Then we highly recommend trying out Deke's Bar-B-Que, which has several locations including their new Cloud Kitchen that opened about one month ago. Derek "Deke" Denmead joined us on the show for a deep dive into how he and his wife met, and eventually established Deke's BBQ. I know that it was wonderful hearing how they began, but even better is the mouth-watering menu options that they offer, including their Brisket Cheesesteak, mac and cheese, cornbread, and so much more!

    From an established business to new ones--we cover it all, which is why we spoke with Mardel West, the Owner of the brand-new Bangin Grub located inside Liberty One in Center City Philadelphia! Mardel and our hosts pulled back the veil on what it takes to start a business, including advice on how to prepare for financial, technical, and culinary upheavals. Afterwards, we bit into some of Bangin Grub's new menu options, scratch-made sauces, and unique desserts!

    Lastly, we spoke with Samuel Kennedy, Co-Founder of Culinary Harvest and Berwyn Farmers Market off of the Main LIne. Not only does Samuel share the amazing locally-sourced products, gifts, foods, and more from area small businesses, he works at Birchrun Hills Farm as an expert cheesemaker.     Welcome back to Business Unfiltered with Mercer and Jeff Sauer today's topic is Minimum Viable Resources. 0:00: Mercer defines "minimum viable resource" as the bare minimum needed to prove a business concept. Jeff suggests using less expensive resources, such as those found on Fiverr, to complete tasks that do not require senior expertise, while still charging the same amount to clients. Sauer advocates for leveraging processes and systems to generate profits in business while minimizing costs. 3:08: Separating labor costs from system costs in business. Jeff discovers that relying on contractors without systems in place can lead to low-profit margins. Sauer suggests separating the cost of a contractor's systems from their labor rate to increase profitability. 5:54: Streamlining business operations for profitability. Jeff discusses the importance of processes and systems in business, citing the McDonald's model as an example of how a well-defined system can lead to consistent results and easier talent acquisition. He shares his personal experience with this approach, noting that he used to focus on selling products without considering the profitability of his business, but has since shifted his mindset to prioritize process and efficiency. Jeff shares a real-world story of how implementing an operating system (EOS) helped his agency reduce labor costs and increase profitability. Sauer emphasizes the importance of getting labor costs down to 25-30% of total expenses to be profitable and sell a business. 11:07: Streamlining business processes for profitability. Jeff and Mercer discuss the challenge of consistently delivering high-quality work while maintaining profitability. Sauer explains that they identified a need for a repeatable system by analyzing their business operations and determining which projects were most profitable. They agree that finding a balance between custom work and standardized processes is crucial for long-term success. 13:54: Profitability analysis for a business. Jeff identifies people as the biggest expense and breaks it down by service line, targeting $200k in revenue per 2 employees for profitability. He discusses the profitability of different service lines in his business, considering options such as specialization, cost reduction, and sales optimization. Jeff emphasizes the importance of analyzing each service line's profitability and taking action accordingly, rather than simply cutting unprofitable lines or investing more in successful ones. 17:05: Managing payroll and efficiency in a business. Jeff discusses the challenges of scaling a digital marketing agency, including managing payroll costs and finding efficiencies without adding more staff. Mercer suggests using AI tools to automate tasks and increase efficiency without adding more people to the payroll. He discusses the challenges of managing payroll during economic downturns, including the need to reduce costs while maintaining employee morale and productivity. Mercer suggests documenting and delegating tasks to reduce the workload of high-performing employees, and using AI or tactical resources to take on some of their responsibilities. Jeff acknowledges that layoffs or adding more work to existing employees' plates are also options for managing a bloated payroll, but emphasizes the importance of finding a balance between cost-cutting and maintaining employee morale. 22:06: Leadership, entrepreneurship, and automation. Jeff discusses the challenges of running a business, including the departure of a key team member and the decision to take on additional responsibilities himself. Mercer shares his personal experience with a similar situation, highlighting the difficulty of having tough conversations and the importance of being proactive in finding solutions. 24:43: Delegating tasks and improving systems in business. Mercer shares his experience of downsizing their team and leveraging AI automation to improve efficiency and productivity. Mercer and Jeff discuss the importance of striking a balance between trusting team members and stepping in as a strategist to guide them toward achieving business goals. 27:16: Hiring and managing resources during economic uncertainty. Jeff predicts a challenging 2024 with a potential buyers' market for resources, leading to consolidation and the rise of minimum viable resources. Mercer agrees with Jeff's predictions and foresees upcoming shifts in the marketplace. Jeff and Mercer discuss the concept of "minimum viable resources" in business, focusing on the idea of specializing within an organization to maximize efficiency and profitability. Jeff emphasizes the importance of having a system in place to ensure the organization benefits from the specialization, rather than simply relying on cheaper or more expensive resources.

