    Unconventional Lesson in Food and Wine Pairing Part 2

    Hello and welcome to Part 2 of our Food and Wine Pairing episodes!  Charisse and Kristi continue to explore food and wine pairings in an unconventional way.  Leveraging training methods from wine certification experts, we break down a few pairing myths and explore three wines against the 5 flavors your tongue identifies - salty, sweet, bitter, sour and umami. 

    With a "charcuterie tray" of sugar, salt, lemons, tomatoes, mushrooms, brie, popcorn and dark chocolate, we set out to dissect the influence of each flavor against 3 wines. 

    White Wine:  Texas Heritage Oaked Albariño
    Red Wine:  Boeger Merlot
    Dessert Wine:  Casa Mandel Boullosa Carcavelos

    In Part 2, we start with a recap then dive right into the Boeger Merlot to explore how red wine is impacted by our “charcuterie items”.  This fruity, mildly tannic and medium acidity red responded in surprisingly different ways to the food and flavor pairings than the Oaked Albariño.  Tune in to find out how!

    Wrapping up with an amazingly unique and rare 1988 Carcavelos dessert wine, what can two wine loving friends do but pop the cork and continue the science experiment.  We hope you’ll try similar pairings for yourself and take our nerdy tips and savvy tricks along with you on your own wine journey!

    Wrapping up the episode with our Wine Find, this time we bring a little technology into the game.  Stelvin (or screw caps) embedded with website NFC tags called “Edivinum” sending consumers straight to the winery’s website.  This not only provides marketing content and wine details, it is an inventory control mechanism to help winemakers know exactly where their products are and when they are consumed.  Just unscrew the cap, pour a glass then register the 4 digit code inside on the website as “consumed”!  How cool!  Our example is from Vigneti Massa Timorasso Derthona / Piccolo Derthona 2021.

    3 time is a trick!! We're back in Canada, and to one of my absolute favourite wine producers... period! Mission Hill Family Estate is located in the beautiful Okanagan Valley, a region producing outstanding wines across the board. I was hooked at first taste back in 2016 when Canada and Mission Hill submitted their first entries into the Global Fine Wine Challenge, and each subsequent year has re-affirmed my love of these incredible wines.

    In this episode, Ross Anderson chats with Mission Hill's Chief Winemaker, the delightful Corrie Krehbiel. Mission Hill, under Corrie's guidance has the Midas touch - crafting delightful, intense, pure and precise expressions of Syrah, Cabernet Franc, Chardonnay and Bordeaux Blends... wow! These wines easily rival some of the best in the world.

    #54 -  California con la enóloga Sandra Domínguez

    El día de hoy hablaremos con la enóloga Mexicana Sandra Dominguez Suarez de California, sus regiones y sub regiones así como con sus desafíos en viñedo y bodega. Sandra también nos platicará de su proyecto y su vida como mujer en el mundo del vino.

    Antes de hablarles de la vida de Sandra, me gustaría mandar un fuerte saludo a Adriana y Kelly de la tienda de vinos La Contra en Juriquilla, en la ciudad de Querétaro. Dos mujeres muy informadas en el mundo del vino mexicano y con grandes ambiciones de educar a los nuevos y viejos consumidores de vino en México. 

    Ahora si, les platico un poco sobre nuestra invitada. 

    Sandra nació en Celaya, Gto y se empezó a interesar en el mundo del vino cuando estaba en la prepa, esto es el bachillerato en dialecto mexicano, y visitó una pequeña vinícola de la región. Ahí se enamoró de la combinación de ciencia y arte detrás de cada botella de vino. 


    Estudió ingeniería en industrias alimentarias en el Tec de Monterrey campus Qro. 

    Durante la carrera, se fue un semestre de intercambio a la Universidad Politécnica de Valencia en España para aprender sobre el vino en general y especializarse en la elaboración de Cava. 


    Ha trabajado varías vendimias en diferentes lugares del mundo como Baja California, Francia, Australia y California. 

    En el 2019 se graduó de la maestría en Viticultura y Enología por la Universidad de California en Davis y después trabajó en Napa y Santa Bárbara. 

    Durante el 2021 fue la enóloga de Vinícola Santa Elena de Aguascalientes y además comenzó su propio proyecto de vino, Luna y Marea Wine Project (@lunaymarea.wp) , lanzando al mercado un Macabeo joven. En el mes de marzo 2023 comienza como mi directora y enóloga de la escuela en donde doy clases es decir la Escuela de Vino del Altiplano.

    Sandra está feliz de estar de vuelta en México y dedicarse a lo que más le apasiona.

    Is Merlot Making a Comeback? (An underdog story? Wines from the Right Bank of Bordeaux)

    The 2004 movie Sideways did a number on Merlot, hurting its reputation and suppressing sales. But was that impact justified? Did we judge Merlot too harshly? Is it time to let Merlot rejoin the cool kids table?!? In this episode, we give Merlot a fighting chance to win back a place in our hearts - and our cellar. We admit we are not the biggest fans of Merlot, but can one of these wines change our mind? We selected three highly rated wines, all under $20, and two from the Bordeaux region of France, to see if we could find a Merlot that convinced us that it is deserving reconsideration. And guess what - we found one!!! We also talk a bit about the history of Merlot, and the so-called Sideways effect. Groot Constantia is an important part of World Wine Heritage and a world-class international tourism destination, capturing the rich and diverse heritage of South Africa, to deliver a unique cultural, social and historical experience, to locals and tourists alike.
