    Nici Wickes: One bowl fruit salad cake

    It’s that time of the year when the stonefruit season collides with the last of the blueberries so I thought I’d marry them up in this gorgeous cake! 

     

    Ingredients: 

    3 medium eggs 

    A generous half cup of caster sugar 

    1/3 cup oil – I used canola! 

    Pinch salt 

    1 cup fruit – chopped quite small , I used peaches and nectarines 

    1/3 cup blueberries 

    1 1/3 cup self raising flour 

    1/3 cup yoghurt (can use milk see note) 

     

    Method: 

    Preheat oven to 180 C and line a 20-23cm round cake tin. Note the image depicts a VERY large version of this cake that I make to feed 25 hungry students! 

    Whisk eggs well in a large bowl then pour in the sugar, salt and oil and whisk some more until well-combined. Add the chopped fruit and blueberries and mix well. 

    Add in flour and yoghurt and stir until mixed and there are no pockets of flour remaining. 

    Scrape into prepared tin and bake for 35-40 minutes or until a skewer comes out clean. 

    Once cooled, either dust with icing sugar or make a vanilla icing and ice it. 

     

    Make it your own: 

    Use olive oil for a posher version 

    Used tinned fruit salad and frozen blueberries in the off season 

    Sour milk with a squeeze of lemon juice if you don’t have yoghurt

    Driscoll’s Strawberry Flavor Innovation + Planet FWD Helps Food Brands Track Carbon Emissions

    Driscoll’s, a global producer of fresh berries, is bringing back its popular Rose Berries, along with a new high-flavor strawberry innovation, Tropical Bliss. In this episode of the Xtalks Food Podcast, Sydney talks about Driscoll’s curated collection of strawberries, including Rose Berries, Sweetest Batch and Tropical Bliss. The collection was developed through traditional breeding methods, without genetically modified organisms (GMOs) and each flavor took 20 years to perfect and commercialize. Sydney tries Sweetest Batch raspberries and the team commends Driscoll’s for innovating a sector that has remained stagnant for decades.

    Also, in this episode, Sydney introduces the team to Planet FWD, a carbon assessment startup that recently secured an investment of $10 million in a Series A funding round. The startup partners with consumer products companies to measure, reduce and neutralize carbon emissions and already has 25 clients, many of which are well-known food and beverage brands. Since time is of the essence to achieve global emissions goals, companies are scrambling to find better solutions for carbon management. As a result, the past year has been one of growth for Planet FWD. The team was unaware that startups like Planet FWD existed, but believes they will be key in helping the food and beverage industry track and reduce emissions.

    This episode's guest, US author Julie Carrick Dalton, made an impulsive purchase a few years ago. Some people panic buy a pair of shoes or the latest electronic gadget, Julie panic bought a forest, complete with bears and moose.
    Julie started her undergraduate studies as pre-med, but finished majoring in journalism, and went on to have a well-travelled life with a varied journalistic career.
    Her first attempt at writing a novel resulted in one good chapter, but the rest she describes as 'very terrible'. But she didn't give up, and joined Harvard's night school program to study creative writing, and learn about the qualities you need to put into novel-writing that differ from those of writing as a journalist. 
    In this episode Julie describes how Waiting for the Night Song, her now-published first novel – there is a second in the pipeline – has been inspired by the aforementioned impulsive purchase, kayaking and picking blueberries.

    Ingredients

    • 1/2 cup (1 stick/113 grams) unsalted butter
    • 1 cup (125 grams) self-rising flour (see Author Notes)
    • 1 cup (200 grams) granulated sugar
    • 1 cup (240 milliliters) whole milk
    • 1 teaspoon kosher salt
    • 1 cup (150 grams) fresh or frozen blueberries
    • Vanilla ice cream, for serving

    One-Bowl Blueberry Buckle

    1. Heat the oven to 375°F and place a rack in the middle of the oven. Place the butter in a 9x5-inch loaf pan and put it in the hot oven. When the butter has melted, remove the pan from the oven.
    2. Meanwhile, whisk together the flour, sugar, milk, and salt in a large bowl (it’s okay if the batter is a little lumpy). Pour the batter into the pan with the melted butter and use a spoon to lightly mix it. There should be visible streaks of melted butter that don’t get completely mixed; this yields the buttery, caramelized edges.
    3. Place the blueberries on top of the batter in an even layer. Bake until the top is golden brown all over, 50 to 60 minutes. (If you remove it too early, the buckle will indeed “buckle” in the middle and fall—which would still be tasty, though sunken!) Wait until it’s golden all over the top and set in the center. Place the buckle on a cooling rack for 10 minutes before serving warm with a scoop of ice cream.

    Why Do We Crave Food So Badly at Night? It's simply due to the fact that:

    (1) We're not eating during the day

    (2) We ate too many starches or refined sugars at dinner
