produce fine quality and “Terroir” driven wines from Texas in the style of her native Provence.  Bennie is now focused full time on her wine consulting and launching her own wine label - stay tuned!
