    Chef Paul Cunningham Puts Passion Back on the Plate

    Chef Paul Cunningham, based in Dundrum, County Down, walks the walk like no chef we’ve ever met before. The owner of “slow food fast food” Scopers in Dundrum Village and the upscale pop-up Mourne Larder, Cunningham sources all of his food from within a 15 mile radius and never sets foot in a grocery store. His business model puts his ethos into practice in a way we’ve never seen, and he’s successfully bridging the gap between consumers and thoughtfully grown, regenerative food at affordable price points—all while shining a spotlight on the Mournes where he was raised and creating insanely delicious, Michelin quality cuisine.

    We spoke to Paul about what ethical sourcing looks like in practice; making local, sustainable food approachable & affordable food for the average diner; how chefs have a responsibility to be stewards of the land; secret dining; and the limits of growth for a successful business.

    Chef and author Zoe Adjonyoh is one of the most vocal and visible advocates for Ghanaian food. This position made her uncomfortable for a long while. At the outset, as a third culture kid in London with an Irish mother and Ghanaian father, she even asked herself if she was appropriating her own culture. She only had a small repertoire of dishes she learned from her reticent dad. Eventually a trip to see relatives in Ghana cleared up the notion of one standardized cuisine and freed her to follow her own instincts as she created Zoe’s Ghana Kitchen in the UK. And in doing so found a larger mission. Listen in to hear about the journey from accidental pop-up star to determined social justice advocate through food.     After closing Meme’s Diner in November 2020, co-owner Libby Willis wanted to preserve the sense of community the restaurant fostered but wasn’t ready to open another traditional restaurant. Instead, she has transformed what restaurant operations can look like. Her new enterprise, KIT, is operating as an incubator of sorts, sharing the burden of business ownership with a cohort of owner-operated businesses while creating a cohesive experience for diners. Gain insight into how KIT is operating and the potential Libby sees for creating a more inclusive industry.

    This week’s guest is Adégnimika (Adé) Carrena, owner of Dounou Cuisine. Born in Porto-Novo, Benin, Adé started her culinary journey here in the United States when she was adopted at the age of 10. Though then she cooked just with her family. She says her passion did not grow until a few years ago when her perception of food changed. “I saw that food is more than an edible but is instead a shared emotion and an ever evolving yet traditional canvas for our history as beings.”

    Adé’s objective is to bridge cultural gaps by providing authentic African dining experiences and sharing the land’s rich culture while also honoring her blended upbringing within a Puerto Rican home. For the last few years, she’s hosted Pop-up dinners in which her perception of West African food was showcased. She offers Personal Chef services, catering, Pop-ups and more.

    “Where I come from we say, Wa mi Dounou. Which means, come share a meal with me. I cherish this thought because there is nothing more special than gathering with fellow beings, nourishing our bodies, exchanging cultures and creating memories, all in the simple act of savoring a meal. I look forward to sharing a meal with you"!

    The hustle has been real for most of us, fits and starts, iteration after iteration. Our guest today has perhaps out-hustled them all while raising millions for social justice causes. It’s no surprise to us as we met today’s guest several years ago in our Tilit store, and her vibe exudes genuine care as well as both personal and community success. 

    We're excited to welcome to the show Executive Pastry Chef, Paola Velez. In the past year, Paola began a new role as the E. Pastry Chef at famed DC restaurants, Compass Rose and Maydan. She co-founded Bakers Against Racism, raising over $2M for causes related to BLM. AND she started 2 pop-ups, Dona Dona and La Bodega Bakery, inside Compass Rose.

    The Hmong are an indigenous people who’ve historically called Southeast Asia home. Following the ravages of the Vietnam War, many Hmong escaped to America settling in all places the Upper Midwest. In St. Paul, MN, Chef Yia Vang has been running Union Kitchen, a pop-up restaurant that specializes in Hmong fare, and he hangs with us to explain the nuances of his culture and its delectable cuisine. For “Snacky Tunes 5’s," our go-to oenophile Jameson Fink does some island hopping, and tells us all about the wonders of volcanic wines. We then head to Los Angeles and the Silver Lake studios of Dangerbird Records to get a live, one-of-a-kind performance from Peter Walker and Aaron Espinoza of the music-and-art collective, Arthur King. The duo crafts ambient improvised music utilizing synthesizer, guitar, drum machine and sounds extracted from environmental field recordings, and combine it with the experimental projections of visual artist John Schlue. All the sonic material used on Arthur King’s latest album, Changing Landscapes (Grand Escalante), is derived from a trip to the Grand Staircase-Escalante National Monument in rural Utah.