    Chef Keratasha Greene, owner of Phatz Kreation has introduced Las Vegas to "The Chopped Cheese" sandwich straight from New York. Explained as a deconstructed protein mixed with cheese, is the way to go with a toasted bun that melts in your mouth. Phatz Kreation is trending quickly in the Las Vegas Valley with "The O.G." chop and "Dirty Bird" sandwich.  Her fries even have a taste of their own, which are well seasoned.
    Phatz Kreation has definitely brought the East coast to Vegas baby!
    Not only are the sandwiches fire but she home makes her signature drinks which are one of a kind also.
    Chef Keratasha has successfully completed her first pop up in Las Vegas and is currently taking sales for pick up online.

    This is the spot for tacos in Vegas baby! Chef Nery has mastered any dish with birria. I recommend the shrimp tacos, birria tacos, birria fries and the humongous chicken chorizo patty burger with Slanging Tacos signature coleslaw. From slanging tacos in his garage to setting up a trending business with his family; Slanging Tacos is just getting started on their bright future in Las Vegas. 
    We're a loving and driven family, originally from Compton California, who relocated in 2019 to Las Vegas Nevada, to further their careers. Being unemployed due to the pandemic, in August of 2020 Chef Nery decided to start his own business along with his supportive wife, Reyna.
    Slanging Tacos is a story of humble beginnings that started in the garage of their home, where many gathered to try their distinguished flavors and eccentric creations. With hard work and dedication, in less than a year they managed to purchase their food truck where they continue to "slang" and serve their community.

    ​As visionaries, they plan to expand and become an iconic attraction that many come to visit for years to come. As a family, they aim to leave a legacy to their three children and create an impact in people's lives.

Product of Kansas USA Comes with House Made Pickles; these are not your dad's back yard burgers. Not to mention the Yard Bird translation: Fresh Red Bird Chicken, Product of USA; you will not find these chicken sandwiches in your mediocre chicken sandwich challenge.
    Our truck is more than just a place to grab lunch. It is a place to eat food that is sourced from responsible local ranches and farms.  Food is made the way it should be and a place you can have fun while you eat.  It's so much more than a food truck, come see for yourself.

    So I googled Five Guys, because I wanted to know if it was founded by five guys and it actually was. Founded in 1986 ( Arlington VA ) by a husband & wife who had 4 sons at the time. So it was initially run by dad and his 4 sons ( Five Guys ). Two years later they had a fifth son. It’s run by the sons and the parents are still involved. Gotta love a thriving family business. So drop down and get your google on. Lol!

    Want more than an original chicken sandwich then you need to visit Kraken Cafe. The menu is full of eccentric sandwiches and meals that will make it difficult to decide what to order. The salmon burger was the first time for me eating salmon in the style of a burger and it will not be my last. The homemade bread, perfectly seasoned salmon patty and egg will have your taste buds dancing. I also had the 1000 Island burger which was dripping in sauce. Everything is homemade, even the fries were cooked to perfection with a light crisp and seasoned coat. The Kraken has it crackin'!

    Kraken Cafe is a minority-owned, black-owned business in the city of Las Vegas, Nevada. The owners of Kraken Cafe are chef Elijahwan and Chef Kayla. Both attended culinary school in Las Vegas, graduating with both their associate and bachelor's degrees in culinary arts.
    Now we would like to explain how we started Kraken Cafe. My husband and I have been running our business since 2014. Our business serves gourmet burgers and fries that are served in freshly baked buns we make in-house. Through the years, the buns that accompany our vast gourmet burger concept on the truck have become our staple. We as chefs pride ourselves on only producing the best quality product at the best prices. Some of our flagship items are the bison burger and our umami burger. These two amazing burgers really laid down the pavement for the Kraken.
